A produção de queijos é uma forma apropriada de conservar o leite, transformando-o em produto mais estável, cujas qualidades são mantidas. No comércio são encontrados queijos Minas frescal nas comercializados industrial e artesanal, e fazem parte da tradição alimentar de todo país, atingindo todas as classes sociais. O presente trabalho avaliou as características físico-químicas, analisou a rotulagem e verificou as condições higiênico sanitárias quanto presença de Salmonella spp; contagem de Staphylococcus aureus, de coliformes termotolerantes e totais de queijos Minas frescal, produzidos industrialmente e artesanalmente na região Sul do estado de Goiás. Foram utilizadas 5 amostras de queijos industrializados, 5 de queijos artesanais comercializados em supermercados. Os resultados revelaram que grande parte das amostras estavam em desacordo com a legislação, quanto a contagem de coliformes totais e termotolerantes apresentando valores superiores a 1100 NMP/g., e a presença de Staphylococcus aureus, havendo ausência de Salmonella spp. Para as análises físico-químicas, os resultados demostraram estar de acordo com a legislação vigente. Quanto à avaliação da conformidade de rotulagem das embalagens, constatou-se que 90% das amostras industrializadas estavam em acordo com a legislação em vigor e 100% das artesanais estavam em desacordo. Assim determina-se que de acordo com a legislação vigente os queijos estavam em não conformidade, constatando possíveis falhas no controle da qualidade no processamento e armazenamento dos queijos

Dairy products are a common staple in the human diet. Moisture content is an important factor in the composition of foods, and it is a parameter used to measure product quality due to its direct influence on food storage. In this study, the moisture contents of three different products (mozzarella cheese, a creamy cheese spread, and yogurt drinks) were measured using oven drying, infrared drying, and microwave drying in order to compare the results of these three methods. Three brands of each product were used, all of which were purchased at the local supermarket in the city of Goiatuba, Goiás, Brazil. The different methods used to measure the dry extract of most of the brands analyzed did not differ significantly between each other based on a significance level of 5% on Tukey’s test. There was a significant difference between the methodologies used in the case of only one brand of each analyzed product. Microwave drying method wasreported to be a safe and reliable technique for analyzing dry extract from dairy products; it produces precise results, thus guaranteeing the quality of the analysis, and it reduces procedure time, thus optimizing the routine analytical processes performed in quality control laboratories within food processing plants.

The production of Hancornia speciosa Gomes, in Brazil, has increased significantly in recent years, with a concomitant increase in post-harvest losses, making it important to find out new techniques that contribute to extend the shelf life of this fruit without altering its physical, sensory and nutritional characteristics. The present study aimed to apply biodegradable coatings made from chitosan, whey protein, lactic acid and cassava starch to H. speciosa, as well as to assess their efficiency on the shelf life of the fruits. For that, physico-chemical analyses were performed to determine the pH, acidity, ºBrix, phenolic compounds, vitamin C and moisture content. The coatings with 1 % of chitosan, 4 % of whey protein, 3 % of cassava starch and 1.5 % of lactic acid presented satisfactory results at ambient temperature (25 ºC), delaying the ripening process, when compared to the controls.

As proteínas são bastante utilizadas na indústria alimentícia para o melhoramento da textura dos produtos e são de extrema importância para a nutrição humana. Esse estudo avaliou o conteúdo de proteína total de três derivados lácteos diferentes: bebida láctea, requeijão cremoso e cream cheese, de três marcas comerciais distintas, e comparou com a rotulagem nutricional dos produtos. Todas as marcas diferiram entre si estatisticamente, com nível de significância de 95% pelo teste de Tukey. Apenas uma amostra de bebida láctea diferenciou significativamente das demais (p<0,05), enquanto que para o requeijão cremoso, as três marcas diferiram do valor descrito no rótulo e no cream cheese houve diferença nas marcas C1 e C3 (p > 0,05).  Somente a marca C3 do cream cheese ficou fora dos padrões de rotulagem, as demais marcas apresentaram diferença significativa, porém estavam em conformidade com legislação brasileira vigente. Como o cream cheese não possui uma legislação brasileira específica para o conteúdo de proteína, os valores são bastante variáveis. Entretanto, em relação à rotulagem nutricional, a ANVISA preconiza que o valor real não deve exceder a 20% do valor informado. Sendo assim, é importante a fiscalização dos produtos lácteos no tocante à informação nutricional para que o consumidor seja devidamente orientado. Palavras-chave: Bebida Láctea. Rotulagem Nutricional. Cream Cheese. Abstract Proteins are widely used in the food industry for improving the texture of products and are of utmost importance for human nutrition. This study evaluated the total protein content of three different dairy products: dairy drink, cream cheese and cream cheese, from three different brands, and compared it with the nutritional labeling of the products. All the marks differed statistically, with a level of significance of 95% by the Tukey test. Only one sample of milk beverage differed significantly from the others (p <0.05), whereas for cream cheese, the three brands differed from the value described on the label and cream cheese showed differences in the marks C1 and C3 (p> 0, 05). Only the C3 brand of cream cheese was outside the labeling standards, the other brands presented significant difference, but were in compliance with current Brazilian legislation. As cream cheese does not have specific Brazilian legislation for protein content, the values are quite variable. However, in relation to nutritional labeling, ANVISA recommends that the actual value should not exceed 20% of the reported value.
