A principal preocupação na comercialização de abacaxis in natura é a rápida perda de qualidade pós-colheita. Um dos fatores que mais influencia na deterioração desses frutos é a alta quantidade de água livre presente, proporcionando a degradação por microrganismos mais rapidamente. Um processo que pode ser utilizado para reduzir o teor de umidade desses frutos é a secagem por convecção e/ou a desidratação osmótica, estendo assim a vida útil dos mesmos. Assim, este trabalho teve como objetivo analisar a influência do efeito da temperatura e do tratamento osmótico na perda de água de fatias de abacaxi. O processo foi realizado através de um planejamento fatorial completo 22 variando a temperatura de secagem (70 e 100 °C) e a concentração de sacarose na solução osmótica (15 e 30%) para avaliar a perda de água (g). Na execução, as fatias de abacaxi ficaram imersas durante 2 h em solução osmótica e 3 h em desidratação em um forno convencional. Através dos resultados obtidos, observou-se que a melhor condição experimental foi na temperatura de desidratação de 100 ºC e na concentração de sacarose de 30%, obtendo uma perda de água de 16 g. A temperatura apresentou maior efeito para a perda de água do que o tratamento osmótico. O modelo matemático obtido através do procedimento experimental explicou 94,7% dos resultados obtidos e poderá ser utilizado para fins preditivos.
