Para la elaboración de vino de manera artesanal o industrial se requiere de microorganismos que propicien el proceso de fermentación y determinen las características propias de este producto. Con este propósito generalmente se utilizan levaduras, destacándose Saccharomyces Cerevisiae, la cual es muy resistente a la presencia de alcohol y dióxido de carbono y permite una adecuada fermentación del vino. Por lo tanto, en el proceso de obtención del vino se requiere identificar y cuantificar las levaduras, ya que la cinética de crecimiento de las mismas está directamente relacionada con las diferentes reacciones bioquímicas y variables de control del proceso, lo que finalmente incide en la calidad del producto. Para la presente investigación se realizó una metodología cualitativa bajo los parámetros de investigación de una revisión bibliográfica que permitió tener como criterios de inclusión a estudios realizados desde el 2018 en adelante, enfocados en la fermentación de mosto de vino. Los resultados más importantes a los que llego el presente artículo es que actualmente a más de los métodos tradicionales de identificación y cuantificación de levaduras, existen avances moleculares que han permitido el desarrollo de nuevas técnicas que permiten la identificación y enumeración de microorganismos a partir de muestras de mosto vínico, tanto directa como indirectamente. Además, la identificación y cuantificación de levaduras presentes en la fermentación del vino, permite identificar las propiedades de la levadura.
