A produção de queijos é uma forma apropriada de conservar o leite, transformando-o em produto mais estável, cujas qualidades são mantidas. No comércio são encontrados queijos Minas frescal nas comercializados industrial e artesanal, e fazem parte da tradição alimentar de todo país, atingindo todas as classes sociais. O presente trabalho avaliou as características físico-químicas, analisou a rotulagem e verificou as condições higiênico sanitárias quanto presença de Salmonella spp; contagem de Staphylococcus aureus, de coliformes termotolerantes e totais de queijos Minas frescal, produzidos industrialmente e artesanalmente na região Sul do estado de Goiás. Foram utilizadas 5 amostras de queijos industrializados, 5 de queijos artesanais comercializados em supermercados. Os resultados revelaram que grande parte das amostras estavam em desacordo com a legislação, quanto a contagem de coliformes totais e termotolerantes apresentando valores superiores a 1100 NMP/g., e a presença de Staphylococcus aureus, havendo ausência de Salmonella spp. Para as análises físico-químicas, os resultados demostraram estar de acordo com a legislação vigente. Quanto à avaliação da conformidade de rotulagem das embalagens, constatou-se que 90% das amostras industrializadas estavam em acordo com a legislação em vigor e 100% das artesanais estavam em desacordo. Assim determina-se que de acordo com a legislação vigente os queijos estavam em não conformidade, constatando possíveis falhas no controle da qualidade no processamento e armazenamento dos queijos
BACKGROUND: A mixture design was used to investigate the effects of banana peel flour, rice flakes and oat flour on sensory acceptability of cereal bars, with subsequent evaluation of sensory profile of products identified as having high acceptability.
Sugar apple, atemoya and soursop are tropical fruits very prized for their pleasant, aromatic and distinctive flavor. In this work, the fresh fruits pulps had high nutritional values, since they contain significant levels of carbohydrates. ), pH (3.41, 3.34 and 3.41) and soluble solids (63.00, 65.00 and 68.60 °Brix). The jams were subjected to Quantitative Descriptive Analysis. A total of 12 trained panelists evaluated the attributes flavor, consistency, appearance and overall acceptability of the jams on a 9-point hedonic scale. Based on sensory evaluation, jams presented a good overall acceptability and atemoya jam was the most preferred by the panelists.Index terms: Tropical fruits, nutritional value, annonaceae. RESUMOFruta do conde, atemóia e graviola são frutos tropicais muito apreciados por seu sabor agradável, aromático e marcante. Neste trabalho, constatou-se que as polpas de frutas frescas tiveram altos valores nutricionais, uma vez que estas continham níveis significativos de carboidratos. Os resultados para a análise da composição química das polpas de frutas frescas, obtidos para fruta do conde, atemóia e graviola foram respectivamente: umidade (79,65, 77,06 e 85,30 g.100 g ), pH (3,41, 3,34 e 3,41) e sólidos solúveis (63,00, 65,00 e 68,60 °Brix). As geleias foram submetidas à Análise Descritiva Quantitativa. Um total de 12 provadores treinados avaliaram os atributos sabor, consistência, aparência e aceitabilidade global das geleias em uma escala hedônica de 9 pontos. Baseado na avaliação sensorial, as geleias apresentaram uma boa aceitação global e a geleia de atemóia foi à preferida dos provadores. Sapote (Quararibea cordata Vischer), also known as a chupa-chupa, is originated from the Brazilian, Peruvian and Colombian Amazon. The pulp of the ripe fruit is edible, fibrous, of intense orange color, sweet flavor and aromatic. Since the fruit is known in the Amazon only in its domesticated state, this work becomes necessary. With the aim of meeting the demand for new products in domestic and international markets, sapota pulp jelly has been developed. The jelly was assessed for moisture, ash, lipids, proteins, carbohydrates, dietary fiber, pectin, pH, total acidity, solids soluble, sugars, organic acids, carotenoids, phenolic compounds and antioxidant capacity. The final product met the standards required by Brazilian law, and 32.68% moisture and 61.06% °Brix. Also, in accordance with the laws attributed to this product, jelly sapota pulp can be considered a food rich in fiber, as presented content above 5%. The jelly, showed content of total phenolics compounds (102 mg GAE. 100 -1) in relation to fresh fruit (21 mg GAE.100 g -1). There was the identification in the antioxidant capacity (9.05% scavering of DPPH radical), giving the final product antioxidant properties. Also were analyzed the microbiological characteristics of the product which was not observed the presence of thermotolerants coliforms, yeast and molds. The sapota can be considered effective raw materials in the preparation of jam and this had an antioxidant activity and source of fiber.Index terms: Fiber, amazonic fruits, DPPH radical. Por ser conhecida na Amazônia somente no seu estado domesticado, torna-se necessário este trabalho Assim, visando a atender a demanda por novos produtos no mercado nacional e internacional, foi desenvolvida a geleia da polpa de sapota. A geleia foi avaliada quanto aos teores de umidade, cinzas, lipídeos, proteínas, carboidratos, fibras alimentares, pectina, pH, acidez total, açúcares, ácidos orgânicos, carotenóides, além de compostos fenólicos e capacidade antioxidante. O produto final atendeu às normas exigidas pela legislação brasileira, sendo 32.68% de umidade e 61.06 °Brix. Também, em conformidade com a normas legais atribuídas a esse produto, a geleia da polpa de sapota pode ser considerada um alimento rico em fibras, já que apresentou teor acima de 5%. A geleia apresentou maiores teores de compostos fenólicos totais (102 mg GAE.100 -1 ), em relação à fruta in natura (21 mg GAE.100 g -1 ). Houve a identificação na capacidade antioxidante na geleia de 9.05% de descoloração do radical DPPH, conferindo ao produto final propriedades antioxidantes. Foram analisadas ainda as características microbiológicas do produto onde não foi observada a presença de coliformes termotolerantes, bolores e leveduras. Caracterização química, atividade antioxidante e formulação de doces com feijão azuki (Vigna angularis) Chemical composition, antioxidant activity and development of desserts with azuki beans (Vigna angularis) ResumoNo Japão, o feijão azuki é comumente usado na elaboração de doce, observando-se que a sua casca vermelha é rica em antioxidantes. No Brasil, o feijão azuki ainda é pouco consumido e o doce de feijão é pouco conhecido pelos brasileiros. O objetivo deste estudo foi caracterizar quimicamente o feijão azuki vermelho (Vigna angularis), bem como avaliar a influência do cozimento sobre o seu teor de compostos fenólicos e a sua atividade antioxidante. Buscou-se também avaliar a composição química dos doces formulados com feijão azuki. Os resultados obtidos para a composição química mostraram que o feijão azuki apresentou elevados teores de carboidratos (65,60 g/100 g) e proteínas (17,87 g/100 g). O feijão azuki cozido, comparado ao feijão azuki cru, perdeu grande parte dos compostos fenólicos, mas ainda manteve quase metade da atividade antioxidante. Os doces de feijão azuki em massa e em pasta apresentaram, respectivamente, alto teor de carboidratos de 67,09 e 46,20 g/100 g, teores de proteínas de 4,02 e 6,48 g/100 g, e baixo teor de lipídios de 0,33 e 2,73 g/100 g. O feijão azuki vermelho mostrou ter um bom potencial tecnológico para sua utilização no processamento dos doces de feijão. AbstractIn Japan, azuki beans are commonly used in the preparation of desserts and their red seed coats are rich in antioxidants. In Brazil, azuki beans are still little consumed and the bean dessert little known by Brazilians. The aim of this study was to characterize red azuki beans (Vigna angularis) by means of chemical analyses, evaluate the influence of cooking on the total phenolic compound contents and antioxidant activity, and also evaluate the chemical composition of desserts formulated with azuki beans. The results obtained for the chemical composition showed that azuki beans presented high carbohydrate (65.60 g/100 g) and protein (17.87 g/100 g) contents. When compared to raw azuki beans, the cooked beans had lost most of the phenolic compounds, but still maintained nearly half of the antioxidant activity. The azuki bean desserts in the solid and paste forms presented, respectively, high carbohydrate contents (67.09 and 46.20 g/100 g), good protein contents (4.02 and 6.48 g/100 g) and low lipid contents (0.33 and 2.73 g/100 g). The red azuki beans showed good technological potential for use in the processing of bean desserts.
Essential oils from plants are an important alternative source of antimicrobial compounds against important pathogens for food safety. This study aimed to evaluate the in vitro antimicrobial activity of thyme essential oil (Thymus vulgaris) and to apply it in the sanitization of minimally processed arugula (Eruca sativa), aiming to increase the safety and shelf life of arugula. The in vitro antibacterial activity of the essential oil was evaluated by disc diffusion assays and determining the minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC) against different foodborne pathogens. Thereafter, a “challenge test” was carried out to evaluate the antibacterial activity of the thyme essential oil (0.2%) on the sanitization of arugula inoculated with Escherichia coli (3 log CFU mL-1) compared to sodium hypochlorite (120 ppm of active chlorine). Afterwards, an experiment of applying the thyme essential oil (0.2%) as a sanitizing agent in minimally processed arugula was carried out to evaluate the vegetable shelf life compared to sodium hypochlorite (120 ppm of active chlorine). The arugula was stored at 8 °C for 7 days, and periodically, the number of aerobic mesophilic microorganisms, pH and titratable acidity were determined, and the color of the samples was evaluated. The thyme essential oil had strong antimicrobial activity in vitro against all species of bacteria tested. In the experiments in situ, the thyme essential oil (0.2%) and sodium hypochlorite (120 ppm of active chlorine) were not efficient in eliminating the inoculated E. coli from minimally processed arugula, and they did not result in an extension of the shelf life of the arugula in comparison to the control (p>0.05). However, the growth rate of the E. coli population over time on the arugula samples sanitized with the thyme essential oil (0.2%) was low, which indicates a positive effect of the essential oil, which may be optimized with future adjustments in the concentration and immersion time for the arugula sanitization.
Resumo:A produção de sorvetes utilizando a polpa de sapota pode ter um apelo junto ao consumidor através da combinação da cor única da sapota, seu sabor natural e a promoção da saúde através de seus constituintes. Foram processados três tipos de sorvete onde a substituição da polpa foi de 0,27% e não houve adição de corantes artificiais. Os resultados demonstraram que as quantidades de vitamina C variaram de 2,22 a 4,10 mg.100g -1 , o teor de carotenóides totais de 0,02 a 0,43 µg.g -1 , as fibras totais de 5,20 a 9,33% e os compostos fenólicos de 306,28 a 363,45 mg EAG.100g -1 . Estes resultados indicam que o sorvete elaborado com a polpa de sapota apresenta uma quantidade significativa de vitamina C além de compostos fenólicos que em sua maioria com precursores de atividade antioxidante. O teor de fibras totais encontrado caracteriza o produto como sendo rico em fibras podendo ter apelo funcional. Abstract:The production of ice cream using the sapota pulp may have an appeal to the consumer by combining the unique color of sapota, its natural flavor and health promotion through its constituents. Three types of ice cream where the replacement of the pulp was 0.27% and no addition of artificial colorants have been processed. The results demonstrated that the vitamin C content ranged from 2.22 to 4.10 mg.100g-1, the total carotenoid content of from 0.02 to 0.43 μg.g-1, total fiber 5.20 9.33% phenolic compounds and 306.28 to 363.45 mg EAG.100g -1 . These results indicate that the ice cream produced with the pulp sapota has a significant amount of vitamin C as well as phenolic compounds which mostly precursors with antioxidant activity. The total fiber content found characterizes the product as being rich in fiber may have functional appeal.
