The study was conducted on the effect of the addition of common wheat bran on the chemical composition, physical properties, cooking quality and sensory traits of durum wheat pasta. The pasta was produced on an industrial scale, applying an addition of common wheat bran at doses ranging from 20 to 40%. The products obtained were compared to the pasta from whole-grain durum wheat flour, produced under identical conditions and with commercially available whole-grain durum wheat pasta. The increase in the content of wheat bran in the pasta caused a significant increase (Duncan test, P ≤ 0.05) of the content of protein, lipids, ash and total dietary fibre (TDF). The application of 25-30% addition of common wheat bran allowed obtaining the products which are as rich in dietary fibre as the pasta prepared at the same technological parameters from whole-grain durum flour. The pasta containing up to 30% of bran was characterised with lower losses of dry mass and higher resistance to overcooking, in comparison with the pasta made of whole-grain durum. Simultaneously, the products had very good sensory quality.
The distribution of a fraction of soluble dietary fi bre (1,3)(1,4)-β-D-glucans was depicted in selected Polish oat grains (Avena sativa L.). Localisation of β-glucans within the grains was visualised by the light microscopy with Calcofl uor white as a fl uorescence agent. The content of β-glucans varied in samples from 3.08% d.m. to 5.04% d.m. Analysis of distribution of (1,3)(1,4)-β-D-glucans showed that the localization of β-glucans varied between various cultivars and lines. It was demonstrated that the total content of (1,3)(1,4)-β-D-glucans in oat kernels had an effect on their distribution. All the lines and cultivars tested displayed the greatest accumulation of (1,3)(1,4)-β-D-glucans in the cells of the subaleurone layer. With increase in the levels of β-glucans in high-glucan oat cultivars and lines, a tendency was observed towards their greater accumulation in the central parts of the kernel. It makes oat grain particularly suitable for the production of wholemeal foods. It is important not only to focus on increasing the content of β-glucans, but also to investigate molecules distribution in the seed. It was also demonstrated that Dukat cultivar was characterised by an especially valuable triple aleurone layer, which makes this cultivar predestined for further breeding studies as an extremely valuable carrier of genetic information. The effect of everlasting pea in combination with wheat on physical properties and microstructure of extrudates were studied. The share of everlasting pea (Lathyrus sativus) was variable, at 35, 50 and 65 %, respectively. The everlasting pea-wheat mixtures were moistened to the required level (18, 21, and 24 %), homogenized, conditioned and extruded in twin-screw extruder with counter-rotating conical screws. All of the obtained extrudates were characterised by a slow degree of radial expansion and high specific density. The Pearson correlation analysis indicated a statistically significant linear Pearson correlation (p < 0.05) between chemical compositions of the blends and physical properties of the extrudates. The expansion ratio increased as the concentration of the fibers and proteins increased, while specific density and hardness decreased. Inverse relationship was observed for crude fat. The microstructure of the extrudates was determined by both the moisture of the blend and the process temperature. The differences observed in the size, number of air cells and in the cell wall shapes and thickness indicate possibilities of the modification of physical properties of everlasting pea-wheat extrudates. The extrudates produced from everlasting pea-wheat blends (50:50) at higher barrel temperature (110/140/180/170/130 °C) were characterised by more numerous air cells of smaller diameters. Increasing moisture content of extruded blends results in extrudates with a higher porosity. No significant effect was shown in the chemical compositions on the level of metal contamination in the extrudates. The application of a counter-rotating twin-screw extrusion-cooker in the study permitted the production of compact, hard everlasting pea-wheat extrudates for use in vegetarian lunch dishes.
MAŁGORZATA KASPRZAK, ZBIGNIEW RZEDZICKI, EMILIA SYKUT-DOMAŃSKA WPŁYW DODATKU RAZÓWKI OWSIANEJ NA CECHY JAKOŚCIOWE CHLEBA PSZENNEGO S t r e s z c z e n i e Celem pracy było określenie wpływu dodatku razówki owsianej (odmiany SAM i STH 6905) na przebieg technologii wypieku chleba pszennego (wydajność ciasta, wydajność chleba, upiek, strata piecowa całkowita), właściwości fizyczne chleba (objętość 100 g chleba, porowatość miękiszu, WAI, WSI), cechy sensoryczne oraz skład chemiczny chleba (wilgotność, zawartości związków mineralnych w postaci popiołu, białka, błonnika nierozpuszczalnego w środowisku kwaśnym (ADF), ligniny kwaśno-detergentowej (ADL), celulozy (CEL), błonnika pokarmowego nierozpuszczalnego (IDF), rozpuszczalnego (SDF) i całkowitego (TDF)). Wykazano, że razówka owsiana stosowana w ilości do 12 % może być bardzo dobrym nośnikiem białka i błonnika pokarmowego w tradycyjnym jasnym chlebie. Wypieczony chleb pszenno-owsiany charakteryzował się bardzo niskimi wartościami współczynnika rozpuszczalności suchej masy (WSI) (4,84 -8,53 % s.m.), wysoką zawartością białka i błonnika pokarmowego. Ze względu na skład chemiczny owies powinien być zbożem szczególnie cenionym przez konsumentów i producentów żyw-ności. W porównaniu do tradycyjnych zbóż chlebowych (pszenicy i żyta) charakteryzuje się on dużą zawartością tłuszczu (4 -10 % s.m.) o cennym składzie kwasów tłusz-czowych [2, 7,28], dużą zawartością białka (nawet do 20 %) o bardzo korzystnym Dr inż. Celem pracy było określenie wpływu procesu produkcji makaronu 4-jajecznego na stopień wiązania tłuszczu przez polisacharydy i białka zawarte w półproduktach i w produkcie finalnym. Makaron produkowano w warunkach przemysłowych na linii typu C300 metodą ekstruzji niskotemperaturowej. Dodatkowo, w celu porównania, przygotowano makaron z ciasta ręcznie zagniecionego i walcowanego. W próbkach mąki, ciasta i makaronów, pobieranych na kolejnych etapach produkcji, oznaczano zawartość tłuszczu wolnego (ekstrahowanego eterem dietylowym) oraz zawartość tłuszczu całkowitego (ekstrahowanego eterem dietylowym po uprzedniej kwasowej hydrolizie próbek). Zawartość tłuszczu związanego wyliczano z różnicy pomiędzy tłuszczem całkowitym i wolnym. W badaniach wykazano, że w trakcie procesu produkcji makaronu dochodziło do intensywnego wiązania tłuszczu i zmniejszania zawartości tłuszczu wolnego. Niewielkie zmiany występowały już na etapie tworzenia ciasta makaronowego. Zmiany te pogłębiały się na kolejnych etapach procesu produkcji. Szczególnie intensywne zmniejszanie zawartości tłuszczu wolnego zachodziło na etapie wstępnego suszenia, podczas którego obserwowano także znaczący ubytek wilgoci w makaronie. W produkcie finalnym 38 % tłuszczu całkowitego występowało w formie związanej. Jednocześnie stwierdzono, że zawartość tłuszczu wolnego w wysuszonym makronie wynosiła 1,83 % s.m. i była znacznie mniejsza od zalecanej w Polskiej Normie w przypadku produktów 4-jajecznych. W makronie ręcznie zagniatanym i walcowanym stwierdzono znacznie mniejszy stopień wiązania tłuszczu (27 %). Zawartość tłuszczu wolnego w tym produkcie wynosiła 2,3 % s.m. Uzyskane wyniki badań wskazują, że zawartość tłuszczu wolnego nie jest odpowiednim parametrem do szacowania liczby jaj w makaronie. O zawartości tłuszczu wolnego w produkcie finalnym decyduje nie tylko ilość surowców jajowych wprowadzonych do produktu, ale także stosowana technologia.
