Red cell concentrate, serum, albumin, and immunoglobulin fractions were separated from porcine blood collected at a HACCP-implemented (Hazard Analysis and Critical Control Points system-implemented) slaughterhouse in Hermosillo, México. Functional and microbiological properties were examined. Red cell concentrate and serum isolates were high in protein (92 and 85%, respectively) but limited in methionine and isoleucine. Porcine serum and albumin fractions showed emulsifying properties comparable to bovine sources. Porcine immunoglobulins were 96% soluble. All fractions were of excellent microbiological quality. These results indicate the optimal sanitary conditions during slaughter and processing procedures, as well as the potential functionality of porcine protein fractions.
Los alimentos a los que se les añaden probióticos (bacterias benéficas) constituyen uno de los sectores más importantes de los alimentos funcionales. Los productos lácteos son los principales vehículos para estas bacterias que producen un efecto benéfico a la salud, cuando se consumen vivas y en cantidades suficientes para adherirse al colon. Sin embargo, cada día crece el interés por desarrollar alimentos no lácteos como vehículo para probióticos. Los productos de origen vegetal son una buena alternativa para estas innovaciones. Tienen la ventaja de que son muy aceptados y accesibles para la población. Adicionalmente, representan una alternativa de consumo para poblaciones con dietas restringidas. Sin embargo, la incorporación de probióticos a estos productos requiere considerar varios criterios y vencer retos tecnológicos con la finalidad de conservarlos funcionalmente activos.
Lactose-free dairy products are a valued consumer option for lactose intolerant individuals. Short-term ultra-high pasteurization (UHT) allows the preparation of sterile milk products. Manufactures define the useful shelf life of UHT milk as 120 days. This study analyses lactose-free milk with low-fat content over 120 days of shelf storage. Milk composition, microbial presence, structure (micellar size and zeta potential), color, pH, and protein hydrolysis were examined. At 120 days of storage the pH decrease, change in particle size distribution, and significant browning of the milk were detected indicating meaningful changes in the milk structure. The changes occurring in the lactose-free milk are related to the introduction of a large number of reducing sugars as a result of delactosylation of the milk. Studied milk had no microbial contamination nor showed the presence of by-products contamination such as proteases (minimal hydrolysis after long time storage).
Trans fatty acids (TFA) are products of partial hydrogenation industrial process. Consequently, the main source of TFA in the diet has been margarine, sweet, cookies, snacks and fast food. It has been suggested that children development may be retarded due to TFA impairment of the essential fatty acid metabolism. Some evidences also suggests a positive correlation between TFA intake and the risk of cardiovascular disease (CVD). Given the high prevalence of CVD in Mexico, it is important to promote that good nutrition begins in infancy. Due to CVD, it is believed that TFA consumption in developed countries has decreased. In Mexico, there are no current data on the amount of TFA intake in children and teenagers. But it is believed that the increase in snacks consumption is a source of TFA high levels in these groups. Hence, there is a need to studies in Mexico. ResumenLos ácidos grasos trans (AGT) se producen industrialmente durante la hidrogenación de aceites. Por ello se encuentran en margarinas, golosinas, botanas y en la comida rápida. Existe evidencia de que los AGT compiten con el metabolismo de los ácidos grasos esenciales y de que inhiben el desarrollo infantil. También se han relacionado con el aumento del riesgo a enfermedades cardiovasculares, las cuales son algunas de las principales causas de morbilidad y mortalidad en México. Una dieta adecuada desde la infancia, puede prevenir las enfermedades coronarias, por lo que el consumo de AGT en países desarrollados ha disminuido. México no cuenta con información suficiente para determinar la cantidad de AGT que consumen los niños y adolescentes, pero el aumento en la ingesta de botanas y golosinas indica que el aporte de AGT puede ser alto. Por ello es importante realizar estos estudios en México. INTRODUCCIÓNEn México la obesidad en niños y adolescentes es un problema de salud pública que esta creciendo, como lo indican los estudios nacionales realizados en los años 1999 y 2006. El aumento en la prevalencia combinada de sobrepeso y obesidad para niños en edad escolar (5 a 11 años) fue de 39,7 % en esos 7 años. El incremento más alarmante fue del 77 % en la prevalencia de obesidad en niños del sexo masculino. En el caso de los adolescentes los datos del 2006 indican que 1 de cada 3 tiene sobrepeso u obesidad, observándose un incremento del 33,3 % en la prevalencia de obesidad (Olaiz-Fernández et al., 2006;Rivera et al., 2001). Las estadísticas señalan la urgencia de aplicar medidas conducentes a la prevención de esta enfermedad.La obesidad es un padecimiento crónico, complejo y multifactorial que se establece por un desequilibrio entre la ingesta y el gasto energético (Barnaby y Foz, 2002). En la etiopatogenia de esta enfermedad están implicados factores genéticos, metabólicos, psicosociales y ambientales.
