Als nicht acylierte Anthocyane sind in Blüten von verschiedenen Petuniensorten hauptsächlich die 3-Monoglucoside des Delphinidins, Petunidins, Malvidins, Cyanidins und Päonidins vertreten. Daneben kommen ein Petunidin- und Cyanidin-3-diglucosid sowie Cyanidin-3-sophorosid und -3.7-diglucosid vor.
Die Acyl-anthocyane von Petunia hybrida, Salvia splendens und Raphanus sativus konnten durch Adsorption an dem Kationen-Austauscher Duolite C 25 rein erhalten werden. Die Hydrolyse der wäßrigen Suspensionen der Adsorbate führte zu den jeweiligen Acylzuckern. Durch Vergleich mit den entsprechenden synthetisch hergestellten Acylzuckern zeigte sich, daß die Petunia-Acyl-anthocyane Petanin (I), Negretein (II) und Päonanin (III) 4-p-Cumaroyl-rhamnose, das Monardaein (IV) aus Salvia 6-p-Cumaroyl-glucose und die beiden Acyl-anthocyane Raphanusin A (VI) bzw. B (VII) aus Raphanus 6-p-Cumaroyl- bzw. 6-Feruloyl-glucose enthalten. Außer IV wurden die genannten Acyl-anthocyane einer Perjodatspaltung unterworfen. Auf Grund bereits früher gewonnener Erkenntnisse sowie dieser Befunde ergibt sich, daß Petanin (I) Petunidin-, Negretein (II) Malvidin- und Päonanin (III) Päonidin-3- [4- (p-cumaroyl) -rhamnosyl (1 → 6) -glucosido] -5-glucosid, Monardaein (IV) Pelargonidin-3- [6- (p-cumaroyl) -glucosido] -5-glucosid, Raphanusin A ( (VI) Pelargonidin-3- [glucosyl (1→ 2) -6- (p-cumaroyl) -β-D-glucosido] -5-glucosid und Raphanusin B (VII) Pelargonidin-3- [glucosyl (1 → 2) -6- (feruloyl) -β-D-glucosido] -5-glucosid ist.
