ABSTRAK. Keberlanjutan usaha ternak dan pengembangan usaha ternak tidak terlepas dari dukungan berbagai sumber daya. Tinggi dan rendahnya aksesibilitas peternak terhadap sumber daya dipengaruhi oleh berbagai faktor, diantaranya ialah SDM peternak. Penelitian ini bertujuan untuk mengkaji aksesibilitas sumber daya pada usaha ternak sapi potong rakyat berdasarkan kualitas SDM peternak. Penelitian dilakukan di Desa Petung, Kecamatan Curahdami, Kabupaten Bondowoso, Provinsi Jawa Timur. Desa Petung merupakan salah satu Desa Binaan Universitas Jember dalam Program Pengabdian Desa Binaan (PPDB) untuk pengembangan komoditas sapi potong rakyat. Narasumber (responden) ialah peternak sapi potong rakyat sebanyak 120 orang. Pengumpulan data menggunakan metode Focus Group Discussion (FGD), observasi, dan survei. Survei dilakukan menggunakan teknik wawancara dan pengisian kuisioner dengan skala likert. Analisis data menggunakan metode Partial Least Square (PLS) dengan program SmartPLS 2.0. Hasil penelitian menunjukkan bahwa kualitas SDM peternak berpengaruh pada akses peternak terhadap sumber daya finansial sebesar 32,4%, sumber daya teknologi sebesar 35,2%, dan sumber daya fisik sebesar 28,1%. Kesimpulan penelitian menunjukkan bahwa kualitas SDM peternak memengaruhi akses terhadap sumber daya finansial dan teknologi secara positif dan signifikan, namun tidak signifikan pada akses terhadap sumber daya fisik.
Kandungan karbohidrat singkong yaitu 38 gram per 100 gram singkong atau setara dengan 12%, sehingga singkong cocok dijadikan makanan pengganti beras. Penelitian ini dilakukan di Kabupaten Jombang pada bulan Oktober - November 2017. Sampel untuk penelitian ini adalah siswa Pondok Pesantren Al-Mardliyah Tambakberas. Tujuan penelitian ini untuk menganalisis sikap konsumsi terhadap produk olahan singkong. Atribut yang digunakan dalam penelitian adalah: rasa, warna, bau, dan tekstur. Produk yang digunakan sebagai objek penelitian adalah: singkong rebus, singkong goreng, singkong bakar, keripik singkong, tape, slondok, dan gethuk. Penentuan sampel menggunakan teknik total sampling, yaitu 100 responden. Analisis data menggunakan analisis Fishbein dan analisis deskriptif pada model multi-atribut yang mencakup skor kepercayaan (bi) dan skor evaluasi (ei). Hasil penelitian menyebutkan bahwa secara keseluruhan, hasil dari sikap konsumen terhadap produk olahan singkong adalah positif berdasarkan hasil analisis Fishbein. Keripik singkong merupakan produk olahan singkong dengan nilai atribut paling tinggi dan gethuk merupakan produk olahan singkong dengan nilai atrbut paling rendah. Kesimpulan penelitian ini yaitu produk-produk olahan singkong mempunyai potensi sebagai bahan makanan pengganti nasi.
Purpose Diabetes is a chronic metabolic disease that accounted for 6 per cent of total Indonesian deaths in 2016. The purpose of this study is to evaluate the ability of milk fermented using intestinal origin Lactobacillus casei strains to alleviate hyperglycemia in rats. Design/methodology/approach L. casei strains AP and AG were previously isolated and identified from feces of breastfed Indonesian infants (<1 month-old) and confirmed to be probiotics in vitro. These strains were used as bacterial starters to ferment milk, and the fermented product was fed to 25 diabetic rats for 15 days; metformin was used as a positive control. Blood glucose concentration, lipid profiles and total lactic acid bacteria counts were analyzed before and after treatment. Findings The results showed that feeding rats with milk fermented using L. casei strain AP decreased blood glucose concentration from 172.4 ± 2.1 to 147.2 ± 6.0 mg/dL (p < 0.05), whereas metformin reduced blood glucose concentration from 173.5 ± 6.5 to 124.2 ± 16.9 mg/dL (p < 0.05). Feeding milk fermented either L. casei AP or AG decreased low density lipoprotein but increased high density lipoprotein levels (p < 0.05). Research limitations/implications This research finding is expected to increase the development of fermented dairy products as functional food, solutions for the prevention of hyperglycemia diseases which have a higher risk to occur on humans. Practical implications Further study is needed to examine the effect of L. casei AP-fermented milk on humans with hyperglycemia. Social implications This research finding is expected to increase the development of fermented dairy products as functional food. Originality/value Oral administration of L. casei AP-fermented milk reduced hyperglycemia in rats similar to metformin. Further study is needed to examine the effect of L. casei AP-fermented milk on humans with hyperglycemia.
Livestock business can not be separated from the "golden triangle" concept, namely breeding, feeding, and management. This research aimed to evaluate of classical asumption for the "golden triangle" concept of livestock business with approach on the expost factor research, so that this research can update for literature review. The research was carried out in the dairy cattle business in the Kawasan Peternakan Sapi Perah Nasional (KPSPN) of Malang District, East Java. Respondents are all dairy farmers who are members of farmer institutional of the KUB (Kelompok Usaha Bersama) Tirtasari Kresna Gemilang which consists of 174 people. Data was analyzed by PLS (Partial Least Square) method with Smart PLS. The results showed that dairy cattle farming was determined by breeding, feeding and management as the main pillars of 86%, while the remaining 14% is influenced by other factors not included in the model. The conclusions from the research are three pillars of dairy cattle business, namely breeding, feeding, and management.
