Murici and gabiroba fruits are common in the Brazilian Cerrado, but their consumption is limited not only by the region, but also because they are seasonal and perishable fruits. Thus, this work was intended to characterize physically, chemically, nutritionally and anti-nutritionally the peel, pulp and seed fractions for use, by the food industry, of whole fruits or their fractions. Analyzes of horizontal, transversal diameter and mass were carried out on the whole fruits, and on the fractions the following analyzes (Aw, color, soluble solids, pH, titratable acidity, moisture, protein, lipids, ash, carbohydrates, caloric value, antioxidants (DPPH, FRAP, and phenolics), vitamin C, cyanogen compounds, phytates and tannins, where the results obtained were tabulated and presented together with standard deviation and an analysis of variance in the averages was carried out. The results showed that in both fruits and, depending on their fractions , significant levels of protein and vitamin C are found, in addition to having antioxidant activity In the skins and seeds of murici and gabiroba fruits, there were no levels of protease inhibitors, cyanogenic glycosides, nor phytates; the presence of tannins does not compromise use in human food, only care is needed when incorporating and ingesting foods rich in calcium Therefore, the insertion of the peel, pulp and seed fractions of the murici and gabiroba fruits in food products is viable, contributing to adding value and helping to reduce organic waste.
In order to evaluate the performance of the chemiluminescent immunoassay (CLIA) in antinuclear antibodies (ANA) testing, using indirect fluorescent antibody (IFA) on HEp-2 cells as a standard, 209 samples were studied from September to October/2010. The tests were conducted according to the procedures recommended by the manufacturers of the reagents. The interpretation of the IFA results was done according to the Brazilian standards. The charts of patients showing different results between the two techniques were analyzed. The CLIA efficiency was 89%, with a sensitivity of 65%, and a specificity of 94.7%. Nine (4.3%) false-positive and 14 (6.7%) false-negative results were detected. Of these, 13 (93%) represented no risk for the diagnosis and therapeutic management of the patients. The CLIA methodology reduced the need for the IFA manual technique by 77% (160/209). The ANA screening test proved to be a fast and acceptable methodology in the studied population. We established the following criteria for the introduction of an automated ANA screening: (1) Positive results must be confirmed by IFA to characterize the pattern and titer of the antibody. (2) Negative results are issued with a notice to request a new test by IFA when the clinical suspicion of autoimmune disease persists.
São inúmeros os resíduos gerados pelas indústrias de alimentos, o que leva a busca por alternativas de aproveitamento e desenvolvimento de subprodutos. Os resíduos de açaí, por sua vez, conhecidos popularmente como ‘borra’, são obtidos em grande quantidade, tendo em vista, o montante processado nas agroindústrias. O presente trabalho teve como objetivo estudar as propriedades físico-químicas e tecnológicas da farinha do resíduo de açaí (FRA), e avaliar sua utilização, como ingrediente, no processamento de quibe. Foram realizadas as seguintes análises físico-químicas: umidade, proteínas, lipídios, cinzas, carboidratos, valor energético, fibras, pH e acidez titulável. As propriedades tecnológicas estudadas foram: solubilidade em água, índice de absorção em água e índice de absorção em óleo. Para avaliação sensorial, três formulações de quibe foram desenvolvidas, com diferentes concentrações da FRA (05, 10 e 15%). A FRA apresentou altos teores de fibras e elevado valor energético, bem como propriedades tecnológicas satisfatórias para utilizá-la, como ingrediente, em formulações de produtos cárneos. As formulações de quibe com 05 e 10% de FRA foram as preferidas pelos consumidores, tornando seu acréscimo uma alternativa viável para as indústrias de alimentos.
Os taninos são compostos fenólicos, responsáveis pela adstringência de muitos frutos e produtos vegetais, devido à precipitação de glicoproteínas salivares, o que ocasiona a perda do poder lubrificante, sendo considerado antinutricional. Com isso, o objetivo desse estudo foi avaliar a extração de taninos totais da farinha de semente de graviola, utilizando banho ultrassônico com diferentes solventes. Os taninos foram extraídos, por meio de banho ultrassônico, por 30 minutos, a temperatura ambiente, utilizando como solventes o etanol 70%, água destilada e metanol 50%. Os taninos totais foram determinados, de acordo com a metodologia de Folin-Denis. Observou-se uma extração de 572,93, 589,76, 689,46 (mg equivalente de ácido tânico/100g de amostra), utilizando água destilada, etanol 70% e metanol 50% respectivamente. Não observou-se diferença significativa entre os solventes, além disso, foi possível observar que a quantidade de taninos encontrada na farinha de semente de graviola não é nociva à saúde, podendo esta ser implementada na alimentação humana.
