A flora do bioma Cerrado é constituída por diversas frutíferas, as quais apresentam potencial biotecnológico de grande importância. A aplicação dessas no desenvolvimento de novos produtos contribui para valorização das espécies regionais. Dentre os vegetais característicos da região, destaca-se o baru (Dipteryx alata Vog.), do qual a amêndoa é amplamente utilizada; porém, a polpa rica em fibras, é comumente descartada. Portanto, o objetivo do presente trabalho foi desenvolver macarrões com substituições de 10 e 20% da farinha de trigo pela farinha de polpa de baru. Foram realizadas análises físico-químicas, microbiológicas e sensoriais. Os resultados demonstraram que as massas alimentícias com farinha de polpa de baru podem ser classificadas como alimentos com alto teor de fibra alimentar e ainda, apresentaram menor teor de carboidratos que a amostra controle (100% de farinha de trigo). Os testes sensoriais resultaram em escores médios entre 5 e 6, de uma escala de 9 pontos, para os macarrões. Logo, os resultados apresentados possibilitam a ampliação de aplicação da polpa de baru na indústria alimentícia.
Resumo: Toneladas de resíduos são gerados na indústria de processamento de milho e em geral são destinados somente para alimentação animal, apesar do grande potencial nutricional. O pericarpo do milho, resíduo não comercial, advindo da produção via seca da Farinha de Milho Biju, é um exemplo prático, gerado em grandes quantidades pela indústria processadora de milho e sem destinação específica. Diante do exposto, objetivou-se com este estudo o desenvolvimento de um snack utilizando pericarpo de milho em três formulações, Formulação 1 (F1) utilizou 20% de pericarpo e 80% de grits; Formulação 2 (F2) utilizou 30% de pericarpo e 70% de grits e Formulação 3 (Controle) com 100% do grits de milho. O resíduo do milho e os snacks foram avaliados quanto à sua composição proximal e os snacks foram avaliados quanto à coloração, textura e avaliação sensorial. Observou-se que as amostras de 20% e 30% de substituição apresentaram maior teor de fibra (2,51±0,01; 3,57±0,06 g.100g ), os snacks substituídos tiveram scores de aceitação acima de 6 e coloração entre 79 e 80 ºHue. A substituição parcial de grits por pericarpo de milho em snacks é possível em até 30% e essa substituição aumenta o teor de fibras do snack e suaviza a coloração, o produto tem aceitação com scores acima de seis. The maize pericarp, non-commercial residue, derived from the dry coming production of Biju Maize Flour, is a practical example, generated in large quantities by the maize processing industry and without specific destination. In front of the above, the objective of this study was to develop a snack using corn pericarp in three formulations. Formulation 1 (F1) used 20% of pericarp and 80% of grits; Formulation 2 (F2) used 30% of pericarp and 70% of grits and Formulation 3 (Control) with 100% corn grits. Corn residue and snacks were evaluated for their proximal composition and the snacks were evaluated for color, texture and sensory evaluation. It was observed allow 20% and 30% that substitution samples presented higher fiber content (2.51 ± 0.01, 3.57 ± 0.06 g.100g-1 respectively) than control sample (0.27 ± 0.01 g.100g-1), the substituted snacks had acceptance scores above 6 and coloration between 79 and 80 ºHue. The partial replacement of grits by corn pericarp in snacks is possible up to 30% and this substitution increases the fiber content of the snack and softens the coloring, the product has acceptance with scores above six.
