Aaron Antonovsky propuso una nueva visión sobre la salud la denominó Sentido de Coherencia, propuso una escala de 29 preguntas para medirlo. En Ecuador no se han realizado estudios sobre la dimensionalidad y estructura factorial de esta escala por lo que el objetivo del presente estudio fue analizar su estructura factorial y dimensionalidad. Se realizó un estudio transversal con 415 estudiantes de pregrado. Se tomaron medidas generales de edad, sexo, nivel de estudios y se aplicó la encuesta SOC-29. Participaron 315 (75%) mujeres y 100 (24%) hombres. La edad mínima fue 17 años y a máxima 36 con una media 20.7. El valor promedio (ds) del SOC total fue de 130.5 (16,1), Se realizó el análisis factorial y se alcanzó la máxima convergencia con 8 iteraciones, el número de factores, dimensiones, optimo consistiría en 4 a 5, estos guardan relación con la propuesta de Antonovsky y, por lo tanto, puede ser aplicada en población de jóvenes en Ecuador.
Esta investigación se enfocó en la recuperación de las macromoléculas de almidón procedente de la cáscara de papa súper chola Solanum tuberosum, con la finalidad de aprovechar este residuo y minimizar el impacto ambiental en el ecosistema, para lo cual, se obtuvo el polímero natural separando de la materia prima, por decantación natural y secado al ambiente, para lo cual, se utilizó el diseño factorial 2k, con 4 tratamientos y 4 repeticiones cada uno, datos que fueron analizados estadísticamente con el test Anova comprobando que no existe diferencias significativas entre los tratamientos y aceptando la hipótesis nula planteada en el estudio, a continuación se realizó una caracterización fisicoquímica y microbiológica del almidón, evidenciando el cumplimiento de los estándares de calidad para el uso en la producción de plásticos biodegradables e industrias alimenticias, finalmente se determinó que el tratamiento 3 fue el mejor con el 10 % de rendimiento.
Through this document, it was possible to analyze the main characteristics of the volume of scientific production regarding the study of the variables Food Processing, Innovation and Healthy Eating. A bibliometric analysis was proposed to analyze details such as Year of Publication, Country of Origin of the publication, Area of Knowledge in which the published research is carried out and the Type of Publication most frequently used by the authors of each document published in high-impact journals indexed in the Scopus database during the period between 2017 and 2022. Among the main findings, it was possible to determine that, for the execution of the different research methodologies, the report of 80 scientific documents related to the study of innovative trends in food processing within the tenure to a healthier and more sustainable diet was achieved. The maximum number of publications made in a year was 27 papers submitted in 2022. The country of origin of the institutions that reported the highest number of records in Scopus, was China with 15 documents. The area of knowledge with the greatest influence at the time of executing the research projects that resulted in scientific publications was Agriculture and Biological Sciences with 51 documents. Finally, the type of publication most frequently used to publicize findings from the analysis of the aforementioned variables was the Article, which represented 46% of the total scientific production.
