The chemical composition and some physico‐chemical characteristics of the flour obtained from eight different banana varieties are presented. The flour was prepared by freeze‐drying a homogenate of green banana pulp. Amylose, starch, dietary fiber, protein, ash, moisture and lipid contents were determined. Viscosity and gelatinization of starch were also investigated. Banana flour is rich in starch granules. Peak temperature of gelatinization varied from 68 to 76 °C according to the variety. All of them showed an increase in viscosity during cooling but the variety Ouro colatina showed more stability during shearing and cooling. Chemical composition of the flour also varied according to the variety. The range obtained were 61—76.5% starch, 19—23% amylose, 2.5—3.3% protein, 4—6% moisture, 0.3—0.8% lipids, 2.6—3.5% ashes, and 6—15.5% total fiber. Considering that the flour production is easier and faster than the isolation of the starch, it would be not only more practical but also less expensive to use the flour instead.

ResumoO conteúdo de compostos fenólicos, incluindo resveratrol, antocianinas e outros flavonóides, e a capacidade antioxidante de cinco cultivares de uvas produzidas em Minas Gerais foram determinados. O conteúdo de fenólicos totais, determinado através do método de Folin-Ciocalteau variou significativamente, entre 65 ± 1 e 390 ± 30 mg equivalentes de ácido gálico.100 g -1 de amostra base úmida (b.u.). O conteúdo de antocianinas totais quantificado por CLAE variou entre 6,7 ± 0,2 e 154 ± 4 mg equivalentes de cianidina.100 g -1 (b.u.). Outros flavonóides encontrados foram catequina, epicatequina, quercetina, caempferol além dos ácidos hidroxicinâmicos. O resveratrol foi encontrado em três cultivares, variando entre 0,022 ± 0,001 e 0,60 ± 0,03 mg.100 g -1 (b.u.). As uvas tintas de coloração mais escura apresentaram maior conteúdo de antocianinas, e conseqüentemente maior teor de fenólicos totais e capacidade antioxidante. A amora-preta é um fruto de alta perecibilidade e por isso seu aproveitamento é preferencialmente industrial. Entretanto, há pouca informação na literatura a respeito do efeito do processamento e do armazenamento na composição química de produtos elaborados a partir destes frutos. Neste trabalho, foram preparadas geléias a partir de sete cultivares de amoreira-preta introduzidas em Minas Gerais, pela EPAMIG. As geléias foram avaliadas após o processamento e armazenamento por 40 e 90 dias à temperatura ambiente quanto ao pH, sólidos solúveis totais, acidez total titulável, umidade, carboidratos solúveis e antocianinas totais. O aquecimento da polpa na elaboração da geléia resultou em uma redução de 8,8% no teor inicial de antocianinas totais. O armazenamento também resultou em perda de antocianinas, em média 32% nos primeiros 40 dias, com redução para 11% nos 50 dias subseqüentes. Os teores de antocianinas totais obtidos na geléia variaram de 98,58 mg/100 g (Seleção 97) a 170,66 mg/100 g (Guarani), o que caracteriza este produto como um alimento rico em compostos fenólicos. Blackberries have a short shelf-life and thus are used mainly as raw material for the food industry. In spite of the wide use of blackberries as processed products, not much is known about the effects of processing and storage concerning the chemical composition of such products. In this paper, jams were prepared from seven blackberry cultivars grown in Brazil. Jams were evaluated after processing and storage for 40 and 90 days at room temperature for some parameters related to quality such as the pH, total soluble solids, total titratable acidity, humidity, soluble carbohydrates and total anthocyanin content. The heat applied to blackberry jam products reduced the anthocyanin content at an average of 8.8%. Storage time also reduced the anthocyanin content at an average of 32% after 40 days at room temperature decreasing to 11% in the next 50 days of storage. The anthocyanin content obtained in blackberry jams ranged from 98.58 mg/100 g (´97 selection) to 170.66 mg/100 g (Guarani), which characterizes this food as a rich source for phenolic compounds. O objetivo deste trabalho foi avaliar a influência de nove porta-enxertos na produção e composição química das bagas de uvas de mesa e de processamento durante o período de 2006 a 2008 em Caldas, MG. As cultivares Niágara Rosada e Folha de Figo foram enxertadas sobre 'IAC 572', 'IAC 313', 'IAC 766', '420 A', '1103 Paulsen', 'Traviú', '196-17', 'Gravesac' e 'RR 101-14' e submetidas ao delineamento em blocos ao acaso com dez tratamentos (nove porta-enxertos e o pé-franco) e quatro repetições. Ambas cultivares apresentaram maior produção sobre 'IAC 572', porém com prejuízo para a qualidade das bagas que apresentaram menor relação sólidos solúveis/acidez, menor teor de antocianinas e de compostos fenólicos e maior acidez. A absorção de potássio foi mais dependente do porta-enxerto em 'Niágara Rosada'; a maior absorção foi com os porta-enxertos 'IAC 766' e 'Traviú'. Videiras enxertadas sobre '196-17' apresentaram o menor teor de potássio nas bagas. 'Niágara Rosada' apresentou produção de 9 kg por planta e elevada relação sólidos solúveis/acidez sobre 'RR 101-14', '420 A' e 'Gravesac'. Entretanto, 'Gravesac' proporcionou maior concentração de antocianinas. 'Folha de Figo' enxertada em '196-17' apresentou elevado teor de sólidos solúveis, antocianinas e fenólicos nas cascas e menor teor de acidez e fenólicos nas sementes, além de produção de 5 kg por planta, estatisticamente semelhante aos porta-enxertos mais produtivos.

Two main forms of starch phosphorylase (EC 2.4.1.1) were identified and purified from banana (Musa acuminata Colla. cv. Nanicão) fruit. One of them, designated phosphorylase I, had a native molecular weight of 155 kDa and subunit of 90 kDa, a high affinity towards branched glucans and an isoelectric point around 5.0. The other, phosphorylase II, eluted at a higher salt concentration from the anion exchanger, had a low affinity towards branched glucans, a native molecular weight of 290 kDa and subunit of 112 kDa. Kinetic studies showed that both forms had typical hyperbolic curves for orthophosphate (Pi) and glucose-1-phosphate, and that they could not react with substrates with a blocked reducing end or alpha-1,6 glucosidic bonds. Antibodies prepared against the purified type-II form and cross-reacting with the type-I form showed that there was an increase in protein content during development and ripening of the fruit. The changes in protein level were parallel to those of phosphorylase activity, in both the phosphorolytic and synthetic directions. Considering the kinetics, indicating that starch phosphorylases are not under allosteric control, it can be argued that protein synthesis makes a contribution to regulating phosphorylase activity in banana fruit and that hormones, like gibberellic acid and indole-3-acetic acid, may play a regulating role. For the first time, starch phosphorylases isoforms were detected as starch-granule-associated proteins by immunostaining of SDS-PAGE gels.

RESUMO-Este trabalho teve como objetivo avaliar o potencial de maturação das cultivares Pinot Noir, Tempranillo, Merlot, Cabernet Sauvignon, Syrah, Chardonnay e Sauvignon Blanc submetidas ao regime de dupla poda, em Cordislândia, região cafeeira do sul de Minas Gerais. As plantas foram submetidas a dois ciclos de produção, um de primavera-verão, compreendido entre agosto e janeiro, e outro ciclo de outonoinverno, entre janeiro e julho. Como parâmetros de qualidade, foram avaliados os diâmetros transversal e longitudinal da baga, acidez, ácidos tartárico e málico, pH, sólidos solúveis, antocianinas, fenólicos totais e os teores de glicose, frutose e sacarose. Todas as variedades apresentaram maiores teores de pH, sólidos solúveis, açúcares, antocianinas e fenólicos totais, e redução nos diâmetros transversal e longitudinal na safra de inverno. A cultivar Syrah destacou-se das demais no conteúdo de antocianinas e fenólicos totais, tanto no verão quanto no inverno, entretanto apresentou o menor conteúdo de açúcares. A alteração do ciclo de produção da videira através da técnica da dupla poda para colheita, no período de inverno, na região cafeeira de Minas Gerais, favorece a maturação dos frutos e melhora consideravelmente a qualidade das uvas para vinificação. Grapevines were cultivated in two different growing seasons, spring-summer from August to January and autumn-winter from January to July. Quality parameters such as berry transversal and longitudinal diameters, acidity, tartaric and malic acids, pH, soluble solids, anthocyanins, phenolic compounds, glucose, fructose and sucrose were evaluated. All cultivars showed higher pH, soluble solids, sugars, anthocyanins and phenolic compounds levels and lower transversal and longitudinal diameters in winter cycle. Syrah cultivar was stood out with higher anthocyanin and phenolic compounds levels in summer and winter cycles however showed lower reducing sugars levels. The alteration of the production cycle through double-pruning management in order to harvest grapes in the winter in the coffee region of Minas Gerais favors the ripening of the fruits and improves the quality of wine grapes.

Grape juices have been valued due to their potential health benefits, which have demanded increased grape productivity and quality. Five grape cultivars grown in Brazil, Isabel Precoce, Carmem, Violeta, Concord and Bordo were evaluated in 2013 and 2014 seasons for bioactive components and also for juice processing quality traits. Production cycle was the longest for Carmem but lower and similar for Violeta, Isabel, Bordo and Concord. Isabel showed higher productivity (5.4 kg•plant-1) but lowest soluble solids content (16.9 °Brix), anthocyanins (26.7 mg•100 g-1) and total phenolics (110.7 mg•100 g-1).
