A farinha de aveia tem sido utilizada como ingrediente para melhorar as características de suculência, maciez e rendimento em produtos cárneos, como a linguiça. Objetivou-se neste trabalho, o desenvolvimento de um novo produto denominado linguiça frescal de peixe Barbado, partindo-se de uma formulação controle e outras duas com diferentes concentrações de farinha de aveia (0,77% e 1,15%). Realizaram-se análises físico-químicas e teste de aceitação sensorial utilizando-se uma escala hedônica, tendo-se como atributos avaliados sabor, aroma, textura e aparência. Mediante a análise de variância no teste de aceitação, observou-se que apenas o atributo textura apresentou diferença significativa entre as amostras (p< 0,05). Quanto à análise físico-química, observou-se que as amostras apresentaram resultados dentro dos parâmetros exigidos no regulamento técnico de identidade e qualidade do produto. Pode-se afirmar que o uso de farinha de aveia é uma alternativa viável para diversificação de produtos, sendo que a linguiça contendo 1,15% deste alimento funcional resultou em um produto com melhor qualidade e aceitação pelos provadores.
RESUMO: no mercado nacional, a lingüiça frescal de peixe não é muito divulgada, principalmente poucas indústrias produz esse tipo de produto. Por se tratar de uma matéria-prima pouco produzido no Brasil, sendo que boa parte da fabricação desse produto é artesanal. A lingüiça frescal de peixe foi desenvolvida no laboratório de tecnologia em alimentos do UNIVAG -Várzea Grande. Nesse desenvolvimento criouse dois produtos, sendo que uma utilizou-se a farinha de aveia como produto funcional. As amostra foram avaliadas em análise sensorial destacando-se nos quesitos de textura.
