São inúmeros os resíduos gerados pelas indústrias de alimentos, o que leva a busca por alternativas de aproveitamento e desenvolvimento de subprodutos. Os resíduos de açaí, por sua vez, conhecidos popularmente como ‘borra’, são obtidos em grande quantidade, tendo em vista, o montante processado nas agroindústrias. O presente trabalho teve como objetivo estudar as propriedades físico-químicas e tecnológicas da farinha do resíduo de açaí (FRA), e avaliar sua utilização, como ingrediente, no processamento de quibe. Foram realizadas as seguintes análises físico-químicas: umidade, proteínas, lipídios, cinzas, carboidratos, valor energético, fibras, pH e acidez titulável. As propriedades tecnológicas estudadas foram: solubilidade em água, índice de absorção em água e índice de absorção em óleo. Para avaliação sensorial, três formulações de quibe foram desenvolvidas, com diferentes concentrações da FRA (05, 10 e 15%). A FRA apresentou altos teores de fibras e elevado valor energético, bem como propriedades tecnológicas satisfatórias para utilizá-la, como ingrediente, em formulações de produtos cárneos. As formulações de quibe com 05 e 10% de FRA foram as preferidas pelos consumidores, tornando seu acréscimo uma alternativa viável para as indústrias de alimentos.
O amido de araruta possui potencial para aplicação em alimentos e gera produtos sem glúten. O objetivo deste trabalho foi estudar as propriedades do amido visando a sua aplicação tecnológica em alimentos. Os rizomas de araruta foram obtidos em plantação da Escola de Agronomia da Universidade Federal de Goiás. Para obter o amido os rizomas foram triturados, peneirados e secos. Foram realizadas análises de capacidade de formação de gel, atividade de água, acidez titulável, umidade, pH, colorimetria, solubilidade em água e leite, índice de absorção em água, óleo e leite. A umidade (9,49%) e Aw (0,32) são esperados para o tipo de produto e estão dentro da legislação. O pH de 6,68 caracteriza os amidos nativos, a coloração é natural dos rizomas que geraram o amido. A solubilidade em leite foi maior do que em água e o índice de absorção foi maior em leite confirmando o potencial do amido aplicado em alimentos à base de leite como os panificados. O amido possui potencial para aplicação em alimentos e representa alternativa de alimentação para celíacos.

Os Cursos de Extensão em Processamento de Alimentos (CEPA) são direcionados a diversos públicos da sociedade, que buscam aperfeiçoar seu aprendizado. Proporcionam a interação entre academia e sociedade, promovendo uma formação técnica e cidadã dos discentes. Dessa forma, objetivou-se promover cursos de extensão em Processamento de Alimentos, com ênfase nas boas práticas de fabricação e nas etapas do processo de alimentos. Foram ministrados nove cursos, com temas variados, por profissionais da área, auxiliados pelos alunos integrantes do Grupo PET Engenharia de Alimentos. Os resultados das avaliações dos participantes evidenciaram o êxito obtido em todos os cursos oferecidos.
