Dünyada en çok tüketilen içeceklerden bir tanesi olan kahve isim ve yapılış şekillerine göre farklılıklar göstermektedir. Türk kültürünün önemli bir parçası haline gelmiş, geleneksel bir içecek olarak bilinen Türk Kahvesi de bunlardan biridir. Sosyal değişim ile yeme ve içme alışkanlıklarında oluşan değişim, aynı zamanda günlük hayatın önemli bir parçası haline gelen Türk Kahvesi alışkanlıklarında da değişime neden olmuştur. Toplumsal ilişkilerde de olumlu role sahip olan Türk Kahvesinin yapımı ve tüketimindeki değişiklikler, değişen yaşam tarzı ve yeme içme alışkanlıkları ile doğrudan ilişkilidir. Buna ek olarak kahvenin özenle hazırlanması, içilmesi üzerinde duran ve kahvenin değerli bir ürün olduğunu öne süren üçüncü nesil kahve işletmelerinin sayısındaki artış dikkate alındığında, bu işletmelerde kültürel miras unsuru olan Türk Kahvesinin korunması ve sürdürülebilirliği önem taşımaktadır. Bu kapsamda araştırmanın temel amacı, üçüncü nesil kahve işletmelerinde Türk kahvesinin yerini belirlemektir. İstanbul'da faaliyet gösteren üçüncü nesil kahve işletmeleri üzerine yapılan bu araştırmada, veri toplama yöntemi olarak yüz yüze görüşme tekniğinden yararlanılmıştır. Görüşme formunda yer alan sekiz yarı yapılandırılmış soru aracılığıyla elde edilen veriler içerik analizi ile değerlendirilmiştir. Araştırma sonucunda elde edilen bulgulara göre, üçüncü nesil kahve işletmelerinde Türk kahvesinin geleneksel pişirme yönetimine uygun servis edilmediği ve Türk kahvesinin diğer kahvelere göre daha az tercih edildiği tespit edilmiştir. Üçüncü nesil kahve işletmeleri tarafından kahve çekirdeklerini doğrudan çiftçiden tedarik edilmesi, kavurma ve öğütme işlemlerini en uygun biçimde işletmede gerçekleştirilmesi araştırmada ulaşılan diğer sonuçlar arasındadır.
