Введение. В настоящее время и в России, и за рубежом полба завоёвывает популярность как диетический продукт здорового питания. Мука из зерна полбы находит широкое применение в производстве хлебобулочных, макаронных, мучных кондитерских изделий, регулярное потребление которых способствует укреплению иммунитета, улучшению работы сердечнососудистой, пищеварительной и репродуктивной систем, снижает риск развития анемии, инфекционных и онкологических заболеваний.Цель. В работе представлены результаты исследования возможности применения голозерного зерна полбы сорта Греммэ в производстве цельнозерновых макаронных изделий.Материалы и методы. Объекты исследований: зерно полбы сорта Греммэ урожая 2018 г., выращенное в Орловской области; лабораторные образцы макаронного теста; образцы полуфабрикатов макаронных изделий; лабораторные образцы макаронных изделий; образцы макаронных изделий, выработанных на однокорытном макаронном прессе периодического действия фирмы P. Dominioni. Методы исследований: влажность зерна - по ГОСТ 13586.5-2015; содержание и свойства клейковины – по ГОСТ 54478-2011; содержание белка – по ГОСТ 10846-91, натура – по ГОСТ 10840-2017, масса 1000 зерен – по ГОСТ 10842-89, общая стекловидность – по ГОСТ10987-76, число падения – по ГОСТ 27676-88, содержание крахмала – по ГОСТ 10845-98, начальная температура клейстеризации крахмала, температура максимальной вязкости и вязкость крахмального геля - на приборе Амилотест АТ-97 в режиме 2; предельное напряжение сдвига макаронного теста - на приборе СТ-1М; варочные свойства макаронных изделий – по ГОСТ 31964-2012.Результаты. Обоснован способ предварительной подготовки зерна полбы перед его использованием в производстве макаронных изделий. Параметры замачивания: гидромодуль – 1:1, температура воды – 45 °С, продолжительность замачивания – 45 минут.Выводы. Изучено влияние продолжительности замачивания зерна полбы сорта Греммэ на количество и свойства сырой клейковины и крахмала, реологические показатели макаронного теста и варочные свойства зерновых макаронных изделий. Потери сухих веществ при варке опытных образцов не превысили 6 %, что соответствует требованиям нормативных документов и характеризует изделия, как изделия высокого качества.
Оптимизирован состав поликомпозитной смеси овощных порошков из тыквы, моркови и кабачка для хлебобулочных изделий. Моделирование и оптимизацию состава смеси осуществляли с применением симплекс-решетчатого планирования эксперимента, что позволило создать комплексный сырьевой ингредиент, улучшающий органолептические и физико-химические показатели качества хлебобулочного изделия. Определена динамика влияния соотношения компонентов смеси на реологические свойства теста, физико-химические и органолептические свойства хлебобулочных изделий. Установлено, что наибольшее влияние на увеличение предельного напряжения сдвига теста в конце брожения оказывает порошок тыквы и кабачка в составе овощной поликомпозиной смеси в дозировках к массе муки 0,8-4 % и 1,6-5,6 % соответственно. Наименьшая адгезия теста наблюдалась при внесении порошка тыквы в составе овощной поликомпозиной смеси в количестве 0,8-3 % к массе муки. Наибольшее положительное влияние на удельный объем, сжимаемость мякиша и органолептические показатели хлеба оказывает порошок моркови в составе овощной поликомпозиной смеси в дозировке от 2,4 до 7,2 %, тыквы и кабачка – в дозировках от 2,4 до 8 % и от 1 до 4 % соответственно к массе муки по сравнению с контролем. Графоаналитическим методом определено оптимальное соотношение компонентов в поликомпозитной смеси – порошок моркови: порошок тыквы: порошок кабачка 2:1:1, которое позволяет улучшить удельный объем и органолептическую оценку хлеба, а также обогатить хлебобулочные изделия натрием, калием, кальцием, магнием, фосфором, β – каротином и витаминами группы В и РР.
