In the present report, the fatty acids, tocopherols, and sterol profiles as well as the total phenolics and carotenoids of rosehip (Rosa canina) seed oil were determined. The major fatty acids in the oil were linoleic and linolenic acids, comprising 54.80% and 23.47% of the total fatty acids, respectively. Other bioactive lipids in the oil included total tocopherols (786.3 mg/kg), total phenolics (37.97 mg/kg) and total carotenoids (218.8 mg/kg). Rosehip oil was rich in γ-tocopherol (472.0 mg/kg) and β‑sitosterol (78.0% of total sterols). The DPPH· (2,2′-diphenyl-1-picrylhydrazyl) radical scavenging activity of the oil showed 1.08 mg α-tocopherol/g oil and 4.18 μmol TEAC (Trolox equivalent antioxidant capacity)/g oil, respectively. The ABTS+ (2,2′-Azino-bis-3-ethylbenzothiazoline-6-sulphonic acid) radical scavenging activity of the oil showed 1.00 mg α-tocopherol/g oil and 3.02 μmol TEAC/g oil, respectively. The induction period (IP) of the oil was 3.46 h for the Rancimat test (110 °C), while the IP of oil in differential scanning calorimetry (DSC) test (100-150 °C) ranged between 0.26 and 58.06 min. The oxidative stability of the oil was determined under thermal and photo oxidation conditions. The progression of oxidation at 30 °C (under UV light) and at 60 °C (in the dark) was followed by recording the ultraviolet absorption (K232 and K270) and degradation of total tocopherols, γ-tocopherol and total carotenoids. Rapid deterioration occurred in the oil stored under UV light conditions. The information provided in the present work is of importance for using rosehip seed oil in different food and non-food applications.
In this study, oxidation kinetics of refined hazelnut oil heated at the temperature range from 80 to 180 C was evaluated. The changes in peroxide value, p-anisidine value, polymer triglyceride content, α-tocopherol content, and color values during oxidation were best fitted to zeroorder kinetic model. The rate constants for the p-anisidine value, polymer triglyceride content, and degradation of α-tocopherol of hazelnut oil increased at the temperatures between 80 and 160 C, while the rate constant for peroxide value decreased at the temperatures between 80 and 140 C. The activation energies for the formation of peroxides (at 80-140 C), secondary oxidation products such as alkenals, the polymer triglycerides, and degradation of α-tocopherol were found as 47. 49, 29.95, 52.65, and 14.22 kJ mol −1 , respectively. The induction period of hazelnut oil was observed to reduce with increasing oxidation times. The increase in the b* value with the oxidation time and temperature was attributed to the fact that the heating process intensified the yellow color of the oil.
This study aims to determine the effects of frying temperature, frying time, and salt content of dough on free and/or ester‐bound 2‐ and 3‐monochloropropanediols (MCPD) content of leavened dough and frying oil using response surface methodology. According to the results, the amount of ester‐bound 3‐MCPD in fried dough is 4.83–55.00 μg kg−1 dough and free 3‐MCPD is 2.69–50.97 μg kg−1 in fat‐free dough. All process parameters affect the amount of free 3‐MCPD of fried dough significantly (p < 0.05). Moreover, the salt content of the dough does not significantly (p > 0.05) affect the amount of ester‐bound 3‐MCPD in fried dough. Binary interaction of frying temperature and time is significant (p < 0.05) for free and ester‐bound 3‐MCPD content of dough samples. 3‐D plots show that high frying temperature and extended time during deep‐frying result in high levels of free and ester‐bound 3‐MCPD in leavened doughs. A quadratic model is obtained for ester‐bound 2‐MCPD of the fried doughs and frying oil as a function of frying temperature, frying time, and dough salt content. Optimum frying conditions are also determined to minimize generation of MCPD compounds. Practical Applications: Consumption of MCPDs and their esters, which are process contaminants, might adversely affect human health. Therefore, determination of free and ester‐bound MCPD is important in frying oils and fried foods like fried doughs. This research shows the usability of response surface methodology for the investigation of the generation of free and ester‐bound MCPD compounds in fried doughs and frying oil depends on the process conditions. The effects of repeated frying on the content of these contaminants can be demonstrated by quadratic models. To minimize these contaminants during the repeated deep‐frying of leavened doughs, the process conditions should be controlled. The knowledge obtained may provide information about fried‐food safety in terms of MCPD compounds. Fried doughs are consumed in most parts of the world. Frying of leavened dough may lead to the formation of free and ester‐bound 2‐ or 3‐monochloropropanediols (2‐ or 3‐MCPD). In this study, the effects of frying temperature, frying time, and dough salt content on the content of MCPD compounds in leavened doughs and frying oil are investigated using response surface methodology.
ÖZET: Bu çalışmada, farklı kızartma koşullarının kızartılmış hamurların renk değerleri üzerindeki etkileri araştırılmıştır. Bu amaçla hazırlanan mayalı hamurlar açılmış ve küçük parçalara ayrılıp rafine ayçiçek yağında mutfak fritözü kullanılarak kızartılmıştır. Farklı kızartma koşullarında bir günde elli kez tekrarlanan kızartma işlemi yapılmıştır. Kızartma yağı sıcaklıkları 160, 180 ve 200 °C; hamur tuz içerikleri % 0, 1 ve 2; ve kızartma süreleri 1, 3 ve 5 dakika olarak uygulanmıştır. Yanıt yüzey tekniği kullanılarak merkezi karma tasarım yöntemine göre yirmi kızartma işlemi yapılmıştır. 50. kızartmada fritözden alınan kızartılmış hamurların renk değerleri (L*, a* ve b*) belirlenmiştir. Kızarmış hamurların L*, a* ve b* değerleri sırasıyla 46.84-74.73, -1.47-14.14 ve 21.18-34.52 aralığında bulunmuştur. Kızartılmış hamurların renk değerlerinde meydana gelen değişikliklerin kuadratik modele uygun olduğu belirlenmiştir. L*, a* ve b* renk değerleri için modellerin belirleme katsayıları sırasıyla 0.9232, 0.9036 ve 0.9065 olarak hesaplanmıştır. Elde edilen sonuçlara göre kızartma sıcaklığının kızartılmış hamurların L*, a* ve b* renk değerleri üzerine etkisi önemli bulunmuştur (p <0.05). Diğer taraftan, kızartma süresinin b* değeri ve hamur tuz içeriğinin L* değeri üzerine etkisi önemsiz olmuştur (p> 0.05). İkili etkileşimler dikkate alındığında, kızartma sıcaklığı ve hamur tuz içeriği arasındaki etkileşim a* ve b* renk değerleri için önemli bulunmuştur (p <0.05). Ayrıca, kızartma sıcaklığı ile kızartma süresi arasındaki etkileşim de a* ve L* renk değerleri üzerine etkili olmuştur (p <0.05). Sonuç olarak, kızartma koşulları kızartılmış hamurların renk değerlerini etkilemiştir.
MCPD (monokloropropandiol) esterleri rafine yağlarda ve yağlı gıdalarda varlığı saptanan ısıl işlem kontaminantlarından biridir. Özellikle yağ ve tuz içeren ürünlerin yüksek sıcaklıklarda işlem görmesi sonucu oluşmaktadırlar. Diyetle alınan MCPD esterleri gastrointestinal sistemde trigliseritler gibi hidrolize uğrayarak serbest MCPD açığa çıkmaktadır. Serbest MCPD'nin kanserojen olduğu bilindiğinden ısıl işlem görmüş gıdalarda MCPD esterlerinin miktarlarının belirlenmesi önem taşımaktadır. Bu derlemede 3-MCPD esterleri ve benzer bileşiklerin oluşumu, toksisitesi, belirlenmesi ve miktarının azaltılmasına yönelik bilgiler verilmeye çalışılmıştır.
Bu çalışmanın amacı, ultrasonik ekstraksiyon parametrelerinden sonikasyon süresi (3, 6, 9, 12 ve 15 dakika), genlik (%25, 50 ve 100), sıcaklık (20, 30 ve 40°C) ve çözücü:meyve ezmesi oranlarının (5, 10 ve 15 mL/g) kuşburnunun toplam fenolik ve karotenoid miktarları üzerine etkisini belirlemektir. Ultrasonikasyon süresi artırıldığında toplam fenolik madde miktarı 3.18 mg/g değerinden 4.51 mg/g değerine; toplam karotenoid miktarı ise 4.29 mg/kg değerinden 18.70 mg/kg değerine yükselmiştir. Ultrasonikasyon genliğinin toplam karotenoid miktarı üzerine etkisi istatistiksel olarak anlamlı (P <0.05) olup, toplam fenolik madde miktarı ve antioksidan aktivite üzerine etkisi anlamlı bulunmamıştır (P >0.05). Sıcaklığın artırılması toplam fenolik madde miktarında istatistiksel olarak anlamlı (P <0.05) değişime neden olurken, toplam karotenoid miktarı ve antioksidan aktivite üzerine etkisi anlamlı olmamıştır (P >0.05). Diğer taraftan, ultrasonik ekstraksiyon sırasında çözücü:meyve ezmesi oranının artırılması daha fazla karotenoidin ekstraksiyonunu sağlamıştır. Elde edilen sonuçlara göre, ultrasonik ekstraksiyon yönteminin kuşburnu meyvesindeki biyoaktif bileşiklerin ekstraksiyonunda başarıyla kullanılabileceği belirlenmiştir.
