Biodiversitas 22: 3271-3276. Freshwater crayfish is a species from the Parastacidae family that is indigenous to Papua and West Papua Indonesia. This study analyzes the amount of production, economic value, distribution, and conservation of freshwater crayfish endemic to Papua and West Papua. The production data were obtained from Stasiun Karantina Ikan or Fish Quarantine Inspection Agency in Papua and West Papua, Indonesia. Data regarding the price of Cherax crayfish were determined based on interviews with freshwater crayfish sellers. Furthermore, the distribution of freshwater crayfish was explained based on a literature review, while the data of its conservation were retrieved from the IUCN Red List of Threatened Species. Cherax crayfish caught from wild populations in West Papua is known higher than in Papua. Increased sales revenue could support the economy of the local community. There have been 25 species of freshwater crayfish identified, nine of which were from West Papua and 16 from Papua. Three species were under Endangered (EN), Least Concern (LC), Vulnerable (VU) status, respectively. Four species were under Data Deficient (DD) status, while the rest were unidentified. Overfishing of Cherax crayfish causes decline Cherax crayfish stock in the wild, future researchers are expected to conduct more specific studies that include relevant stakeholders regarding the conservation of Cherax crayfish that are endemic to Papua and West Papua.
Euthynnus affinis is one of the most loved fish by the community. Fulfillment of the demand for tuna from the process of catching until it is landed for sale has the potential to experience a decrease in yield. The purpose of this study was to determine handling techniques, determine quality, and determine yield losses in tuna catches at the Karangsong Indramayu Fish Landing Base (PPI) West Java. The research was conducted by directly observing the handling process, observing the cold chain of tuna from unloading to loading, conducting organoleptic quality testing, ALT, TVB and calculating fish losses by referring to the Load Tracking (LT) method. The calculation of yield loss is carried out in three types, namely: physical loss, quality loss, and financial loss. The flow of the tuna handling process observed is the unloading process to the loading process. The value of the organoleptic quality test on tuna caught was 8, the ALT test value of the lowest average value was 16,000 col/g and the highest value was 35,000 col/g. The lowest average TVB test value was 9.96 mgN/100 g and the highest was 11.19 mgN/100 g. Euthynnus affinis from unloading to loading experienced physical, quality and financial losses of: 1.07%; 0.84%; and 2.05%.
Udang merupakan salah satu komoditas utama ekspor Indonesia karena kandungan gizi yang tinggi serta permintaan pasar yang meningkat setiap tahunnya, salah satu jenis udang yang menjadi komiditi ekspor Indonesia adalah jenis vannamei (Litopenaeus vannamei). Untuk menghasilkan produk ekspor yang baik maka harus diperhatikan faktor – faktor yang dapat mempengaruhi mutu produk tersebut. Penenlitian ini bertujuan untuk mengetahui alur proses pengolahan udang vannamei head less easy peel, penerapan rantai dingin, mutu bahan baku dan produk, rendemen, produktivitas tenanga kerja, penerapan persyaratan kelayakan dasar (GMP, SSOP dan GMP) dan penanganan limbah. Penelitian menggunakan metode observasi lansung ke unit pengolahan PT Indokom Samudera Persada. Metode analisa data yang digunakan yakni deskriptif dan komparatif. Ikan tuna secara nasional merupakan komoditas ekspor terbesar kedua setelah udang. Salah satu pengolahan ikan tuna yang banyak dilakukan oleh kelompok masyarakat, baik industri rumah tangga maupun UMKM adalah industri abon. Tujuan penelitian ini untuk mengetahui kelayakan dasar penerapan GMP dan SSOP unit pengolahan abon ikan tuna dan mutunya pada UMKM Mamabon Kota Bukittinggi. Pengamatan proses pengolahan abon ikan dilakukan secara langsung di unit pengolahan menggunakan metode observasi dan wawancara dengan narasumber. Pengujian sensori bahan baku daging tetelan ikan tuna beku mengacu SNI 8919:2020 sedangkan sensori abon tuna mengacu pada SNI 7690:2013 yang dilakukan oleh 6 panelis dengan 8 kali pengamatan dan 3 kali pengulangan. Pengujian proksimat dan mikrobiologi dilakukan pada UPTD. Pengujian dan Penerapan Mutu Hasil Perikanan (PPMHP) Dinas Kelautan dan Perikanan Provinsi Sumatera Barat dengan dilakukan tiga kali pengulangan yang mengacu pada SNI. Perhitungan rendemen dilakukan pada tahap penyiangan, pengukusan, pencabikan dan produk akhir yang dilakukan sebanyak 5 kali pengamatan dengan 3 kali pengulangan. Penilaian Sertifikat Kelayakan Pengolahan (SKP) mengacu PermenKP No. 17 tahun 2019. Hasil uji sensori bahan baku dan produk abon tuna sudah memenuhi standar SNI. Abon ikan tuna memiliki nilai kadar protein 17,02%, kadar lemak 28,68%, kadar abu 4,92% dan kadar air 7,63%. Hasil pengujian mikrobiologi produk abon tuna sudah memenuhi standar SNI. Rendemen akhir abon ikan tuna sebesar 67%. Hasil penilaian SKP UMKM Mamabon mendapat predikat C (cukup). UMKM Mamabon telah menerapkan GMP dan SSOP walaupun dengan kategori cukup.
