The aim of this work was to investigate the effect of using ultrasound or edible coating as a possible alternative to blanching on the quality of vacuum-packaged potato strips. The treatments assessed were blanching (85ºC, 3.5 min), coating with 2 % alginate and sonicating (42 kHz, 5 min) in an ultrasonic bath containing a 2 % citric acid solution. Vacuum-packaged samples were stored up to 12 days at 3 ±1ºC. The pH, polyphenol oxidase (PPO) activity, sugars and microbial load were assessed. Also, the colour, shear-force and dry matter of the treated and fried potato strips as well as the oil adsorption and acrylamide after frying were evaluated. The PPO activity of the treated samples was not significantly different over time (p>0.05). The treatments applied did not affect the attributes of the fried potato strips over time; there were no significant changes in oil absorption, acrylamide content or colour (p>0.05). However, the visual quality of sonicated packaged potato strips was significantly better than that of the other treatments after storage. The loss of the texture of blanched potatoes was remarkable (p<0.05) before and after frying. Sonicated samples maintained mesophilic bacteria counts better than blanched and alginate coated vacuum-packaged potato strips.
O objetivo deste trabalho foi determinar a vida útil pós-colheita e o tipo mais adequado de embalagem para conservar tomate de mesa, cultivar Dominador, armazenado em condição ambiente e sob refrigeração. O produto foi acondicionado em embalagens de polietileno de baixa densidade com espessura de 35 m e em bandejas de poliestireno expandido revestidas com filme flexível de policloreto de vinila com espessura de 30 m. Tomate sem embalagem serviu como testemunha. O armazenamento ocorreu em condição ambiente, com temperatura de 24°C 5ºC e umidade relativa de 52% 5%, e refrigerado na temperatura de 12°C 1ºC e umidade relativa de 90% 5% por nove dias. Os tomates foram caracterizados quanto ao peso, diâmetro, comprimento, espessura de polpa e tamanho do lóculo. No início e aos quatro, sete e nove dias de armazenamento foram determinados o pH, sólidos solúveis e a perda de massa das amostras, avaliando-se a aceitabilidade e a intenção de compra dos frutos. Adotou-se delineamento experimental inteiramente casualizado, com três repetições. De acordo com as condições experimentais, as embalagens mais adequadas para conservar os tomates foram as bandejas de poliestireno expandido revestidas com filme flexível de PVC, pois mantiveram suas características físico-químicas e reduziram as perdas de massa. Os frutos submetidos à temperatura ambiente sem embalagem também apresentaram vida útil considerável. A maior intenção de compra ocorreu para os frutos submetidos a esses dois tratamentos.m e em bandejas de poliestireno expandido revestidas com filme flexível de policloreto de vinila com espessura de 30 m.
