RESUMO Cinética de secagem dos grãos de pinhão-mansoDiante da necessidade de desenvolvimento de equipamentos para a cultura do pinhão-manso, objetivou-se com este trabalho ajustar diferentes modelos matemáticos aos dados experimentais da secagem dos grãos de pinhão-manso, submetidos a diferentes condições de secagem, e selecionar aquele que melhor representa o fenômeno. O experimento foi desenvolvido no Instituto Federal Goiano -Campus Rio Verde. Os grãos, com teor de água inicial de 0,50 (kg de água/kg de matéria seca), aproximadamente, foram submetidos à secagem em estufa, com circulação forçada de ar, nas temperaturas de 45, 60, 75, 90 e 105 °C, até atingirem o teor de água de 0,10 ± 0,005 (kg de água/kg de matéria seca). Aos dados experimentais, foram ajustados 11 modelos matemáticos utilizados para representação da secagem de produtos agrícolas. Os modelos foram analisados por meio do coeficiente de determinação, do qui-quadrado, do erro médio relativo, do erro médio estimado e da distribuição de resíduos. Conclui-se que o aumento da temperatura do ar promove redução no tempo de secagem dos grãos e que os modelos de Midilli e Dois Termos são adequados para a representação do fenômeno da secagem dos grãos de pinhão-manso, e que, dentre estes, recomenda-se o modelo de Midilli para a descrição do fenômeno, por sua maior simplicidade.Palavras-chave: secagem, modelagem matemática, Jatropha curcas L., temperatura, teor de água. Given the necessity of developing jatropha cultivation equipment, this work adjusted different mathematical models to experimental data obtained from the drying of jatropha seeds submitted to different drying conditions and selected the best model to describe the drying process. The experiment was carried out at the Federal Institute of Goiás -Rio Verde Campus. Seeds with initial moisture content of approximately 0.50 (kg water/kg dry matter) were dried in a forced air-ventilated oven, at temperatures of 45, 60, 75, 90 and 105°C to moisture content of 0.10 ± 0.005 (kg water/kg dry matter). The experimental data were adjusted to 11 mathematical models to represent the drying process of agricultural products. The models were compared using the coefficient of determination, chi-square test, relative mean error, estimated mean error and residual distribution. It was found that the increase in the air temperature caused a reduction in the drying time of seeds. The models Midilli and Two Terms were suitable to represent the drying process of Jatropha seeds and between them the use of the Midili model is recommended due to its greater simplicity.
ABSTRACT. The objective of this study was to evaluate the correlation between a group of physiological variables (electrical conductivity, potassium leaching, and germination percentage) and a group of drying kinetics variables (drying time and drying rate) in addition to verifying the relation between drying kinetics variables and coffee quality as a function of processing type, temperature, and drying airflow. Coffee drying was conducted in a fixed-layer dryer at two temperatures and two airflows. After drying, an evaluation of the physiological and sensorial quality was conducted. Based on the results obtained, the following conclusions were drawn: coffee that is processed via a dry method is more sensitive to mechanical drying with heated air than coffee processed via a wet method, resulting in poor physiological performance; airflow does not interfere with the physiological quality of pulped and natural coffees; a temperature increase from 40 to 45°C resulted in a decrease in the physiological quality only for pulped coffee; and an increase in the drying rate as a result of an increase in the drying temperature to 40°C had a negative effect on the sensorial quality of pulped coffee.Keywords: drying kinetics, processing, drying rate.Qualidade fisiológica e sensorial do café arábica submetido a diferentes temperaturas e fluxos de ar de secagem RESUMO. Este trabalho foi realizado com o objetivo de avaliar a correlação entre um grupo de variáveis fisiológicas (condutividade elétrica, lixiviação de potássio e porcentagem de germinação) e um grupo de variáveis de cinética de secagem (tempo e taxa de secagem), bem como verificar a relação entre as variáveis de cinética de secagem e a qualidade sensorial do café, em função do tipo de processamento, da temperatura e do fluxo de ar de secagem. A secagem do café foi realizada em secador de leito fixo com duas temperaturas e dois fluxos de ar. Após a secagem, foi avaliada a qualidade fisiológica e sensorial. A partir dos resultados obtidos, conclui-se que: o café processado via seca é mais sensível à secagem mecânica com ar aquecido do que o processado via úmida, apresentando pior desempenho fisiológico; o fluxo de ar não interfere na qualidade fisiológica do café despolpado e natural; a elevação da temperatura de 40 para 45°C resultou em queda da qualidade fisiológica apenas para o café despolpado e a elevação da taxa de secagem, por meio da elevação do fluxo de ar de secagem, para a temperatura de 40°C teve efeito negativo na qualidade sensorial do café despolpado.Palavras-chave: cinética de secagem, processamento, taxa de secagem.
R ESU M OCom base na necessidade de combustíveis que substituam o petróleo, do destaque do pinhão-manso na produção de biodiesel e da necessidade de construção e aperfeiçoamento dos equipamentos utilizados nas fases de colheita e pós-colheita desta cultura objetivou-se, com o presente trabalho, determinar a forma e o tamanho dos frutos de pinhão-manso durante a secagem em cinco condições de ar. Os frutos colhidos manualmente com o teor de água de 4,40 (kg de água por kg de matéria seca) foram submetidos a secagem em estufa com circulação de ar forçada em cinco condições de temperatura, 45, 60, 75, 90 e 105 °C, e umidades relativas de 14,5; 7,4; 3,8; 2,2 e 1,4%, respectivamente, até atingir teor de água de 0,10 ± 0,007 (kg kg -1 de matéria seca). Foram determinados circularidade, esfericidade, volume, área superficial, área projetada e relação superfície-volume, ao longo da secagem. Conclui-se que a redução do teor de água e as condições de secagem alteram a forma e reduzem o tamanho dos frutos de pinhão-manso sendo possível ajustar uma única equação aos dados experimentais do volume e da área superficial dos frutos de pinhão-manso ao longo da secagem, em diversas temperaturas.Palavras-chave: biodiesel, pós-colheita, Jatropha curcas L., teor de água Shape and size of Jatropha fruit during drying under five ambient conditions A B ST R A C T Due to the need for substitution of fuel oil, the importance of Jatropha for biodiesel and the need for construction and improvements of the equipment used during harvest and postharvest of this crop, this research aimed to determine the shape and the size of Jatropha fruit during drying under five ambient conditions. The fruits harvested manually with moisture content of 4.40 kg kg -1 dry matter were dried in an oven with forced air ventilation in five temperature conditions: 45, 60, 75, 90 and 105 °C and relative humidities of 14.5, 7.4, 3.8, 2.2 and 1.4% respectively, until moisture content of 0.10 ± 0.007 (kg kg -1 dry matter). The roundness, sphericity, volume, surface area, projected area and surface-volume ratio were determined during drying. It is concluded that the reduction of the moisture content and the drying conditions alter the shape and reduce the size of the fruit of Jatropha, being possible to adjust a single equation to the experimental data of volume and surface area of the fruit of Jatropha during drying at different temperatures.
ABSTRACT:The final quality of coffees depends on the preservation of the cell membranes of the coffee beans, which can be damaged during the drying. Thus, the aim of this study was to assess the immediate and latent effects of the air temperature and drying rate on the sensorial quality of natural coffees, as well as its relationship with the chemical e physiological characteristics of the coffee beans. Mature fruits of arabica coffee were harvested and sundried to moisture content of approximately 35% (wb) and then moved into a mechanical drier under different conditions of drying. This process involved the combination of three dry bulb temperatures -DBT (35°C, 40°C, and 45°C) and two dew point temperatures -DPT (2.6°C and 16.2°C). Thus, the relative humidity of the air used for drying was a dependent variable of DTB and DPT, and as consequences, different drying rates were achieved for each DBT. The increase in the drying rate for the temperatures 35°C and 40°C has a negative effect on the final quality of natural coffee beans. However, for the temperature of 45°C, the effects of the drying rate on the coffee beans are overlaid by the thermal damages that are caused at this level of heating. Higher sensory scores for coffee are linked to lower values of electrical conductivity and potassium leaching of the exudate of the coffee beans, as well as lower values of fatty acids. It is emphasized that while the temperature of 35º C is recommended for the production of specialty coffees the temperature of 45º C is not.Index terms: Sensory analysis, specialty coffees, relative humidity, dew point temperature. QUALIDADE DO CAFÉ NATURAL SUBMETIDO A DIFERENTES TEMPERATURAS E TAXAS DE SECAGEM RESUMO:A qualidade do café depende da preservação das membranas celulares dos grãos, que podem ser afetadas durante a secagem. Assim, este estudo foi realizado com o objetivo de avaliar os efeitos imediatos e latentes da temperatura do ar e da taxa de secagem na qualidade sensorial do café natural e sua relação com as características químicas e fisiológicas dos grãos. Frutos maduros de café arábica foram colhidos e secos ao sol até atingirem a umidade de aproximadamente 35% (b.u.) e então transferidos para um secador mecânico, onde foram submetidos a diferentes condições de secagem, obtidas pela combinação entre três temperaturas de bulbo seco (TBS), 35°C, 40°C e 45°C e duas temperaturas de ponto de orvalho (TPO), 2,6°Ce16,2°C. Assim, a umidade relativa do ar de secagem constituiu-se como uma variável dependente da TBS e da TPO e como consequência da umidade relativa obtiveram-se diferentes taxas de secagem para cada TBS. A análise dos dados indicou que, o aumento na taxa de secagem para as temperaturas de 35°C e 40°C tem efeito negativo na qualidade do café natural. Já para a temperatura de 45ºC, os efeitos da taxa de secagem na qualidade do café natural são sobrepostos pelos danos térmicos que predominam nessa temperatura. ABSTRACT. The objective of this study was to determine the geometric diameter of volumetric shrinkage in Jatropha seeds subjected to drying under six air conditions and to fit different mathematical models to the experimental values. Seeds with an approximate initial moisture content of 0.61 kgw kgdm -1 (kilogram of water per kilogram of dry matter) were dried in a convection oven at temperatures of 36, 45, 60, 75, 90, and 105°C until they reached a moisture content of 0.11 ± 0.006 kgw kgdm -1. The experimental data were fitted to five mathematical models used to represent volumetric shrinkage in agricultural products. The models were analyzed using the coefficient of determination, chi-square, mean relative error, mean estimated error, and residual distribution. Geometric diameter data were subjected to regression analysis by adopting a 1% level of significance. It was concluded that moisture content and drying temperature influence volumetric shrinkage in Jatropha seeds, a phenomenon satisfactorily described by the Polynomial equation, where the geometric diameter linearly decreased with a reduction of the moisture content, regardless of the drying conditions.Keywords: mathematical models, moisture content, Polynomial model.Determinação da contração volumétrica dos grãos de pinhão-manso durante a secagem RESUMO. Objetivou-se com o presente trabalho determinar o diâmetro geométrico e ajustar diferentes modelos matemáticos aos valores experimentais da contração volumétrica dos grãos de pinhão-manso submetidos à secagem em seis condições de ar. Os grãos com teor de água inicial de 0,61 kga kgms -1 (kg de água por kg de matéria seca), aproximadamente, foram submetidos à secagem em estufa com circulação de ar forçada nas temperaturas de 36, 45, 60, 75, 90 e 105°C, até atingirem o teor de água de 0,11 ± 0,006 kga kgms -1 . Aos dados experimentais foram ajustados cinco modelos matemáticos utilizados para representação da contração volumétrica dos produtos agrícolas. Os modelos foram analisados por meio do coeficiente de determinação, teste de qui-quadrado, do erro médio relativo, do erro médio estimado, e da distribuição de resíduos. Os dados do diâmetro geométrico foram submetidos a análise de regressão adotando-se o nível de 1% de significância. Conclui-se que o teor de água e a temperatura de secagem influenciam na contração volumétrica dos grãos de pinhão-manso, sendo este fenômeno satisfatoriamente descrito pela equação Polinomial e, o diâmetro geométrico reduz linearmente com a redução do teor de água, independentemente da condição de secagem.Palavras-chave: modelos matemáticos, teor de água, modelo Polinomial.
