The aim was to evaluate smoked blood sausage prepared using goat blood (50%), viscera (10%) and meat fragments (20%). Microbiological, chemical and sensory evaluations were conducted. The quality analyses showed that smoked goat blood sausage is rich in high biological value proteins, amino acids, essential fatty acids, and iron (26.65mg/100g). The smoked goat blood sausage was rated to have a sensory acceptance of greater than 80%. The use of edible by-products from the slaughter of goats in the formulation of smoked blood sausage is viable because it uses low-cost raw materials; furthermore, the utilisation of these by-products can generate income for producers, allowing them to offer a meat product of high nutritional and sensory quality.
ResumoNa presente pesquisa, o objetivo foi avaliar a qualidade do pão tipo francês, comercializado em panificadoras de João Pessoa-PB, por meio de métodos instrumentais e sensoriais. Inicialmente, amostras de pães das doze panificadoras selecionadas nesse estudo foram submetidas às determinações de volume específico, umidade, pH, acidez, cor da casca, cor do miolo e perfil de textura, tendo todas essas análises sido realizadas em triplicata, com 10 repetições. Em seguida, foi aplicado um teste de aceitação sensorial, utilizando-se uma escala hedônica de nove pontos, com 65 provadores, que avaliaram as amostras quanto aos atributos aparência, cor da casca, cor do miolo, crocância da casca, aroma, sabor, textura e aceitação global. Nos testes instrumentais, foi observado que a maioria dos pães apresentou umidade abaixo de 26% e acidez acima de 4,5 mL de NaOH 0,1N/10 g de pão. Com relação ao volume específico, valores satisfatórios foram observados em 86,2% das amostras (entre 5,0 e 8,0 cm³/g), enquanto para a luminosidade da casca (60-78), e firmeza (2,87 a 6,32 N), esse percentual foi em torno de 80%. Para as demais características de textura foi observado que a média da elasticidade variou de 0,91 -1,93, da coesividade de 0,72 -0,86 e da mastigabilidade de 1,91 -5,71 N. Em relação à aceitação sensorial, somente 50% das panificadoras tiveram seus pães aceitos em todos os atributos avaliados, com escores médios iguais ou superiores a 6. As demais amostras foram rejeitadas por falta de crocância, e uma destas teve seus pães rejeitados também nos atributos aroma, sabor e aparência, apresentando, portanto, maior necessidade de adequação. Initially, samples from twelve bakeries selected in this study were submitted for determination of specific volume, moisture, pH, acidity, crust color, crumb color and texture profile, all of these analyses have been performed in triplicate, with 10 repetitions. RESUMOObjetivo: descrever a percepção da equipe multiprofissional sobre a utilização do lúdico e dos fatores que interferem na sua prática no contexto do cuidado à criança hospitalizada. Método: trata-se de estudo qualitativo, descritvo, exploratório realizado na Clínica Pediátrica de um hospital universitário, com 18 profissionais, por meio de entrevista semiestruturada e emprego da técnica de Análise de Conteúdo. Resultados: revela-se que os profissionais percebem como o lúdico ajuda a modificar o ambiente hospitalar, os sentimentos e o processo de comunicação com a criança, influencia na adesão às terapêuticas, à socialização, à promoção de vínculos e à colaboração com a equipe, ainda que nem todos se sintam preparados para incorporá-lo à sua rotina de trabalho. Conclusão: depara-se a equipe com dificuldades relacionadas aos recursos humanos e materiais, embora haja benefícios; contudo, investe para que a atenção integral à criança seja mediada de forma humanizada, na capacitação da equipe e modificação da prática de cuidados no hospital. ABSTRACT Objective: to describe the perception of the multiprofessional team about the use of play and the factors that interfere in their practice in the context of the care of hospitalized children. ResumoO objetivo neste trabalho foi estudar o perfil e os hábitos do consumidor de cachaça no estado da Paraíba. A pesquisa foi descritiva e quantitativa, realizada por meio da aplicação de 595 questionários estruturados nas quatro mesorregiões paraibanas: Litoral, Agreste, Borborema e Sertão. A análise estatística utilizou o teste de Hertley e o teste t de Student a 5% de probabilidade. Quanto ao gênero dos consumidores de cachaça entrevistados, 84,2% são masculinos, e 15,8%, femininos. Observou-se que a frequência de consumo diária e semanal é maior entre os consumidores de baixa escolaridade, e os com ensino superior apresentaram o menor consumo diário. Os locais preferidos para a aquisição da cachaça foram os bares (51,4%) e os supermercados (26,2%). Na Mesorregião Agreste, 4,7% dos consumidores afirmaram que adquirem a cachaça diretamente do produtor. A cachaça de produção industrial foi apontada como a preferida por 50,4% dos consumidores paraibanos, entretanto, na Mesorregião do Agreste, reduto que produz a cachaça de forma artesanal, os consumidores relataram preferência por cachaça produzida artesanalmenete. Em todo o estado, um percentual elevado de consumidores relatou que não sabe a diferença entre cachaça de produção artesanal e industrial. The study was descriptive and quantitative and has been carried out through the application of 595 structured questionnaires in the four paraiban meso-regions: the Coastal region, Agreste, Borborema and the Sertão. For statistical analysis the Hertley test and Student's t-test at 5% probability were used. As far as the gender of the interviewed consumers of cachaça was concerned, 84,2% were male and 15,8% were female. It was observed that the daily and weekly consumption was higher among consumers of low scolarity. The consumers with the highest scolarity presented the lowest daily consumption. The preferred locale for acquisition of cachaça were bars (51,4%) and supermarkets (26,2%). In the meso-region, Agreste, 4,7% of the consumers confirmed acquiring cachaça directly from the producer. Industrial cachaça was indicated as the preferred one by 50,4% of the paraiban consumers, whereas, in the meso-region Agreste, where there is a concentration of artisan cachaça production, 46,3% of the consumers expressed a preference for artisan cachaças, 29,5% for industrial cachaças and 24,2% expressed not being able to distinguish the difference between the two types of cachaça.
