RESUMEN Desgomado de aceite de sojaEl proceso de desgomado fue llevado a cabo en una fábrica de aceite crudo de soja en el departamento de aceites y grasas. Treinta y dos muestras fueron tratadas con concentraciones diferentes de ácido fosfórico y/o agua a temperaturas diferentes y con tiempo diferente de agitación. Se encontró que el desgomado de 100 g de aceite con solo 3,5% de agua y con 0,34 g de ácido fosfórico en 5,8% de agua a 75°C, con tiempo de agitación de 30 minutos, dio mejores resultados comparado con otras condiciones.Se realizó el análisis de varianza de experiencias factoriales para ilustrar el diferente efecto y la interacción entre el tiempo de agitación y la temperatura, durante el proceso de desgomado.do. Thirty two samples were treated with different concentrations of phosphoric acid and / or water at different temperatures and with different time of stirring. It was found that degumming 100 gm of oil with 3,5% water only and with 0,34 gm phosphoric acid in 5,8% water, at 75°C with stirring time of 30 minutes gave better results compared with other conditions. The analysis of variance of factorial experiments for illustrating the different effect and interaction between time of stirring and temperature during degumming process was recorded. RESUMEN Glicerolisis de aceite de girasol catalizada por lipasa para producir glicéridos parciales.Se prepararon glicéridos parciales mediante glicerolisis de aceite de girasol en presencia de lipasa como catalizador. Seis lipasas de orí-genes diferentes se utilizaron y compararon en función de su actividad catalítica. Estas incluyeron lipasa de Chromobacterium, lipasa pancreática, lipasa de Rhizopus arrhizus, lipasa liofilizada (lipasa vegetal) además de dos preparaciones de lipasa derivadas de Rhizopus ¡aponicus: lilipase A-10 y lilipase B-2.Se encontró que la lipasa de Chromobacterium fue la más activa como catalizador en la glicerolisis mientras que la lipasa liofilizada, preparación vegetal a partir de germen de trigo, fue la menos activa.Los resultados mostraron que los tipos de lipasa afectan también a la polaridad de los productos y por tanto a los rendimientos en su aplicación como emulsificantes alimentarios. Los productos menos polares pueden obtenerse usando lipasa de Chromobacterium mientras que los más polares se obtienen usando las preparaciones de lipasa de hongo «Lilipase A-10». La polaridad del producto está también influenciada por la temperatura del proceso aunque la forma de su efecto es distinta para las diferentes lipasas. SUMMARY Lipase -Catalyzed glycerolysis of sunflower oil to produce partial glycerides.Partial glycerides were prepared by glycerolysis of sunflower oil in presence of lipase enzyme as catalyst. Six lipases of different origins were used and compared for their catalytic activity. These include Chromobacterium Wpase, pancreatic lipase, Rhizopus arrhizus lipase, lyophilized lipase (plant lipase) in addition to two lipase preparations derived from Rhizopus japonicus; Lilipase A-10 and Lilipase B-2. Chromobacterium lipase was found to be the most active as glycerolysis catalyst whereas lyophilized lipase; a plant preparation from wheat germ was the least active.The results have also shown that the lipase type affects also the product polarity and hence its field of application as a food emulsifier. Less polar products can be obtained using Chromobacterium lipase whereas the more polar ones using a fungal lipase preparation «Lipase A-10». The product polarity is also influenced by the process temperature but the mode of its effect is different for different lipases.
Unsaturated and saturated fatty acids fractions were separated from overused sunflower and olein oils, which are considered to be a waste, in order to use them in the preparation of valuable ethoxylated fatty derivatives with low cost of preparation. Fatty acid fractions were ethoxylated using ethylene oxide gas in the presence of 1% K 2 CO 3 catalyst at 120 and 180°C for 5, 6 and 7 h. Also fresh stearic acid and a fresh mixture of stearic acid:sunflower oil (1:1 wt/wt) were ethoxylated at 180°C for 6 h for comparison. Results showed that effective fatty derivatives could be obtained from overused oils which may give an economic retrieval. Also, reaction conditions have different effects on the properties of the produced derivatives where the best results were obtained for samples prepared at 180°C for 6 and 7 h. Ethoxylating the saturated fatty acids fraction of both overused oils especially olein oil gave better results than those of the unsaturated fraction, the ethoxylated fresh stearic acid and the ethoxylated fresh mixture of stearic acid:sunflower oil (1:1 wt/wt).
RESUMEN Lecitina de soja: fraccionamiento del residuo insoluble en acetona y sus componentes volátiles.El residuo insoluble en acetona fue aislado de la lecitina de soja. Este residuo fue fraccionado por solventes en cuatro fracciones: soluble en ácido acético, insoluble en ácido acético, fase benceno y fase insoluble en benceno.Concerniente a la constitución de los fosfolípidos de estas cuatro fracciones, se encontró que la primera fracción contiene PC, PE y PI en porcentajes del 56.0, 21.6 y 19.0 respectivamente. La segunda fracción tuvo 39% PC y 60% CER, junto a algunas trazas de PE y PI. La fase benceno está constituida principalmente por PC con algunas trazas de PE. La última fracción tuvo 80.6% CER y 20% PC. La composición en ácidos grasos de estas cuatro fracciones junto a los solubles en acetona, aceite de soja crudo y desgomado y fosfolípidos totales fueron registradas. Por lo general, se encontró que los ácidos grasos mayoritarios saturados e insaturados fueron el palmítico y linoléico. Los componentes volátiles de estas muestras excepto la insoluble en ácido acético fueron determinadas. Cuarenta y nueve compuestos fueron separados. Treinta y dos componentes incluyendo aldehidos alifáticos, cetonas, alcoholes, ésteres y ácidos fueron identificados. Los aldehídos y cetonas mostraron un cambio en las siete muestras. Estos aumentaron por el desgomado.El 4,5-dimetilelisoxazol tuvo un fuerte flavor a lecitina, así puede usarse como indicador para el proceso de desgomado. El 2-pentilfurano mostró una disminución significativa por el desgomado. Otros compuestos, tales como ésteres y alcoholes no tuvieron efectos distintivos sobre los productos volátiles a lo largo del proceso. SUMMARY Soybean lecithin: acetone insoluble residue fractionation and their volatile components.The acetone insoluble residue was isolated from soybean lecithin. This residue was solvent fractionated resulted in four fractions, namely, acetic acid soluble, acetic acid insoluble, benzene phase and benzene insoluble phase.Concerning phospholipid constitution of these four fractions, it was found that the first fraction contains PC, PE and PI in percentages of 56.0, 21.6 and 19.0 respectively. The 2 nd fraction makes 39% PC and 60% CER, besides some traces of PE and PI. The benzene phase is mainly all PC with some traces of PE. The last fr action is 80.6% CE R and 20% P C. The fatt y acid composition of these four fractions besides soluble in acetone, crude and degummed soybean oil and total phospholipids was recorded. Generally, it was found that the major saturated and unsaturated fatty acids were palmitic and linoleic. Volatile components of these samples except acetic acid insoluble were reported. Fourty nine compounds were separated. Thirty two components including aliphatic aldehydes, ketones, alcohols, esters and acids were identified.
