ResumoAs polpas de frutas congeladas surgem como uma excelente alternativa de garantia de aproveitamento do excedente, de melhores condições de manuseio, de armazenamento, de transporte e acima de tudo a oferta permanente desses frutos para o mercado, no entanto, trabalhos relacionados ao congelamento de polpas de frutas ainda são incipientes. O objetivo do presente trabalho foi avaliar a cinética de congelamento da polpa integral de umbu durante o congelamento convencional a -30°C. Os frutos foram adquiridos no comércio local da cidade de Campina Grande -PB, sendo posteriormente lavados, higienizados e despolpados. As análises realizadas na polpa integral foram: teor de água, atividade de água, pH, sólidos solúveis, cinzas, açúcares totais, redutores e não redutores. A cinética de congelamento foi realizada na temperatura de -30°C, em freezer horizontal, com o auxílio de um termopar localizado no centro da amostra, procederam-se as leituras do tempo e temperatura da polpa, em triplicata, até alcançar a estabilização térmica com o meio. Com os dados de razão de temperatura em função do tempo, foi realizada uma análise de regressão não-linear para a obtenção do valor de difusividade térmica. Com relação às características físico-químicas, a polpa apresentou teor de água de 88,48%, sendo caracterizada como perecível e de alto teor de sólidos solúveis e muito ácida. Durante o congelamento da polpa, na temperatura estudada, a curva apresentou formato sigmoide com as três fases distintas, cujo tempo necessário para a estabilização térmica foi de 4 horas e 30 minutos e o valor do coeficiente de difusividade térmica foi de 7,3871mm 2 s -1 considerado elevado quando comparado com o de outros frutos. AbstractFrozen fruit pulps are an excellent alternative to guarantee surplus utilization, better handling conditions, storage, transportation and above all the permanent supply of these fruits to the market, however, work related to freezing pulps. Fruits are still incipient. The objective of the present work was to evaluate the freezing kinetics of umbu whole pulp during conventional freezing at -30 °C. The fruits were acquired in the local commerce of Campina Grande -PB, and were later washed, sanitized and pulped.
