Acne is one of the skin diseases that disturbs the appearance especially of teenagers. Some types of bacteria that cause acne is Propionibacterium acnes. An alternative natural ingredient that can be used to treat acne is kecombrang flowers (Etlingera elatior (Jack) R.M.Sm.). The purpose of this study was to determine whether the kecombrang ethanol extract has antibacterial activity against the bacteria that caused acne, and to know the effective concentration of the ethanol extract of the kecombrang flower on the bacteria that caused the acne. The research conducted was experimental research. The stages of the study began from the determination of the sample, the manufacture of simplicia powder, extraction of kecombrang flowers using the maceration method, phytochemical screening and antibacterial activity test using the disc diffusion method. The concentrations of extract used in the testing of antibacterial activity were 20%, 40%, 60% and 80%. The results showed that the ethanol extract of the kecombrang flower contained secondary metabolites in the form of flavonoids and saponins. The results of the testing of the antibacterial activity showed that the ethanol extract of the kecombrang flowers had a medium activity at a concentration of 80% against the Propionibacterium acnes bacteria with a inhibition zone of 7,67 mm. Fermented foods and drinks derived from animals as well as plants play an important role in diets. These foods usually contain lactic acid bacteria (LAB) grown during fermentation, and these naturally contain compounds, including organic acids, ethanol, or antimicrobial compounds with the ability to inhibit spoilage organisms and pathogenic bacteria in fermented foods. Furthermore, these bacteria are able to adapt well to the spontaneous fermentation process and play a role in human as well as animal health, especially in digestive tract, commonly known as probiotics. This study therefore aims to describe the microorganisms produced by fermented foods suitable for development as probiotics to improve human health, as these generally have the ability to improve the immune system against pathogenic bacteria. Several genera are used as probiotics, including Lactobacillus , Bifidobacterium , Bacillus , Pediococcus , and several yeasts. Therefore, LAB produced from fermented foods were concluded to be suitable potential candidates for probiotics, to replace antibiotics in overcoming pathogenic bacteria, and to possess the ability to improve the immune system and strengthen the body against pathogenic bacteria.

Kata kunci: Fermentasi, Wadi, Pelatihan Online ABSTRACTOne of the processes of applying the fermentation process occurs in fishery products. Wadi is a fermented fish product that is in great demand by the people of South Kalimantan. Wadi is one of the traditional fish or meat fermentation processes in the form of semi-wet whole fish, slightly black (close to the color of fresh fish), clay texture with a distinctive fermented fish aroma, and has a salty taste. Wadi has a long shelf life of about 6 to 12 months. Lack of skills in wadi processing resulted in wadi not being able to last long so that the wadi rotted quickly. In addition, there is no packaged wadi on the market so it is difficult for people outside South Kalimantan to get this wadi product. This training uses lecture, discussion, question and answer methods as well as online demonstrations or practice. This training resulted in good knowledge and understanding for the participants of the wadi making training. This can be seen from the enthusiasm of the training participants in the discussion and question and answer sessions to seek complete information about fermentation techniques and training in wadi making.
