El chontaduro es una de las frutas exóticas más importantes para Colombia debido su considerable aporte en nutrientes y a que posee 8822 hectáreas sembradas en los departamentos de Valle del Cauca, Cauca y Putumayo. Se evaluaron los cambios ocurridos en dos variedades del fruto de chontaduro (roja y amarilla), durante el periodo poscosecha, bajo condiciones ambientales provenientes del Municipio de El Tambo (Cauca) para brindar una guía de compra y venta que ayude en su comercialización. Introduction. The production and commercialization of avocado are growing, but there are postharvest handling inconsistencies that lead to poor product quality. El pimiento (Capsicum annuum) tiene gran potencial agroindustrial debido a sus propiedades nutricionales y composicionales pero es susceptible al deterioro por sus condiciones de manipulación que ocasionan pérdidas de calidad del producto y disminución de su valor comercial, razón por la cual se evaluó el efecto de un recubrimiento de almidón de yuca (Manihot esculenta Crantz) modificado y aceite esencial de tomillo (Thymus vulgaris) sobre la pérdida de peso, firmeza, tasa de respiración, color de la epidermis y crecimiento bacteriano bajo condiciones ambientales de Popayán (Cauca, Colombia) a 1 880 msnm, temperatura media de 18 °C y humedad relativa de 77.75%. Se aplicó un diseño en bloques completamente al azar con cinco tratamientos y tres réplicas: T1: muestra testigo, T2: 4% almidón y sin aceite, T3= 4% almidón y 500 ppm de aceite, T4= 4% almidón y 1 000 ppm de aceite y T5= 4% almidón y 2 000 ppm aceite, agregando además 2% (v/v) de glicerina y 0.02% de Tween 80. Los resultados se sometieron a un análisis de varianza seguido de una prueba de Tuckey (α= 0.05). La aplicación del recubrimiento resultó en cambios significativos en las propiedades de barrera del producto en menores pérdidas de peso y de firmeza y así como disminución del deterioro. Los tratamientos T3, T4 y T5 fueron los más eficaces en la determinación de las variables evaluadas.
