Geleneksel gıdalardan biri olan tarhana, üretimi kolay, ucuz, dayanıklı ve en önemlisi besleyici olması nedeniyle Finlandiya, Irak, Macaristan, Türkistan ve Türkiye gibi birçok ülkede yaygın olarak tüketilmektedir. Tarhana tüketimi şekli ülkelerin kültür, zevk ve tercihlerine göre çeşitlilik arz etmekle birlikte genellikle çorba olarak tercih edilmektedir. Türkiye'de özellikle Kahramanmaraş ve çevre illerde tarhana; yaş (firik), çorbalık(kırıntı), çerezlik ve cips olarak tüketilmektedir. Bu çalışmada tüketicilerin sosyo-ekonomik ve demografik özelliklerini, gelir grupları itibariyle Maraş Tarhanasını tüketim miktarlarını, Maraş Tarhanası çeşitlerine göre tüketim tercihlerini ve çerezlik Maraş tarhanasını patates cipsine tercih etme durumu ile ilişkili olan faktörleri belirlemek amaçlanmıştır. Bu amaç kapsamında 2014 yılında Kahramanmaraş ili kent merkezinde 384 tüketici ile bire bir görüşülerek anket yapılmıştır. Elde edilen verilere parametrik ve parametrik olmayan testler uygulanmıştır. Araştırma sonuçlarına göre Maraş tarhanası harcamasının toplam gıda harcaması içerisindeki oranı %14 olarak hesaplanmıştır. Bu oran maraş tarhanasının gıda harcamasındaki yerinin önemini göstermektedir. Tüketicilerin %52.2'sinin çerezlik Maraş tarhanasının yanında cevizi tercih ettiği bulunmuştur. Perakendeci satıcıların bu durumu göz önünde bulundurarak ceviz satışı yapmaları da doğru olacaktır. Ayrıca tüketicilerin %31.8'i cips formundaki Maraş tarhanasını patates cipsine tercih etmektedirler. Tüketicilere patates cipsinin yerine cips Maraş tarhanası tüketim alışkanlığının kazandırılması hem insanların sağlığı açısından faydalı olacaktır hem de il ekonomine katkı sağlayacaktır.
This study uses the data obtained from 63 broiler farms engaged in contract farming in Akhisar, Turkey. The average feed conversion ratio in the broiler farms is 1.75, the average live weight 2.25 kg, and the mean market age 38.9 days. The feed conversion rate and the income generated are highly correlated (r = −0.76). The production index is 313.4. According to this production index value, 47.6% of the enterprises are below the average production index. It is highest when the marketing age is greater than 38 days, less than and equal to 40. In other words, it is the optimum market age range where carcass yield is at maximum. The average mortality rate is 4.68%. In 52.4% of the enterprises, the mortality rate is above 5%. There is a low level of correlation between the mortality rate and income (r= −0.26). In broiler farming, mortality rate, and feed conversion ratio are factors that directly affect the success and income of the breeder. In broiler farming, the heating cost has the largest share of the total cost, followed by the litter cost. They are followed by labor, electricity, and pesticide costs. Variable costs account for three-quarters of the total operating costs. The farms have a mean gross value of production of $23.797 per m2 and $1.400 per broiler in a breeding period. The profit margin is 0.572 $/kg per broiler. The mean enterprise net income in the breeding period is $9.197 per m2 and $0.541 per broiler. These findings suggest that broiler farming is a profitable venture.
Tarım sektöründe büyük öneme sahip hayvancılığın gelişebilmesi için üreticilerin örgütlenmesi ve bu yapının etkin bir şekilde işlemesi gerekmektedir. Bu kapsamda hayvancılık kooperatiflerinin çalışma şeklinin incelenmesi ve araştırılması üreticilerin örgütlenmesi açısından son derece önemlidir. Aksaray ilinde süt üretimi yoğun olarak yapılmaktadır. İl sahip olduğu 190 bin büyükbaş hayvan ve 331.823 tonyıl-1 süt üretimi ile dahil olduğu TR71 bölgesi içerisinde ilk sırada yer almaktadır. Bu çalışmada Hay-Koop ve Tar-Koop Bölge birliklerine bağlı kooperatif ortağı çiftçilerin sosyo-ekonomik özellikleri ve kooperatif ile ortaklık ilişkilerinin incelenmesi amaçlanmıştır. Bu amaç doğrultusunda 2016-2017 yılları içerisinde Aksaray ilinde Hay-Koop veya Tar-Koop'a üye kooperatif ortağı olan ve süt sığırcılığı yapan 90 işletme tabakalı örnekleme yöntemi ile belirlenmiş olup yüz yüze anket çalışması yapılmıştır. Çiftçilerin ortağı olduğu kooperatifin üye olduğu üst birlik durumlarına göre işletmelerin belirli özellikleri ile kooperatifler arasındaki istatistiksel ilişkinin varlığı Ki-Kare bağımsızlık testi ile belirlenmiştir. Elde edilen sonuçlara göre, işletmecilerin büyük çoğunluğunun (%62.2) ilkokul mezunu olduğu ve işletmelerin %63.3'ünün sadece süt sığırcılığı işletmesi olduğu saptanmıştır. Hay-Koop'a üye kooperatif ortaklarının %77.1'i sadece süt sığırcılığa yaparken Tar-Koop'a üye kooperatif ortağı işletmelerin %52.4'ü süt sığırcılığı ile birlikte besicilik de yaptığı saptanmış olup yapılan Ki-Kare Testi ile bu ilişkinin istatistiksel olarak anlamlı olduğu belirlenmiştir (P<0.05). Bölgede kooperatif ortağı işletmecilerin tamamına yakını sütünü kooperatife teslim etmektedir. İşletmecilerin %55.5'i ürün pazarlama konusunun kooperatifler için öncelikli konu olması gerektiğini ve %66.7'si kooperatif karının yeni yatırım yapılarak değerlendirilmesi gerektiğini belirtmiştir.
Objective: The objective of this study was to determine the preference criteria for purchasing fresh fruits and vegetables (FFV) and for where FFV is sold according to thesocio-economic characteristic of consumers during the Covid-19 pandemic. Material and Methods: In order to meet the above objective, an online survey was conducted. A sample of 720 respondents was selected from the residents of all cities in Turkey using the snowball method, which is one of the non-probability sampling methods. Mann-Whitney U and Kruskal Wallis tests were used to examine the statistical relationship between socio-economic characteristics and preference criteria. Results: The most important criterion are respectively freshness, taste/smell and food safety for purchasing FFV products. Besides, when choosing the place to be purchased, the most important criteria are respectively freshness, hygiene of place and hygiene of staff. Women give more importance to freshness of pruducts compared to males (p<0.05). The importance given to the hygiene of the product and place increases as the education level increases (p<0.05). Conclusion: The results could provide valuable insights to farmers, retailers and wholesalers targeting FFV consumers. It is recommended that the priority of price should be replaced by the priority of freshness, safety and hygiene. Only in this way can all players in the FFV marketing chain offer a better functioning system.
One of the important problems in Turkish agriculture is related to the marketing of products. Therefore, the development of applicable recommendations based on the current situation analysis is important for the establishment of a sustainable marketing system. The aim of this study is to determine the production and marketing structure of the farmers engaged in crop production in Iğdır province, which has a very high crop production potential due to its microclimate feature, and to propose solutions to the problems experienced in this area. The data obtained from the survey conducted in the 2019 production period with 237 farmers determined using the Simple Random Sampling Heap Ratio Estimation Method constitute the main material of the study. According to the results of the research, wheat and barley, which are among the field products, are marketed through the Turkish Grain Board (TMO), while silage corn, grain corn and cotton are marketed through traders. The marketing of fresh fruits and vegetables such as tomatoes, cucumbers, apricots and apples is mostly done through brokers and traders. High input prices, lack of cultivation techniques, inadequacy of irrigation water and wholesale market, and lack of marketing cooperatives are among the important problems related to production and marketing. As solution proposals, providing public support by providing irrigation water and input supply at affordable prices, training on cultivation techniques and organization can be counted. In addition, a model integrating cooperatives and wholesalers, supervised by state institutions, can be created so that fresh fruits and vegetables can be marketed more easily and at the right price.
