Este trabalho apresentou como objetivo avaliar a aceitação sensorial de sorvete de abacate isento da proteína animal, usando como opção a bebida vegetal à base de coco e bebida vegetal a base de soja, comparando-as com a aceitação do sorvete à base de leite de vaca e também avaliar a intenção de compra dos provadores das amostras elaboradas. A fruta abacate foi escolhida como opção de sabor por ser um alimento rico em gorduras benéficas a saúde, contribuindo para o incentivo de hábitos saudáveis. Foram elaboradas três amostras com produtos comerciais diferentes para a receita, uma contendo leite de vaca, outra com leite de soja, e outra com leite de coco. A avaliação foi realizada através de aceitação sensorial, utilizando escala hedônica de 9 pontos, além do teste de intenção de compra através da escala de 5 pontos. Participaram da avaliação 62 provadores não treinados. Os dados coletados foram submetidos aos cálculos de média, desvio-padrão e Análise de Variância (Anova) e o teste de Tukey (p ≤ 0,05). Também foi realizada a análise estatística no programa Statistica 7.0. O sorvete de abacate à base de leite de soja obteve aceitação sensorial parecida com o sorvete de leite de vaca em todos os atributos analisados (cor, aroma, sabor, textura, aceitação global), quando comparado ao sorvete de abacate à base de leite de coco, teve em alguns atributos notas menores. Em contrapartida o sorvete elaborado à base de leite de coco obteve uma aceitação boa comparado às amostras de sorvete de abacate com leite de vaca e o sorvete de abacate com leite de soja, porém necessita de modificação em sua formulação, para melhorar ainda mais aceitação sensorial.Palavras-chave: sorvete, proteína animal, bebida vegetal, análise sensorial.
The purpose of this study was to identify the relationship of nutritional status to body image and to cardiovascular risk of adolescents in public and private schools. This was a descriptive, cross-sectional and quantitative study performed in two schools from the State of São Paulo, involving 546 teenagers from both sexes. The Thompson & Gray device was used to identify body image; anthropometric data such as weight, height and the waist circumference were assessed. Statistical analysis used the following tests: Student t, Fisher, chi-squared and multiple correspondence analysis between variables collected from adolescents in both schools. In both schools, female gender, eutrophic nutritional status, absence of cardiovascular risk, and dissatisfaction with body image for overweight were prevalent. When comparing schools, the public schools showed more students with underweight and obese body mass indices (BMI), higher cardiovascular risk index and body image dissatisfaction related to thinness. On the other hand, the private school presented more students with a BMI of overweight, and dissatisfaction due to being overweight. The conclusion is that regardless of the nutritional status of adolescents, there is body image dissatisfaction in both schools, and high cardiovascular risk is predominant in the public school in overweight and obese students and may lead to cardiovascular diseases in adulthood.
