ResumenSe extrajeron los compuestos fenólicos del rizoma de la cúrcuma (Curcuma longa) empleando como disolvente etanol al 75%. Los compuestos fenólicos presentaron una concentración de 1768.8 mg/L expresados como ácido gálico y se adicionaron a una matriz lipídica. Se determinó la actividad y el potencial antioxidante del producto natural y se comparó con el potencial antioxidante del hidrotolueno butilado (BHT), encontrándose que el extracto de cúrcuma mostró un potencial antioxidante similar al del BHT evaluado a las mismas condiciones. El estudio aporta al conocimiento sobre la extracción de compuestos antioxidantes de origen natural mostrando los beneficios que presentan frente a sus análogos de origen sintético. The antioxidant and potential activities of the natural product were determined and compared with the antioxidant potential of the synthetic antioxidant (BHT) finding that turmeric extracts had antioxidant potential similar to that of BHT, both tested at the same conditions. The study gives new information on the extraction of natural antioxidant compounds showing the benefits that they have over synthetic compounds.
ResumenSe determinó la actividad antioxidante del extracto hidro alcohólico de limoncillo, mediante dos métodos: i) 2,2'-azino-bis(3-etilbenzotiazolina-6-ácido sulfónico (ABTS); y ii) reductor férrico de poder antioxidante (FRAP). Se determinó también el contenido de fenoles empleando el reactivo de Folin Ciocalteu y se evaluó la efectividad in vivo de dicho extracto usando grasa como matriz oxidante y el método de Rancimat. El etanol al 50% v/v, resultó ser el mejor solvente para extraer los constituyentes bioactivos capaces de estabilizar el material lipídico proveniente de la grasa de cerdo y protegerlos frente a la oxidación. De acuerdo con los resultados el extracto de limoncillo exhibe un elevado contenido de compuestos fenólicos anti radicales y un alto poder reductor. En cuanto a la efectividad antioxidante se encontró que el extracto con una concentración de 250 ppm logra duplicar el tiempo de inducción con respecto a la grasa control. Palabras clave: extracto hidro-alcohólico, limoncillo, Cymbopogon citratus, antioxidantes Obtaining Hydro-alcoholic Extracts of Lemongrass (Cymbopogon citratus) as a Natural antioxidant AbstractThe antioxidant activity of hydro-alcoholic extract of lemongrass was determined using two methods: i) 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS); and ii) ferric reducing antioxidant power (FRAP). The content of phenols using the Folin Ciocalteu reactant was also determined and the in vivo effectiveness of this extract using lard as a parent oxidant and the Rancimat method was evaluated. Ethanol 50% v/v was the best solvent to extract the bioactive constituents capable of stabilizing the lipid material from pork fat and protect it against oxidation. According to the results lemongrass extract exhibits a high antiradical phenolic compound content and a high reducing power. Regarding the antioxidant effectiveness it was found that lemongrass extract with a concentration of 250 ppm can double the time of induction with respect to the control fat.
