O feijão é uma importante fonte de nutrientes e o feijão caupi uma cultura economicamente estratégica para regiões como o Norte e o Nordeste do Brasil, dado seu amplo consumo seja seco ou verde (fresco), contudo a durabilidade desse na forma verde é limitada, o que configura um problema tanto para produtores, comerciantes e consumidores do produto. Com isso objetiva-se testar métodos de conservação combinados, visando diminuir os impactos da deterioração e assim aumentar o tempo de vida útil do feijão verde caupi (Vigna unguiculata L.) , As amostras foram coletadas em feiras livres de João Pessoa, Paraíba, Brasil, transportadas e armazenadas nas instalações laboratoriais da UFPB campus I, e foram submetidas à três temperaturas distintas (ambientes, refrigeração e congelamento), embaladas à vácuo e tendo os parâmetros microbiológicos, fisicoquímicos avaliadas após 30 dias. As análises evidenciaram que as amostras se encontravam dentro dos parâmetros adequados para o consumo e não diferiram estatisticamente das amostras in natura. Das temperaturas de armazenamento avaliadas, as de refrigeração (TR) e de congelamento (TC), obtiveram êxito em salvaguardar os componentes do feijão caupi. O feijão caupi apresentou boa qualidade microbiológica ao término do experimento e o perfil físico-químico do feijão caupi foi determinado, encontrando-se acordo com os trabalhos reportados na literatura. Obtendo um produto saudável com todos os seus constituintes essenciais.
