The Agency for Healthcare Research and Quality (AHRQ), formerly the Agency for Health Care Policy and Research, through its Evidence-based Practice Centers (EPCs), sponsors the development of evidence reports and technology assessments to assist public and private-sector organizations in their efforts to improve the quality of health care in the United States. The reports and assessments provide organizations with comprehensive, science-based information on common, costly medical conditions and new health care technologies. The EPCs systematically review the relevant scientific literature on topics assigned to them by AHRQ and conduct additional analyses when appropriate prior to developing their reports and assessments. To bring the broadest range of experts into the development of evidence reports and health technology assessments, AHRQ encourages the EPCs to form partnerships and enter into collaborations with other medical and research organizations. The EPCs work with these partner organizations to ensure that the evidence reports and technology assessments they produce will become building blocks for health care quality improvement projects throughout the Nation. The reports undergo peer review prior to their release. AHRQ expects that the EPC evidence reports and technology assessments will inform individual health plans, providers, and purchasers as well as the health care system as a whole by providing important information to help improve health care quality. 55Вектор исследований в области разработ-ки новых видов специализированной продук-ции, в том числе биологически активных до-бавок (БАД), является все более востребован-ным, учитывая их значение в коррекции пита-ния и здоровья, а также необходимость разви-тия отечественного рынка [4, 6, 8].Особую актуальность приобретают во-просы профилактики и комплексной диетоте-рапии сердечно-сосудистых заболеваний, за-нимающих «лидирующие» позиции среди распространенных патологий современного человека [2, 3].Имеющиеся теоретические разработки и практический опыт свидетельствуют, что со-вместное применение БАД и медикаментозных средств может быть наиболее эффективным и доступным способом решения рассматривае-мых проблем нутрициологии [1, 5, 7, 9, 10].Цель настоящей работы -разработать но-вую формулу БАД и дать ее характеристику с учетом функциональных свойств.Объектами исследования являлись исход-ное сырье, опытные и промышленные образ-цы специализированного продукта «Атеро-стерол». Разработана новая формула биологически активной добавки (БАД) «Атеростерол» с уче-том фармакологической характеристики ее действующих начал и их синергического влияния на сердечно-сосудистую систему. Подобранные компоненты рецептуры приводят к сниже-нию уровня холестерина в направлении двух разных и сочетаемых механизмов, связанных с его усвоением и адсорбцией. Важная роль отводится микронутриентам с функционнальными антиоксидантными свойствами. Витамин Е блокирует свободно-радикальное окисление ли-попротеидов, которому отводится ведущая роль в патогенезе атеросклероза и связанным с ним сердечно-сосудистых заболеваний. Токоферол предотвращает образование тромбов и способствует их рассасыванию. В целом антиоксидантная система обеспечивает регуляцию обмена липидов на клеточном и системном уровнях путем образования эмульгированных ли-пидных капель (мицелл), необходимых для абсорбции жирорастворимых компонентов, хи-ломикронов с последующей трансформацией в липопротеиды низкой плотности. Фитостеро-лы приводят к реабсорбции эндогенного холестерина, снижению его общего уровня, липо-протеидов низкой и очень низкой плотности, не оказывая влияния на уровень липопротеидов высокой плотности, снижая, тем самым, риск возникновения атеросклероза и ишемической болезни сердца. Имеется клиническое подтверждение функциональных свойств БАД («Ате-ростерол»), направленных на коррекцию обменных нарушений при сердечно-сосудистых за-болеваниях. Представлена технология изготовления специализированного продукта, установ-лены регулируемые технологические параметры производства: приготовление смесей для капсулирования с периодом гомогенизации 3-5 мин и раствора желатина при температуре 85 °С, скорости вращения мешалки 35 об/мин на протяжении 2,5 ч. Проведены испытания ор-ганолептических, физико-химических, микробиологических показателей БАД в процессе производства и хранения. Результаты исследований позволили определить регламентируемые критерии качества, в том числе пищевой ценности, которая характеризуется уровнем содер-жания стеринов, витамина Е и бета-каротина. The goal of the present research is to comprehensively evaluate technological risks of food production through the example of enriched probiotic-containing confectionary.In order to achieve the goal, the following tasks were set: to concretize the "risk" notion related to production, to systemize reasons of technological risks that have negative impact on the quality, to investigate reasons of defects, define their ponderability coefficient using the expert evaluation (through the example of enriched probiotic-containing confectionary), to develop a matrix model of technological risks of defects occurrence while producing food, to determine coefficients of the relevance of reasons that cause defects of enriched probiotic-containing confectionary, to propose a system of measures for decreasing the level of technological risks and preventing defects.
