Este artigo apresenta uma revisão bibliográfica a cerca da cadeia produtiva da cachaça, produto essencialmente brasileiro e representativo no mercado nacional e também no internacional, devido a sua grande demanda de exportação nos últimos anos. Apresentam-se então algumas colocações a cerca do processo produtivo da bebida, potencialidade de mercado, certificação e a opção de produção em unidades agrofamiliares. Com o aumento da demanda por bebidas com elevado padrão de qualidade, a adoção de técnicas produtivas mais eficientes é um desafio que deve ser superado pelos produtores da cachaça brasileira, a fim de alavancar este setor e atingir novos mercados. O processo produtivo da cachaça, com todas as suas peculiaridades, requer então capacitação do produtor para que se obtenha um produto de qualidade que satisfaça os padrões exigidos pelo consumidor. Cuidados são importantes no processo produtivo desde a seleção de cultivares da cana-de-açúcar, corte e armazenagem dos colmos, moagem, fermentação, destilação, armazenamento e envelhecimento, todas estas etapas apresentam particularidades que podem alterar a qualidade do produto final. O envelhecimento, por exemplo, é importante pois agrega qualidade sensorial à bebida. A exploração da cana-de-açúcar para a produção da cachaça artesanal é uma atividade que se enquadra no tipo de exploração de agricultura familiar, estudos mostram que a viabilidade econômica deste tipo de agroindústria traz bons resultados e pode ser um empreendimento viável além de contar com mercado garantido. Foi verificado a partir desta abordagem que o processo produtivo com todas as suas peculiaridades requer muita capacitação por parte do produtor para que se obtenha cachaça de qualidade satisfazendo os padrões de qualidade exigidos pelo mercado consumidor nacional e internacional.
