This paper evaluates the concentrations of water- and fat-soluble precursors of meat flavour, with the aim of characterising the effect of species on the volatile profile of grilled goat and lamb meat. Compared to goat, lamb meat had higher levels of saturated fatty acids—SFA, monounsaturated fatty acids—MUFA and polyunsaturated fatty acids—PUFA and similar levels of sugars and free amino acids, except for lysine and glycine, which were higher in goat. Major differences were detected in lipid-derived volatiles; only pyrazine, thiazole, and some Strecker aldehydes were at different concentrations in these species. Volatile compounds derived from the oxidation of linoleic acid were at higher levels in meat from lamb due to the higher concentration of the latter, while compounds formed from α-linolenic acid were at higher levels in goat. It can be concluded that lamb meat has a stronger flavour profile compared to goat meat because it has the highest concentrations of lipid-derived volatile compounds, primarily straight saturated alkanals, pyrazines and thiazole.
Sun-dried beef is a frequently consumed and valued product in Brazil, however, there have been no scientific studies on its texture. To assess the tenderness of sun-dried beef, an instrumental analysis (Warner-Bratzler Shear Force; WBSF), a sensory analysis (Quantitative Descriptive Analysis; QDA) and the sarcomere length (SL) were used as indicators. Significant differences were observed among the sun-dried beef samples. Sample 3 (composed of sun-dried meat purchased at three fairs from Region 3 in the city of João Pessoa-PB) was considered the most tender by the assessors, with a score of 6.7, and its WBSF analysis revealed a maximum value of 2.70 kgf. Additionally, this sample exhibited the highest SL value (1.89 µm). Samples 1 and 2 (composed of sun-dried meat purchased at three fairs from Regions 1 and 2, respectively, in the city of João Pessoa) exhibited very similar tenderness values (WBSF and QDA) but differed in their SL values, which suggested that sample 2 was the least tender. In conclusion, these results demonstrate that the studied parameters are complementary and can be used as tenderness indicators for sun-dried beef. However, although the difference was beyond the detection limit of the assessors and the texturometer, the SL analysis appears to have been the most effective.
ResumoCarnes salgadas e dessecadas são conhecidas e apreciadas em todo o mundo. Muitas vezes são caracterizadas por associarem seu consumo a determinados grupos de pessoas ou de determinadas regiões, e devido a isso, podem ser denominadas de tradicionais. Geralmente possuem tecnologia simples, passada de geração em geração e por esse motivo, há muita variação na qualidade desses produtos. No Brasil destacam-se o charque, o jerked beef e a carne-de-sol. O biltong, a cecina de León, o kilishi, o kaddid e a bresaola são exemplos de carnes salgadas e dessecadas. Apesar da importância desses produtos cárneos, inexistem estudos específicos que retratem sua maciez. E, uma vez que tratase de um dos atributos mais reportados pelos consumidores, sua pesquisa pode auxiliar na aceitação dos produtos cárneos incrementando sua demanda. Nesse contexto, a presente revisão explanou as características de produtos cárneos salgados e dessecados tradicionais relacionadas aos seus aspectos de processamento, e sugeriu os indicadores de maciez -força de cisalhamento, índice de fragmentação miofibrilar, comprimento do sarcômero, quantificação do colágeno -para avaliação da maciez de produtos cárneos, uma vez que são de fácil aplicabilidade e compreendem o estudo dos principais responsáveis pela maciez das carnes, as proteínas miofibrilares e o tecido conjuntivo. Their consumption is often associated to certain groups of people or particular regions, and due to this, they can be called traditional. They usually have simple technology, passed on from generation to generation and for this reason, there is much variation in the quality of these products. In Brazil charque, jerked beef and sun-dried meat stand out. Biltong, cecina de León, kilishi, kaddid and bresaola are other examples of salted and dried meats. Despite the importance of these meat products, there are no specific studies on their tenderness. Since tenderness is one of the attributes most reported by consumers, research may help the acceptance of meat products, increasing their demand. In this context, this review presents the characteristics of traditional salted and dried meat products related to processing aspects and suggested tenderness indicators -shear force, myofibrillar fragmentation index, sarcomere length, collagen quantificationto assess the softness of meat products, since they are easy to apply and include the study of the main responsible for meat softness, myofibrillar and connective tissue proteins.
A carne-de-sol é um produto levemente salgado, com ampla aceitação pelos brasileiros. Apesar da maciez ser um dos principais atributos de qualidade para carnes, inexistem publicações científi cas relativas à maciez de carne-de-sol. Visando melhorar esse atributo através da maturação natural e agregando valor ao produto elaborado, cortes cárneos bovinos (coxão mole) foram maturados a 0 ºC por diferentes tempos (0, 7, 14 e 21dias), foram processados em carne-de-sol seguindo metodologia empregada pelos produtores da região e a maciez foi aferida pela força de cisalhamento (FC), índice de fragmentação miofi brilar (IFM), quantifi cação de colágeno, comprimento de sarcômero (CS) e análise sensorial (ADQ). A maturação infl uenciou positivamente na maciez de todas as carnes e os resultados da FC, IFM, CS e ADQ foram sugestivos que a maturação das carnes por sete dias foi o tratamento mais indicado, não havendo diferença nos tempos superiores. A quantifi cação de colágeno não se apresentou como um efi caz instrumento avaliativo, provavelmente devido ao corte cárneo utilizado. Desta forma, sugere-se que a maturação como tratamento da matéria-prima para o processamento da carne-de-sol promove maciez, melhorando sua qualidade e assim, proporciona um incremento no valor agregado desse produto tradicional brasileiro. Apesar da etapa da salga, este produto apresenta características mais próximas da carne fresca resfriada do que produtos salgados como o charque e o jerked beef, que apresentam teores de sal de 15% a 20% e umidade de aproximadamente 45% a 50%, enquanto que a carne-de-sol apresenta teor de sal de 5% a 6% e umidade de 64% a 70% (SHIMOKOMAKI, 2006).Seu processamento é geralmente realizado de forma artesanal, onde produtores de pequeno porte processam a carne sem padronização, tendo como consequência variações de sabor, cor, e principalmente maciez dos produtos disponíveis no mercado (CARVALHO Jr., 2002).Apesar de sua aceitação na região Nordeste do Brasil, fato comprovado pelo Instituto Brasileiro de Geografi a e Estatística (IBGE, 2010), o estado da Paraíba se destaca superando em 50% o consumo médio da região. Contudo, ainda se trata de um produto sem regulamentação pelos órgãos competentes no que tange aos padrões de identidade e qualidade.A maciez é um dos atributos mais importantes na aceitação e satisfação do consumidor de carnes. The International Agency for Research on Cancer has classified the consumption of “very hot” beverages (temperature >65 °C) as “probably carcinogenic to humans”, but there is no information regarding the serving temperature of Brazil’s most consumed hot beverage—coffee. The serving temperatures of best-selling coffee beverages in 50 low-cost food service establishments (LCFS) and 50 coffee shops (CS) were studied. The bestsellers in the LCFS were dominated by 50 mL shots of sweetened black coffee served in disposable polystyrene (PS) cups from thermos flasks. In the CS, 50 mL shots of freshly brewed espresso served in porcelain cups were the dominant beverage. The serving temperatures of all beverages were on average 90% and 68% above 65 °C in the LCFS and CS, respectively (P95 and median value of measurements: 77 and 70 °C, LCFS; 75 and 69 °C, CS). Furthermore, the cooling periods of hot water systems (50 mL at 75 °C and 69 °C in porcelain cups; 50 mL at 77 °C and 70 °C in PS cups) to 65 °C were investigated. When median temperatures of the best-selling coffees are considered, consumers should allow a minimum cooling time before drinking of about 2 min at both LCFS and CS.
