Hygienic assessment of chemicals’ level in food products and health risk assessment of the population in
Arkhangelsk region were carried out.
Levels of heavy metal contamination of certain food groups do not exceed allowable hygienic standards.
Non-cancer risk was high for a hormonal system (HI = 3,9), nervous (HI = 3,4) and immune (HI = 3,2)
systems, skin (HI = 3,2).
The priority pollutants of food products were arsenic and lead. Total cancer risk was high (CR = 1,4 × 10-3)
and could be associated with fish contamination by inorganic arsenic (44,0 %).
Food contamination in the Arkhangelsk region has been studied. The average concentration of nitrates (82.4 mg/kg) in vegetables and fruits of local production was 1.4 times higher comparing to the hygienic standard. The hazard index (HI) and the individual cancer risk index (CR) were used to study contaminants impact on health. Non-cancer risk was dangerous for the nervous (HI = 4.9), cardiovascular (HI = 4.4), immune (HI = 4.7) systems, skin (HI = 4.3), the hormonal exchange (HI = 5.2) and the digestive apparatus (HI = 5.3). The total cancer risk was high ^R = 1.9 х 10 -3) and associated with fish contamination by arsenic (95.2 %).
