Syagrus coronata known as licuri, ouricuri, or uricuri is a palm tree from dried areas in Brazil and it is an important resource for the local population. The objective of this work was to evaluate the nutritional value of licuri kernels from the Territory of Sisal (State of Bahia) and to develop cookies prepared with licuri kernels and cassava flour. The licuri kernel showed high content of total dietary fiber (13 -15%) with values equivalent to that observed for coconut kernel. The content of minerals such as zinc, magnesium, phosphorus, manganese, iron, and copper was similar to those recorded for commercial nuts and superior to coconut kernel. The licuri kernel presented an oil content of 61-66%, with a predominance of lauric acid. The main sterols were Sitosterol, Campesterol and Δ5-avenasterol. The formulations of cookies with licuri kernel (5 and 10%) and commercial cassava flour (4.5 and 9%) showed no differences in general acceptance, aroma, flavor, and texture. The kernel of Syagrus coronata represents an important source of dietary fiber, lipids, and minerals and the results indicate that besides its traditional application, this use represents the increasing the nutritional value of cookies in compliance with global trends.
Knowledge management and innovation are important for organizational environments, acting as a strategy to maintain and improve competitiveness. This article evaluates, in an exploratory study, knowledge management in a medium-sized company. To this end, a systematic literature review and a qualitative interview with fourteen employees of a medium-sized company in the construction industry were conducted. The questionnaires were applied remotely to employees with leadership positions and direct labor from the company. The results showed that, although it was evident that the company follows management principles that tangent dimensions of the SECI Model, there is an opportunity for improvement in the internalization and combination dimensions.
ResumoEste trabalho objetivou avaliar a qualidade microbiológica e físico e química da carne de sol comercializada no município de Cruz das Almas, Bahia, bem como traçar o perfil de resistência das estirpes isoladas frente a diferentes fármacos comerciais. Foram analisadas 36 amostras de carne de sol, adquiridas em 12 estabelecimentos (supermercados, minimercados, açougues e mercado municipal) e quantificadas bactérias mesófilas aeróbias, coliformes, Staphylococcus coagulase positiva, presença de E. coli e Salmonella spp., bem como determinado o teor de umidade, atividade de água (A w ) e cloreto. Em 83% dos estabelecimentos a contagem de bactérias mesófilas foi > 10 5 UFC.g -¹ e em 58%, coliformes a 35ºC foi > 10 5 NMP.g-¹ e coliformes a 45ºC > 10 3 NMP.g-¹. Escherichia coli foi isolada em 75% dos estabelecimentos. Staphylococcus spp. variou de 4,8 x 10 4 a 9,0 x 10 8 UFC.g -1 , não sendo isolado Staphylococcus coagulase positiva. Salmonella foi encontrada em 25% dos estabelecimentos. A umidade na carne de sol variou de 52,37 a 74,69%, a A w de 0,87 a 0,95 e o cloreto de 3,16 a 5,98%. Salmonella foi 100% resistente à tetraciclina, ácido nalidíxico, cefalotina e eritromicina, com resistência intermediária à ampicilina e gentamicina. Escherichia coli foi resistente a eritromicina (100%); ampicilina (68,7%); cefalotina (71,4%); tetraciclina (64,2%); ácido nalidíxico (35,7%) e gentamicina (12,5%). Cepas de E. coli multirresistentes foram observadas em 87,5% dos isolados, sendo que em 28,6% a resistência foi mediada por plasmídio. Perfil de multirresistência foi observado em todas as salmonelas, com uma estirpe apresentando resistência plasmidial. A comercialização da carne de sol em Cruz das Almas apresenta falhas higienicossanitárias em virtude da elevada carga microbiana. Tal fato compromete a inocuidade e vida útil do produto, podendo ainda servir de risco para a saúde pública, visto a veiculação de estirpes com resistência antimicrobiana.
