Ina sua is a traditional fermented salted fish product originating from Central Mollucas (Teon, Nila, Serua islands), which is processed by fermentation at room temperature during a certain period. There is little or no research on the characteristics of microbial and chemical aspects of this process. Therefore the current research was performed in a laboratory in order to analyse the microbial and chemical characteristics of this product collected from traditional fishermen. The results showed that the composition of bacteria consisted of Bacillus sp.(59.6%), Propionibacterium sp. (17.3%), Leuconostoc sp. (13.5%), and Lactobacillus sp. (9.6%), while the chemicals included soluble protein, peroxide value, and total value acid increased during storage for 12 weeks at room temperature, while pH value of the product varied between 5.58 and 5.93. Ina sua adalah produk fermentasi ikan asin tradisional yang berasal dari Maluku Tengah (Pulau Teon, Nila, dan Serua) dimana dalam proses fermentasi dilakukan dalam suhu ruang selama waktu tertentu. Penelitian mengenai karakteristik mikrobiologis dan biokimiawi produk ini belum banyak dilakukan. Oleh karena itu dilakukan pengujian untuk menganalisis karakteristik mikrobiologi dan biokimia terhadap produk ini yang diperoleh dari nelayan tradisional. Hasil penelitian menunjukkan komposisi bakteri yang diperoleh yaitu Bacillus sp. (59,6%), Propionibacterium sp. (17,3%), Leuconostoc sp. (13,5%), dan Lactobacillus sp. (9,60%), sementara untuk nilai karakteristik kimia protein terlarut, bilangan peroksida dan nilai total asam mengalami peningkatan selama 12 minggu penyimpanan pada suhu ruang, sedangkan nilai pH mengalami perubahan dari 5,58 menjadi 5,93.
Fish bones as industrial waste, restaurants and households are generally underutilized, whereas the calcium and mineral content is quite good. Research on the utilization of pelagic and demersal fish bone waste has been done and aims to produce high calcium fish bone meal and to know the quality characteristics of fish bone meal produced by boiling frequency as treatment. The pelagic fish that used are tuna (Euthynus affinis), while demersal fish is represented by snapper (Lutjanus sp.). Deproteinase method which is used in fish calcium extraction. The parameters which measured include calcium, phosphorus, water, ash, protein, fat, white, and yield, and organoleptic tests. The results show that fish bone meal of snapper fish is better than tuna fish bone meal because it contains higher calcium and phosphorus ie 29.42% and 13.36%, with water content of 8.40%, protein 0.96% bb, and fat 4.45% bb. For physical parameter that is yield, fish bone meal of snapper is still higher that is each 28%. So that, the value of organoleptic fish bone meal of snapper that is 7.85 is still higher than fish bone meal which is 6.71. Keywords : pelagic, demersal, fish bone, calcium, rendemen.
Perairan di desa Namar memiliki potensi yang kaya akan sumber daya berbagai jenis ikan pelagis dan demersal seperti ikan kakap, kerapu, tongkol, layang dan teri juga hasil laut lainnya yaitu abalon, teripang, kerang, kepiting. Pada saat musim tertentu nelayan yang memiliki bagan akan mendapatkan hasil yang cukup melimpah. Selain dijual ke pasar sebagian hasil yang tidak laku ataupun tidak bisa ditampung karena keterbatasan peralatan untuk mengawetkan ikan. Kurangnya pengetahuan dan ketrampilan bagi nelayan khususnya ibu-ibu mengakibatkan potensi yang melimpah ini belum bisa dimanfaatkan dengan tepat untuk meningkatkan perekonomian keluarga. Untuk menjawab permasalahan-permasalahan tersebut maka tujuan yang ingin dicapai melalui kegiatan IbM yakni pelatihan diversifikasi olahan ikan tongkol untuk dibuat menjadi nugget ikan, abon ikan, dan pizza ikan tongkol. Metode pelaksanaan kegiatan antara lain penyuluhan, pelatihan dan demonstrasi, serta evaluasi kegiatan. Hasil kegiatan pengabdian menunjukkan peningkatan pengetahuan dan keterampilan sebagian besar peserta pelatihan di atas 60 %.
Scad mackerel (Decapterus ruselli) possessed potentiality as a valuable fisheries commodity in Maluku, mainly due to its abundant stock. As commonly found in fisheries products, the scad mackerel is also perishable; besides, the fish has a small quantity of flesh and undesirable taste, which make it receiving rejections from local communities. In light of this constraint, preservation of fish using smoking method is acceptable, enabling to combine heat and chemical substances as product of burning. The experiment aimed at investigating the quality of smoked scad mackerel treated with different fuels. Our experiment was arranged according to completely randomized design with two treatments, i.e. fish forms (whole (A); butterfly (B)) and fuels (coconut shell (1); sawdust (2); coco fiber (3)). The smoked fish was then evaluated for chemical composition (mositure, ash, protein) and preference (appearance, odor, form, texture). The results showed that the highest score for each parameter was achieved in different treatments as follows: appearance of 7,95 (A1), odor of 8,00 (A1), form of 7,0 B3 (7,9), texture of 7,95 (B3), moisture content of 66,68 (B1), ash content of 3,98 (A3) and protein content of 49,89 (B3).
Desa Yamtel di Maluku Tenggara dikenal memiliki potensi sumberdaya hasil laut yang cukup melimpah, baik itu perikanan laut maupun pesisir pantai. Masyarakat Yamtel umumnya bekerja di sektor perikanan tangkap seperti nelayan yang menghasilkan produk perikanan seperti ikan tongkol, telur ikan, udang, kepiting, dan cumi-cumi. Saat musim panen tiba, hasil tangkapan melimpah sehingga harga ikan cenderung mengalami penurunan akibatnya dijual dengan harga murah. Selain itu, karena kurangnya pengetahuan masyarakat dalam hal pengolahan, produk umumnya diolah dengan cara tradisional seperti digoreng, direbus atau dibuang begitu saja untuk dijadikan pakan ternak. Padahal diversifikasi dan inovasi produk baru dapat meningkatkan nilai jualnya. Oleh karena itu penyuluhan dan pelatihan diversifikasi berbagai produk hasil laut sangat diperlukan untuk meningkatkan pengetahuan masyarakat khususnya ibu-ibu rumah tangga dan para istri nelayan. Metode pelatihan terdiri dari penyuluhan, pelatihan dan pendampingan. Tahapan kegiatan yang telah dilakukan pada kegiatan ini antara lain pendekatan khalayak sasaran, demonstrasi (penyuluhan dan pelatihan) serta evaluasi kegiatan. Pelatihan diversifikasi meliputi pengolahan ikan tongkol menjadi berbagai macam produk seperti kornet roll ikan dan nugget ikan. Hasil kegiatan menunjukkan daya minat mitra dalam pembuatan berbagai macam produk dari ikan sebesar 80% dan mitra memiliki keterampilan dalam mengolah hasil perikanan. Saran dalam kegiatan ini dapat dilanjutkan dengan pelatihan pengemasan produk dan pemasaran sehingga diharapkan dapat memberikan peluang usaha bagi mitra.
