RESUMOA erva-mate (Ilex paraguariensis) tem despertado grande interesse pelos pesquisadores por apresentar substâncias bioativas que possuem atividade antioxidante. A utilização da casca de ameixa vermelha faz-se uma alternativa significante para a melhoria da qualidade nutricional da erva-mate tradicional e, por conseguinte, do chá obtido. Este trabalho teve como objetivo caracterizar as propriedades físico-químicas e antioxidantes da casca de Ameixa Vermelha in natura e desidratada, além de avaliar o potencial antioxidante do chá de erva-mate adicionado deste produto em diferentes proporções. Para as cascas desidratada e in natura de ameixa vermelha foram avaliados os teores de antocianinas, atividade antioxidante, carotenoides, cinzas, compostos fenólicos, fibra bruta e umidade. Já para caracterização dos chás, foram determinados os mesmos parâmetros com exceção de cinzas e umidade. A casca desidratada de ameixa vermelha apresentou valores de atividade antioxidante, compostos fenólicos e fibra bruta superiores à casca in natura. Porém o processo de desidratação reduziu a concentração de antocianinas e carotenoides em 68,4% e 11,7% respectivamente. A adição de casca de ameixa vermelha desidratada ao chá de erva-mate promoveu o aumento nos teores de antocianinas, atividade antioxidante, compostos fenólicos, carotenoides e fibra bruta, independente da concentração de casca utilizada. Conclui-se, dessa forma, que a casca de ameixas se faz um excelente alimento que reúne qualidade físico-química e potencial antioxidante, capazes de complementar as propriedades nutricionais e antioxidantes do chá de erva-mate.
