A granola e o iogurte são produtos alimentícios que trazem benefícios para a saúde. A adição de frutos não convencionais com características nutricionais e sensoriais diferenciadas pode aumentar esses benefícios. O objetivo com este estudo foi avaliar a influência da adição do fruto do bacuri (Attalea phalerata Mart.) na formulação de granola para ser consumida com iogurte. As características microbiológicas, nutricionais e físicas da granola com bacuri e do iogurte foram determinadas. O produto foi avaliado sensorialmente utilizando o teste de diferença do controle e intenção de compra em 50 julgadores. A avaliação microbiológica demonstrou que o produto atende à Legislação vigente. O conteúdo de lipídeos foi significativamente maior que o da granola comercial, fornecendo um produto com alto valor energético. No trabalho de pesquisa laboratorial, com secagem de taioba (Xanthosoma sagittifolium Schott) em diferentes temperaturas, em dois sistemas de secagem, secador convencional com aquecimento resistivo (50, 60, 70 e 80 ºC) e um protótipo de controlador higroscópico baseado em tecnologia de bomba de calor (25, 30, 35 e 40 ºC), foram determinados e avaliados a taxa específica de remoção de água (SMER) e a concentração dos compostos bioativos: compostos fenólicos, vitamina C e clorofila total. O secador com bomba de calor proporcionou menor degradação dos compostos bioativos, principalmente, vitamina C. No secador convencional a menor degradação de vitamina C foi de 80,6% a 60 ºC, enquanto na bomba de calor, a maior degradação foi de 70,3% na temperatura de 40 ºC. A SMER aumentou com a elevação da temperatura de secagem. Os valores da SMER variaram entre 3,465 e 8,551 kg de água/kWh para bomba de calor e, entre 6,221 e 16,956 kg de água/kWh para o secador convencional. A SMER da bomba de calor a 40 ºC foi maior que a SMER do secador convencional operando a 50 ºC.
A cultura da mandioca (Manihot esculenta Crantz) é uma das mais importantes fontes de carboidratos para os consumidores de renda mais baixa em países tropicais, devido ao seu alto teor de amido e sabor suave pode ser empregada em diversos produtos alimentícios prontos para o consumo com maior valor agregado como, por exemplo, chips de mandioca. Diante disso objetivou-se estudar efeito de diferentes pré-tratamentos anterior à fritura, na qualidade física de chips de mandioca. O estudo foi desenvolvido no Laboratório de Análise e Química de Alimentos (LATEC) da Universidade Federal da Grande Dourados. Os pré-tratamentos aplicados foram: 1)fatias lavadas, submetidas ao branqueamento (TT); 2) fatias lavadas, submetidas ao branqueamento e secagem em estufa por dez minutos (TSP); 3) fatias lavadas, submetidas ao branqueamento e secagem em estufa por três horas (TST) e 4) controle (sem pré-tratamento). Após os pré-tratamentos as fatias foram fritas em óleo de soja a 180 °C. Os chips foram analisados quanto ao teor de lipídeos e a cor. Os resultados mostraram que não houve diferença significativa entre os pré-tratamentos no conteúdo de lipídeos determinados nos chips. Porém, a cor do produto submetido aos pré-tratamentos TST e TSP foi mais clara que as amostras controle (C) e com branqueamento (TT).
O objetivo do estudo foi avaliar a composição química e física das polpas de ciriguela e guavira. Nas determinações analíticas foram empregados métodos reconhecidos cientificamente. Os resultados mostraram que as polpas de ciriguela e guavira apresentam alto teor de umidade (78,49 e 86,35%, respectivamente) e atividade de água (0,991 e 0,989, respectivamente), que indica alta perecibilidade. Os teores de proteínas foram próximos entre a ciriguela (2,06 g/100g) e a guavira (2,26 g/100g). A ciriguela apresentou conteúdo de lipídeos de 3,07 g/100g, resíduo mineral fixo de 7,42 g/100g, fibras de 3,04 g/100g e carboidratos de 10,96 g/100g. A guavira contém 0,82 g/100g de lipídeos, 0,98 g/100g de resíduo mineral fixo, 1,64 g/100g de fibras e 7,96 g/100g de carboidratos. O pH da ciriguela foi 2,92, o que a classifica como fruta muito ácida. Para a guavira o pH foi de 3,83. O teor de acidez corroborou com esses resultados sendo maior para a ciriguela (1,55 g/100g) em relação à guavira (0,81 g/100g). Ambas as polpas apresentaram valores de acidez dentro dos níveis considerados bem aceitos para o consumo (0,8 a 1,95%). Os parâmetros de cor mostraram que a ciriguela foi mais clara (L* 56,36). A cor predominante da ciriguela foi o amarelo alaranjado (a* 20,17 e b* 41,10), enquanto da guavira foi o amarelo (a* 5,68 e b* 36,78) ligeiramente escuro (L* 44,57). As características químicas e físicas de ambas as polpas indicam conteúdo nutricional maior que as frutas convencionais e mostram potencial para o desenvolvimento de novos produtos alimentares.
