ResumoO objetivo deste trabalho foi avaliar a adequação de medidas instrumentais de textura como índice de qualidade de raízes da mandioca de mesa e sua correlação com o tempo de cozimento. Quinze raízes de mandioca foram colhidas no 11.º mês de cultivo na região noroeste fluminense. Pedaços de raízes foram cozidos em água, sendo o tempo de cozimento determinado, em triplicata, quando se observou pouca resistência à penetração do garfo. A resistência ao corte foi realizada nas polpas cruas e cozidas, em cinco a nove repetições, operando o texturômetro TA. XT Plus Texture Analyser com probe Warner-Bratzler Blade HDP/BSW, velocidades de pré-teste de 0,2 cm/s, de pós-teste e de teste de 0,5 cm/s, e distância de 5 cm. Os dados foram analisados por ANOVA e teste de média Tukey (tempo de cozimento); GLM, LSMEANS e PDIFF (resistência ao corte) e análise de correlação de Pearson (p ≤ 0,05). A variedade Viçosa Martinha destacou-se por apresentar o menor tempo de cozimento (18 minutos) e menores valores de resistência ao corte das polpas crua (10,6 N) e cozida (0,7 N). Com exceção das variedades Aipim Pretinho, IAC Espeto e IAC 13, todas as demais podem ser consideradas adequadas como mandiocas de mesa por apresentarem tempos de cozimento iguais ou inferiores a 30 minutos. Verificou-se correlação significativa entre a resistência ao corte da polpa cozida e o tempo de cozimento (0,62), porém moderada, em razão dos altos valores de coeficiente de variação observados para as medidas de textura, evidenciando a heterogeneidade das raízes. Portanto, a determinação do tempo de cozimento, nas condições deste experimento, é mais adequada como índice da qualidade de raízes de mandioca associado à textura. SummaryThe objective of this work was to evaluate the adequacy of instrumental texture analyses as a quality index for cassava roots for direct consumption, and the correlation with cooking time. Fifteen cassava roots were harvested in the eleventh month of growth in the northwest of the State of Rio de Janeiro. Pieces of roots were boiled in water and the cooking time determined in triplicate, to the point where there was little resistance to penetration by a fork. The shear strength was determined in the raw and cooked pulps with five to nine replicates, using the texturometer TA-XT Plus Texture Analyser with the Warner-Bratzler Blade HDP / BSW probe, a pre-test speed of 0.2 cm/s, post-test and test speed of 0.5 cm/s and distance of 5 cm. The data were analyzed by ANOVA and Tukey (cooking time), GLM, LSMEANS and PDIFF (shear resistance) and Pearson's correlation analysis (p ≤ 0.05). The variety Viçosa Martinha stood out due to its shorter cooking time (18 minutes) and lower shear resistance values for the raw (10.6 N) and cooked (0.7 N) pulps. Os pomares de abacaxizeiro no Brasil sofrem constantemente com as perdas de plantas e frutos ocasionadas pela fusariose, pois as cultivares plantadas atualmente são suscetíveis a esta doença. Novas cultivares mais resistentes têm surgido, no entanto não há registros de que já tenham sido avaliadas sensorialmente por consumidores. O objetivo deste trabalho foi avaliar a aceitação sensorial de duas novas cultivares resistentes à fusariose, Vitória e EC-93, comparando-as com outras já estabelecidas no mercado consumidor de frutas in natura, Pérola e Gold. A aceitação dos frutos foi avaliada por 52 consumidores com relação a aroma, sabor, impressão global, textura, aparência da fatia, aparência do fruto inteiro, utilizando-se da escala hedônica estruturada de nove pontos, acidez e doçura ideais, com escala do ideal, e intenção de compra, com escala estruturada de 5 pontos. Sólidos solúveis totais, acidez titulável e ratio foram avaliados. A cultivar Gold obteve maiores médias de aceitação para a maior parte dos parâmetros avaliados, enquanto a cv EC-93, as menores. Exceto no atributo aparência da fatia, a cv Vitória não diferiu das cultivares mais aceitas nos parâmetros avaliados. Os frutos diferiram significativamente quanto a SST, entre 12,0 e 16,0°Brix, AT entre 0,52 e 0,81% de ácido cítrico e ratio entre 19,12 e 28,46. Dentre as cultivares resistentes à fusariose, os resultados sugerem baixo potencial de mercado para a cv EC-93 e bom para a cv Vitória.
The effects of three cassava cultivars produced in Brazil were assessed (IAC Espeto, IAC 14 and IAC Caapora) in order to obtain chips by precooking and hot air-microwave drying (70°C, 95 W). The difference in the composition of cultivars has not influenced the drying of cassava slices. The drying kinetics presented a constant drying rate period followed by a decreasing drying rate with effective diffusion coefficient of 2.8-3.0 9 10 À10 m 2 s À1 . The hedonic means of all attributes ranged from 'neither like nor dislike' to 'like moderately'. Therefore, the choice of the more suitable cultivar can be based on plant productivity and product yield. The IAC 14 cultivar resulted in the highest root production per plant, product mass per roots and chips yield.
This study evaluated the sensory acceptance of cooked hams elaborated with potassium chloride (KCl) and/or pectin. Three formulations were produced: a control (formulation 1); one with 100% substitution of the NaCl by KCl, decrease in the amount of polyphosphate and the addition of pectin (formulation 2); and the third with partial substitution of the NaCl by KCl, the absence of polyphosphate and the addition of pectin (formulation 3). The consumers evaluated sensory acceptance with respect to flavor, odor, texture and appearance (mixed 9‐point structured hedonic scale); intensity of the salty taste (9‐point just right scale); and two evaluations for purchase intent (5‐point structured verbal scale). Formulation 1 scored the highest means for acceptance of appearance and the respective purchase intent. On the other hand, formulation 2 scored the highest means for acceptance and purchase intent for the other attributes and the intensity of salty taste nearest to the just right. PRACTICAL APPLICATIONS This manuscript evaluated the sensory acceptance of cooked hams elaborated with KCl and/or pectin. The data represent alternatives of inclusion of cooked ham in the high blood pressure patients' diet. Then, the experimental data reported in this paper may be important for the scientific community of the food science.

RESUMO -Este trabalho aborda a obtenção de um co-produto de abacaxi por meio do estudo da secagem da casca do fruto para obtenção de matéria prima para produção de chá. Os objetivos foram avaliar os efeitos da temperatura e velocidade do ar na secagem da casca de abacaxi em secador de leito fluidizado e na aceitação sensorial do chá. O processo de secagem seguiu um planejamento experimental 2² com três repetições no ponto central, cujas variáveis independentes foram temperatura (70 a 90 ºC) e velocidade do ar (8 a 10 m/s). O chá foi preparado por infusão a 100 ºC, sendo avaliado por teste de aceitação por 63 consumidores quanto à impressão global, cor, aroma e sabor, utilizando a escala hedônica estruturada de nove pontos. A temperatura do ar apresentou efeito negativo significativo sobre a umidade final do produto seco, ao nível de 95% de confiança, que atingiu teores entre 3% e 10% após 90 minutos de secagem. Nenhum dos atributos sensoriais avaliados sofreu efeito significativo pelas variáveis independentes, a 95% de confiança. Contudo, os resultados da aceitação sensorial indicaram que todas as formulações de chá elaboradas foram bem apreciadas pelos consumidores, apresentando médias hedônicas próximas a "gostei moderadamente" para impressão global, cor e aroma e acima de "gostei ligeiramente" para o sabor.
Selenium is an element which participates in antioxidant enzymes. A medium and long term lack of such element is associated, mainly, with heart disease, joint and bone structure problems and thyroid activity. Selenium contents in blood reflect its ingestion and food content variation. It depends on soil characteristics, such as pH and selenium presence. There are few studies concerning selenium levels in food and blood in Brazil. Therefore, the objective of this research was to determine selenium content in a blood donor group in Rio de Janeiro state, conducted from December 2008 to March 2009. From the donated blood to Regional Blood Center of Campos dos Goytacazes, 4.0 mL were submitted to selenium analysis through atomic absorption spectrometry of hydride generation and organic matter oxidation wet basis with nitric and perchloric acid. Selenium content varied from 75 ± 16 ng·g<sup>-1</sup> for females and 70 ± 21 ng·g<sup>-1</sup> for males. There was no significant difference among selenium contents in blood from donors of different gender, age and residence. Seventy four percent of donors had selenium content in blood below 70 ng·mL<sup>-1</sup>, the lowest level for maximum selenoproteins production, according to the Nutritional Prevention Cancer
