Wprowadzenie. Bardzo istotnym elementem zbilansowanej diety, zgodnie z wytycznymi ustalonymi przez Instytut Żywności i Żywienia w Warszawie, jest spożywanie ryb oraz przetworów rybnych. Są one niezwykle cennym źródłem wielonienasyconych kwasów tłuszczowych, pełnowartościowego białka, witamin i składników mineralnych. Ze względu na zanieczyszczenie wód organizmy w nich żyjące mogą także stanowić potencjalne źródło substancji toksycznych. Tuńczyk ma szczególną zdolność do kumulacji rtęci (Hg) w postaci pochodnych organicznych. W pracy przebadano stężenie rtęci w próbkach tuńczyka świeżego oraz przetworzonego-pochodzącego z puszki. Uzyskane wyniki odniesiono do prawnie obowiązujących norm. Przeanalizowano także, czy na stężenie Hg w próbkach ryb wpływa postać produktu (świeży/ przetworzony w puszce) oraz region ich pochodzenia. Materiały i metody. Analizie poddano 35 próbek tuńczyka świeżego oraz przetworzonego (w puszce) zakupionych w popularnych sklepach na terenie Polski południowej (woj. śląskie). Oznaczenie całkowitego stężenia Hg w próbkach tuńczyka wykonano metodą AAS (analizator AMA 254). Wyniki. Stężenie Hg w badanych próbkach tuńczykach wynosiło: średnia arytmetyczna 0,1634 ppm, mediana 0,1282 ppm. Próbki świeżej ryby zawierały większe stężenie tego metalu niż pochodzące z puszki. Stężenie Hg w większości badanych produktów nie przekraczało norm obowiązujących w Unii Europejskiej. Wnioski. Tuńczyk może stanowić źródło narażenia na rtęć dla człowieka. Dotyczy to osób spożywających ryby w dużej ilości lub szczególnie wrażliwych na ekspozycję na Hg, głównie dzieci.
