Foodborne diseases are one of the major causes of morbidity and mortality, especially in low-income countries with poor sanitation and inadequate healthcare facilities. The foremost bacterial pathogens responsible for global outbreaks include Salmonella species, Campylobacter jejuni, Escherichia coli, Shigella sp., Vibrio, Listeria monocytogenes and Clostridium botulinum. Among the viral and parasitic pathogens, norovirus, hepatitis A virus, Giardia lamblia, Trichinella spiralis, Toxoplasma and Entamoeba histolytica are commonly associated with foodborne diseases. The toxins produced by Staphylococcus aureus, Bacillus cereus and Clostridium perfringens also cause these infections. The currently available therapies for these infections are associated with various limited efficacy, high cost and side-effects. There is an urgent need for effective alternative therapies for the prevention and treatment of foodborne diseases. Several plant extracts and phytochemicals were found to be highly effective to control the growth of these pathogens causing foodborne infections in in vitro systems. The present review attempts to provide comprehensive scientific information on major foodborne pathogens and the potential role of phytochemicals in the prevention and treatment of these infections. Further detailed studies are necessary to evaluate the activities of these extracts and phytochemicals along with their mechanism of action using in vivo models.

This paper shows the results of analysis of chemical composition, water binding capacity, pH and microstructure of maral meat, goat meat, lamb, and turkey meat. From the analysis, the high content of protein and ash is observed in turkey meat, fat prevails in lamb, and less amount in maral meat and goat meat. pH value lies between 5.7 (turkey white meat) and 6.4 (goat meat). Low value of water binding capacity is detected in turkey meat (58.2% in red meat, 59.2% in white meat) and high value-in maral meat 79.57%. Описано технологiю одержання гомогенної м'ясо-кiсткової пасти, отриманої пiсля багатостадiйного подрiбнення на дзизi-дробарцi та мiкроподрiбнювачi «Супермасколойдер». Актуальнiсть дослiдження полягає в переробцi м'ясо-кiсткової сировини на харчовi цiлi, тим самим пiдвищуючи безвiдхiдну технологiю в м'ясопереробнiй промисловостi. Дослiджено вплив процесу охолодження та параметрiв тонкого подрiбнення на якiснi показники та мiкроструктуру м'ясо-кiсткової пасти пiсля подрiбнення. Iз результатiв дослiджень встановлено, що зi зменшенням дiаметра решiтки дзиги-дробарки спостерiгається збiльшення температури м'ясо-кiсткового фаршу з 16 °С до 26 °С. Дослiджено змiну температури вихiдної сировини на мiкроподрiбнювачi «Супермасколойдер» з рiзними зазорами мiж шлiфувальними кругами (0,25 мм, 0,10 мм, 0,02 мм) в залежностi вiд кiлькостi води, що додається. Встановлено, що пiсля подрiбнення на мiкроподрiбнювачi з додаванням кiлькостi води температура сировини на виходi зменшується при зазорах 0,25 мм та 0,10 мм -з 34 °С до 17 °С, при зазорi 0,02 мм -з 37 °С до 19 °С. При дослiдженнi функцiонально-технологiчних властивостей м'ясо-кiсткової пасти з додаванням 50 % води встановлено, що м'ясо-кiсткова паста володiє високою вологозв'язуючою (75,63 %) та жироутримуючою (73,38 %) здiбностями. Вологозв'язуюча здатнiсть м'ясо-кiсткової пасти склала 65,3 %, емульгуюча здатнiсть 55,8 %. Дослiджено мiкроструктуру та гранулометричний склад м'ясо-кiсткової пасти з додаванням 50 % води. В результатi проведеного аналiзу геометричних розмiрiв кiсткових частинок виявлено, що при переробцi м'ясо-кiсткового фаршу на мiкроподрiбнювачi розмiри кiсткових частинок лежать в межах зазорiв, що виставляються мiж шлiфувальними кругами, консистенцiя м'ясо-кiсткової пасти однорiдна та мазеподiбна Ключовi слова: м'ясо-кiсткова паста, тонке подрiбнення, дзига-дробарка, мiкроподрiбнювач, кiстки забiйних тварин, функцiонально-технологiчнi властивостi UDC 637.

Offal, such as liver, heart, tongue, kidneys, blood, skin, bone, etc., represents an essential source of protein, vitamin and mineral elements. The present study is an attempt at determining the amino acid composition of horse and beef liver and blood. In general, horse liver was to be a good source of protein (25.06%) compared with beef liver (17.4%). The moisture (74.9%) and fat (3.8) contents were significantly higher (p<0.05) in beef liver, while the ash content of the horse liver was 1.42% compared to 1.30% in beef liver. Total essential amino acid content was higher in beef liver (40.63%) than in horse liver (37.31%).
