The aim of this study was to evaluate the influence of hydrocolloids (low methoxyl pectin [LMP], guar gum, and carrageenan) on the characteristics of low caloric orange jellies. A mixture design with to 12 tests to determine properties of the jellies. Physical, physicochemical, and sensory analyses were performed. The results were analyzed by response surface methodology and a Tukey mean test at a significance level of 5% (p ≤ 0.05). The formulations with high LMP concentration resulted in low caloric orange jellies that have a rigid structure, light color, more acidic nature and exhibited optimal sensory acceptability. The jelly formulations with carrageenan concentration of 0.25% had lower total sugar values. Therefore, for the preparation of low caloric orange jellies, it is necessary to use LMP concentration between 0.75% and 1% and carrageenan concentration of 0%–0.25% as well as to exclude guar gum.
Atualmente, os consumidores têm mostrado grande preocupação em adquirir produtos mais nutritivos e saudáveis, com sabores diferenciados e, acima de tudo, seguro para o consumo. Isso é uma tendência de mercado e, sendo o sorvete muito apreciado no Brasil, o objetivo deste estudo foi desenvolver e otimizar sorvetes funcionais adicionados de kinkan. Para este efeito, foram usadas três fi bras dietéticas (amido modifi cado, polidextrose e inulina) isoladas e em diferentes combinações, a fi m de se obter um produto rico em fi bras e em compostos bioativos. Verifi cou-se que o kinkan tem boas propriedades físico-químicas, tanto em sua forma in natura e quanto processado, além de possuir elevados teores de antioxidantes. Estas características fazem com que o kinkan seja uma boa escolha para ser adicionado aos sorvetes rico em fi bras. O sorvete funcional adicionado com kinkan demonstrou boa aceitabilidade, alta atividade antioxidante e alto teor de compostos fenólicos, o que o torna uma alternativa saudável e interessante para o mercado de alimentos funcionais. No que diz respeito as fi bras utilizadas, podese concluir que, para uma melhor aceitabilidade do consumidor, deve ser adicionado inulina (0,25% a 0,75%) e polidextrose (0,25% a 0,75%) na formulação dos sorvetes.
Sourdough is a process that is expanding nowadays. However, the microorganisms present produce metabolites that can cause changes in the breads. Thus, the objective of this work was to evaluate the effects of substrates and types of wheat flour on microbiological characteristics, pH values, total phenolic compounds, antioxidant capacity and fermentative capacity of different types of sourdough, comparing them with dry yeast. In this way, six sourdough were elaborated, diversifying the type of wheat flour (whole or white) and the substrate (beer wort, pineapple juice or natural yogurt), being evaluated in the microbiological aspects (yeast count, bacteria under anaerobic conditions and under aerobic conditions), physicochemical (pH, phenolic compounds and antioxidant capacity (β-carotene/linoleic acid, ABTS and DPPH)) and fermentative capacity (only in sourdough). In view of the results obtained, it was observed that both white wheat flour and whole wheat flour, with the substrates yogurt, pineapple juice and brewer's wort, showed differences in microbiological characteristics, in pH values, in the content of compounds total phenolics, antioxidant capacity and fermentative capacity compared to dry yeast, with whole wheat flour, pineapple or beer wort providing microbial diversity, as well as lowering the pH. WY (white wheat flour and yogurt), WP (white wheat flour and pineapple) and IW (whole wheat flour and beer wort) sourdough were more resistant to temperatures (25 °C, 30 °C e 35 °C).
Atualmente, nota-se uma grande demanda por produtos que tragam benefícios para a saúde, com sabores diferenciados e acima de tudo, seguros para o consumo. Desta forma, o objetivo deste trabalho foi avaliar a estabilidade física, físico-química e microbiológica de iogurtes concentrados salgados com e sem adição de orégano durante armazenamento e verificar a estabilidade dos compostos fenólicos totais e da atividade antioxidante do iogurte concentrado salgado adicionado de orégano durante o armazenamento. Foram realizadas análises de sinérese, cinzas, umidade, lipídios, proteínas, acidez, pH, contagem total de bactérias láticas, coliformes totais e termotolerantes, bolores e leveduras, compostos fenólicos totais e atividade antioxidante (ABTS e DPPH). Observou-se que os aspectos físico (sinérese) e alguns parâmetros físico-químicos dos iogurtes concentrados salgados foram influenciados pela adição de orégano, e que em ambos (com e sem adição de orégano) sofreram alterações durante o armazenamento. Apesar de estar dentro dos valores exigidos pela legislação, este estudo demonstrou que a adição de orégano influenciou negativamente a sobrevivência das bactérias láticas, inibindo-as, durante o armazenamento refrigerado do iogurte. Os iogurtes concentrados salgados com e sem adição de orégano apresentaram contagens de coliformes dentro dos padrões estabelecidos pela legislação brasileira. Já em relação à enumeração de bolores e leveduras, esta encontrou-se fora dos padrões estabelecidos pela legislação desde o início do armazenamento. Os iogurtes concentrados salgados adicionados de orégano apresentaram aumento dos teores de compostos bioativos ao longo do armazenamento, sendo uma alternativa interessante para o mercado de produtos lácteos. Contudo, seriam necessários estudos posteriores para diminuir a contagem de bolores e leveduras até o limite permitido pela legislação.
Fruit jellies are widely produced as a way to utilize fresh fruits, which are highly perishable. Orange a fruit widely consumed in Brazil, it has a significant amount of bioactive compounds. Despite the great progress in the development of jellies, several factors can change its useful life, among them is the packaging. Therefore, the objective of this study was to evaluate the effect of packaging on the physicochemical, physical, microbiological and bioactive compounds stability of low-calorie orange jellies during storage. Analyses every 30 days during the 180 days of storage. The results showed that increased storage time led to a decrease in pH, reduction of the flow rate (polypropylene packaging), reduction in yellow intensity, and growth of fungi and yeasts (higher in polypropylene packaging). In contrast, luminosity, red intensity, moisture, total sugars, and the consistency index tended to remain stable during storage. The DPPH results showed an increase in the antioxidant activity and reduction of vitamin C throughout the period of storage, especially in polypropylene packaging. The total phenolic content was stable with a tendency to decrease during storage. Notably, vitamin C showed a positive correlation with antioxidant activity in jellies. Low-calorie orange jellies packaged in glass showed the least changes during storage.
Atualmente, nota-se uma grande preocupação por parte dos consumidores em adquirir produtos nutritivos, saudáveis, que tragam benefícios para a saúde, com sabores diferenciados e acima de tudo, seguros para o consumo, sendo uma tendência de mercado e, como o sorvete de iogurte está cada vez mais sendo apreciado no Brasil, o presente estudo teve como objetivos a) determinar a concentração ideal de gengibre a ser adicionado ao frozen yogurt, b) determinar a concentração de prebióticos em frozen yogurt adicionado de gengibre e c) estudar a viabilidade das culturas lácticas, os teores de compostos bioativos e a capacidade antioxidante de frozen yogurt simbiótico adicionado de gengibre. Verificou-se que a utilização de 0,8% e 1,0% de gengibre adicionados antes ou após a maturação da calda não influenciaram a preferência do frozen yogurt. Já a adição de prebióticos, forma isolada ou combinada, influenciaram no pH, nos atributos sensoriais de cor e sabor e no overrun, sendo que a utilização de 2% de inulina proporcionou maiores teores de compostos fenólicos. Diante do exposto conclui-se que é viável produzir frozen yogurt simbiótico adicionado de gengibre. Desta forma, as quantidades ideais de gengibre e de prebiótico a ser adicionado ao produto são 1% e 2%, respectivamente.
The objective of this study was to investigate the combined effects of different types of wheat flour (whole or white) with natural yogurt, pineapple juice, and beer wort for sourdough production to improve the technological characteristics of milk breads. Seven milk breads were prepared with varying yeast fermentation and sourdough types (produced with different types of wheat flour and substrates). A physical analysis (oven jump, bread shape, crust thickness, expansion coefficient, and images of the slices), proximal composition examination (moisture, carbohydrates, proteins, lipids, and ash), and acceptability and purchase intent evaluation were then performed. The results showed that the factors under study influenced the technological characteristics of the milk breads, and that the sourdough consisting of whole wheat flour and yogurt was less acceptable. However, sourdough prepared using white wheat flour and beer wort was the most effective, being a promising alternative in the elaboration of milk breads.
