The objective of this study was to assess the effect of the addition of cashew nuts meal (0, 5, 10, 15, 20, and 25%) to laying hen diets on egg quality and yolk composition. The variables studied were: egg weight, specific gravity, Haugh Units, percentages of shell, albumen, and yolk, moisture, total solids, total lipids, fatty acids profile, and yolk cholesterol. The addition of up to 25% of cashew nuts meal to hen diets did not affect egg quality and freshness, moisture and total solids content. However, an increase in total lipid content and a decrease in yolk pigmentation was observed. Oleic acid level increased in the yolk, whereas palmitic, stearic, and linoleic acid levels decreased. The addition of cashew nuts meal increased the monounsaturated/saturated fatty acid ratio in the yolk and reduced the cholesterol content. Therefore, the use of cashew nuts meal in laying hen diets favorably modifies the fatty acid composition of egg yolk and contributes to a better acceptance of this food by consumers since it also reduces yolk cholesterol levels.
A carne de coelho representa 1,2% do total de carne produzida na União Europeia, sendo que as regiões produtoras mais importantes são Itália, Espanha e França (FAO STAT, 2004). É amplamente difundida em quase toda a Europa, bem como em outros países como Ucrânia, China e Rússia, onde são consumidas mais de 100.000 toneladas de carne de coelho por ano (CASTELLINI et al., 1998). Quanto ao Brasil, em 2006, segundo dados do IBGE (2007), a produção de carne de coelho representava 0,02% do total de carne produzida. Segundo esta mesma fonte, os estados com maior plantel de coelhos são Rio Grande do Sul (34,00%), São Paulo (20,05%), Santa Catarina (11,55%), Paraná (11,19%) e Bahia (7,55%).A carne de coelho é considerada mais magra e mais saudável quando comparada às carnes bovina, ovina e suína.Além disso, é altamente digerível, saborosa, baixa em calorias, gorduras e colesterol, sendo frequentemente recomendada pelos nutricionistas em regiões de maior produção dessa carne em detrimento das de ruminantes (HERNÁNDEZ et al., 2000). Contudo, esse tipo de alimento é considerado um produto de consumo limitado. The experiment utilized 60 rabbits fed diets containing five levels of CM (0.00, 6.25, 12.50, 18.75, and 25.00%) and 12 animals per treatment. Increasing levels of CM in the diet did not affect (p > 0.05) meat centesimal composition. The levels of palmitoleic, stearic, and linolenic acids in the meat were linearly affected by dietary CM levels. When compared to the levels of fatty acids in the meat from the 0.00% CM diet, the palmitic acid was lower (p < 0.05) in the meat from all diets containing CM, the myristic and stearic acids were higher (p < 0.05), and the palmitoleic acid was lower (p < 0.05) in the meat from the diet containing 25.00% CM. The Linolenic acid level was lower (p < 0.05) in meats from diets containing either 18.75 or 25.00% CM. The P/S relation in the meat was not affected (p > 0.05) by the levels of CM in the diets. ResumoMortadelas contendo 0,1 e 0,2% de extrato da casca da manga (ECM) em substituição ao aditivo antioxidante butilato de hidroxitolueno (BHT) foram elaboradas e armazenadas sob refrigeração (2 °C) por 21 dias. Nos dias 0, 7, 14 e 21 de estocagem, foram realizadas determinações de pH, TBARS e coloração, com o objetivo de avaliar a estabilidade das mortadelas durante o armazenamento. O valor de pH diminuiu a partir de sete dias de armazenamento, quando se adicionou 0,2% de extrato da casca da manga. No que se refere aos valores de TBARS, a adição de 0,1% de ECM produziu mortadela com maior valor de TBARS em relação àquelas contendo 0,2% ECM, no 21º dia de estocagem. O produto contendo BHT na formulação apresentou maior valor de L* e menores valores de a*. Já o componente de cor b* teve maiores valores para as amostras contendo BHT, com 0, 7 e 21 dias. Durante o armazenamento, houve redução linear do parâmetro de cor a* e o parâmetro de cor b* teve um valor máximo com 11,25 dias de estocagem para o antioxidante ECM com 0,1% de concentração. The variables pH, TBARS and colour of the mortadella samples were measured after 0, 7, 14 and 21 days with the objective of assessing the stability of the mortadella during refrigerated storage. The pH value decreased in the products containing 0.2% mango peel extract after 7 days of storage. With respect to the TBARS values, the addition of 0.1% mango peel extract produced mortadella with higher TBARS values as compared to those containing 0.2% of mango peel extract after 21 days of storage. The mortadella containing BHT in its formulation showed higher values for L* and lower values for a*, whereas the b* component was higher for samples containing BHT after 0, 7 and 21 days of storage. There was a linear decrease in the values for the a* parameter during storage and the b* parameter showed a maximum value after 11.25 days of storage for the mortadella containing 0.1% mango peel extract.
