Flavoring additives are of great technological importance for the food industry. However, there is little information regarding the toxicological properties of these micro-ingredients, especially at the cellular level. The present study used meristematic root cells of Allium cepa L. to evaluate the toxicity of a liquid, aroma and flavor synthetic chocolate additive, manufactured and widely marketed throughout Brazil and exported to other countries in South America. The flavoring concentrations evaluated were 100.00; 50.00; 25.00; 1.00; 0.50 and 0.25 µL/L, where the highest concentration established was one-hundred times lower than that commercially suggested for use. The concentration 100 µL/L substantially reduced cell division of meristems within 24- and 48-hours exposure. Concentrations from 100.00 to 0.50 µL/L resulted in a significant number of prophases to the detriment of the other phases of cell division, indicating an aneugenic activity, and induced a significant number of cellular changes, with emphasis on micronuclei, nuclear buds and chromosomal breaks. Under the established analysis conditions, with the exception of concentration 0.25 µL/L, the flavoring of chocolate caused cytotoxicity, genotoxicity and mutagenicity to root meristems.
Resumo: A soja é um alimento funcional e se caracteriza por oferecer vários efeitos benéficos à saúde permitindo a ampliação da pesquisa para desenvolvimento de produtos funcionalizados como substitutos alternativos de derivados lácteos. Este estudo teve por objetivo elaborar a partir do extrato aquoso de soja um frozen yogurt enriquecido com cálcio e adicionado de uma cultura mista contendo Lactobacillus acidophilus, Bifidobacterium e Streptococcus thermophilus microencapsuladas. As micelas foram preparadas a partir de albumina e colágeno com a adição da cultura probiótica superativada. O frozen yogurt foi preparado à base de extrato aquoso de soja. As micelas de albumina e colágeno foram capazes de proteger os microrganismos probióticos do frio mantendo-os viáveis durante o armazenamento. As micelas promoveram a obtenção de um produto com características físicas, químicas e sensoriais adequadas a de um "gelado comestível", mostrando que o frozen yogurt de soja pode ser considerado uma boa opção de produto para o mercado.Palavras-chaves: Alimento funcional; Micelas; Probióticos; Gelado Comestível.
Application and viability of L. acidophilus, Bifidobacterium and S. thermophilus microencapsulated in soy frozen yogurt:Soybean is a functional food and it is characterized by providing several beneficial health effects allowing the expansion of research and development of functionalized products as alternative substitutes of dairy products. This study aimed to elaborate frozen yogurt enriched with calcium and added a mixed culture containing Lactobacillus acidophilus, Bifidobacterium and Streptococcus thermophilus microencapsulated, from aqueous extract of soybean. The micelles were prepared from albumin and collagen with the addition of over activated probiotic culture. The frozen yogurt was prepared on the basis of aqueous extract of soybean. The micelles of albumin and collagen were able to protect the probiotic microorganisms from cold keeping them viable for storage. The micelles were able to obtain a product with adequate physical, chemical and sensory characteristics for an edible frozen, what shows that soy frozen yogurt may be a good choice of product for the market. O presente trabalho tem por objetivo compartilhar os resultados de uma experiência realizada durante as aulas de física, com os alunos do 1º ano do Ensino Médio. A idéia central foi a de apresentar a Física contextualizada, com abordagens fortemente vinculadas ao cotidiano dos alunos. A sequência didática seguiu uma abordagem interdisciplinar e possibilitou aos alunos uma interface entre a Física, a Biologia e a Matemática. Os resultados obtidos apontam para uma contribuição ao Ensino de Física bem como para uma maior receptividade dos alunos nas aulas uma vez que conseguiram perceber a relação do conteúdo com situações práticas.
