Das Bier ist das älteste, das bekannteste und das in Gallien am weitesten verbreitete Getränk. Die Analyse der antiken Texte zeigt die vielfachen Anspielungen auf das Bier durch verschiedene Worte und Ausdrücke, die die unterschiedlichen Qualitäten und Herstellungen sowie den Ruf des Brauens und die Umstande seines Genusses beschreiben.
Zeugnisse über das Malzen, das Brauen und die Brauereien des 19. und 20. Jh. sowie die Quellen aus dem Mittelalter wurden verwendet, um die Produktionskette, die Mengen, die Zeiten, die Temperaturen und die notwendigen Oberflächen und Strukturen auffinden zu können, die unsere Suche nach antiken Spuren leiten könnten, deren Reste vielleicht erhalten sind.
Die Untersuchung einer gewissen Anzahl von Einrichtungen und Objekten die mit der Bierherstellung in Verbindung gebracht werden könnten, wird vorgeschlagen.
L’objectif de cet article est de présenter les interactions entre un programme de recherche consacré à l’habitat rural gallo-romain et des opérations préventives qui se sont déroulées dans le nord-est de l’Île-de-France. La réalisation de ces fouilles préventives dans un cadre défini a priori , en fonction de problématiques précises, a permis d’aborder les sites avec des méthodologies communes et homogènes. Leurs résultats confirment et précisent les données collectées lors des prospections. La réalisation de tranchées de sondage extensives et la fouille des structures isolées ont permis d’appréhender de façon novatrice l’espace entre les sites. L’étude de l’occupation de la Plaine de France à l’époque antique devra néanmoins être complétée par des opérations réalisées dans des secteurs peu touchés par les opérations préventives, comme les fonds des vallées, et par une fouille exhaustive d’un établissement rural.
