Pilzmyzel 01-Untersuchung Die Ole der industriell gewonnenen Myzelien von Morchella escnlcnta Pers., Cuprinus comatus Fr. und Mitrophora hibrida werden anhand der Kennzahleu, der Pettsaureeusammensetzung (gaschromatographisch) sowie nnch dem Gehdlt an biologisch aktiven Stoffen (Tocopherol, Phosphatide) gekennzeichnet. Die Ole zahlen zur Grupyc der halbtrocknenden 61e. Sie enthalten 6 gesiittigte und 4 ungesattigte Fettsauren, einen hohen Gehalt an Tocopherol und besitzen einc gute Stabilitat.
Untersuchungen über den Charakter und den Grad von Oxydationsveränderungen bei der Gewinnung und Raffination des Sonnenblumenöls nach den in Bulgarien üblichen technologischen Verfahren und über Veränderung der wichtigsten biologisch aktiven Stoffe — Phosphatide und Tocopherole — ergaben, daß mit wesentlichen Oxydationsvorgängen zu rechnen ist, die bei der Gewinnung beim Mahlen und im Kontakt des heißen Preßöls mit der Luft ablaufen wie auch bei der Raffination und der Behandlung in offenen Pressen. Es werden Vorschläge für eine Senkung des Grades der Oxydationsvorgänge gemacht.
