Flavonoids form one of the most common groups of phenolic compounds and are widely distributed in the plant world. Hydroxyls in their molecules are responsible for their antioxidant activity, which is considered one of the required properties of drugs for treating such diseases as cancer, atherosclerosis, hypertension, infarct, etc. Flavonoids have a variety of effects on the human organism. They exhibit capillary strengthening, antioxidant, antiradiation, antitumor, anti-inflammatory, antiatherosclerotic, spasmolytic, hypotensive, estrogenic, and bactericidal activities. The main property of these compounds is their low toxicity and more often the lack of it [1, 2].We investigated leaves of common pear Pyrus communis L., wild apple Malus sylvestris L., and domestic apple M. domestica Borkh. varieties Antonovka, Glory, and Whitesap, which are widely used in folk medicine to treat various pathologies. The goal of our work was to isolate and identify flavonoids from these types of raw material [2].Ground and air-dried raw material was extracted with ethanol (50%) in a 1:10 (material:extractant) ratio. The aqueous alcohol extracts were combined and evaporated in vacuo to an aqueous residue. The resinous precipitate that formed on standing contained chlorophyll and was removed. The aqueous solution was treated successively with CHCl 3 , ethylacetate, and butanol. The ethylacetate and butanol fractions were evaporated to dryness and chromatographed over a polyamide column (d, 1.5; h, 50 cm) with elution by CHCl 3 and a CHCl 3 :EtOH mixture with a gradually increasing concentration of the latter to 20%. Thus, we isolated 18 compounds of flavonoid nature [3].The structures of the isolated compounds were elucidated using physicochemical, chemical, and biochemical analytical methods (PC and TLC; UV, IR, and PMR spectroscopy; optical activity; melting points; acid and enzymatic hydrolysis) [3].The products from acid hydrolysis of compound 2 contained according to chromatographic and physicochemical methods (acetylation, methylation, alkaline degradation, melting point, direct and differential UV spectroscopy using ionizing and complexing reagents) the aglycon phloretin; 6, apigenin; 8, luteolin; 10, kaempferol; and 12-16, quercetin. Compound 16 contained glucose and rhamnose; 2, 6, 8, 10, and 14, glucose; 12, galactose; 13, rhamnose; and 15, arabinose. The structures of the carbohydate substituents were elucidated using enzymatic hydrolysis by rhamnodiastase and grapevine snail enzyme.Acid hydrolysis of 1, 3, 4, 5, 7, 9, 11, 17, and 18 enabled them to be assigned as flavonoid aglycons. Мета роботи -порівняльний аналіз гідроксикоричних кислот артишоку суцвіть (Cynarae flos), що заготовлені в Україні та Франції.Матеріали та методи. Ідентифікацію гідроксикоричних кислот здійснювали методом тонкошарової хроматографії етанольного екстракту артишоку суцвіть. Дослідження здійснювали на ТШХ пластинці із шаром силікагелю 5-40 мкм. Як рухому фазу використовували 15 % кислоту оцтову. Для виявлення гідроксикоричних кислот хроматограму обробляли 10 % розчином калію гідроксиду та кислотою сульфаніловою діазотованою з наступним нагріванням хроматограми в сушильній шафі протягом 3-5 хв і візуальним аналізом у денному світлі. Кількісний вміст гідроксикоричних кислот визначали двома методиками. Визначення здійснювали за допомогою спектрофотометричного методу в перерахунку на хлорогенову кислоту та абсолютно суху сировину. За першою методикою вимірювання оптичної густини водної витяжки сировини, що досліджували, виконували при довжині хвилі 327 нм. За другою методикою оптичну густину спиртової витяжки артишоку суцвіть вимірювали при довжині хвилі 525 нм після реакції утворення комплексу гідроксикоричних кислот із розчинами натрію нітриту та натрію молібдату.Результати. Методом тонкошарової хроматографії порівнянням величин Rf, флуоресценції в УФ-світлі до та після обробки парами аміаку та забарвлення плям після обробки хроматограм розчином феруму (ІІІ) хлориду, 10 % розчином калію гідроксиду та кислотою сульфаніловою діазотованою в обох зразках артишоку суцвіть ідентифіковані п-кумарова, хлорогенова, неохло-рогенова кислоти. У артишоку суцвіттях, що заготовлені в Україні та Франції, спектрофотометричним методом визначили кількісний вміст гідроксикоричних кислот. Уміст гідроксикоричних кислот, що був визначений за методикою 1, становив 1,64 % і 1,93 %, за методикою 2 -1,66 % та 1,95 % відповідно.Висновки. У артишоку суцвіттях, що заготовлені в Україні та Франції, визначали якісний склад і кількісний вміст гідроксико-ричних кислот. Результати досліджень дають змогу рекомендувати артишоку суцвіття вітчизняного та закордонного походження як рослинне джерело для одержання гідроксикоричних кислот. Материалы и методы. Количественное содержание гидроксикоричных кислот определяли двумя методиками. Определение проводили с помощью спектрофотометрического метода в пересчёте на хлорогеновую кислоту и абсолютно сухое сырьё. У живих організмах амінокислоти виконують ряд важливих функцій, найважливі-шими з яких є: структурні елементи білків; струк-турні елементи інших природних сполук; вихідні сполуки для утворення в організмах біогенних амінів і споріднених сполук; нейромедіатори та медіатори; метаболіти. Відомо, що до складу білків входять 20 протеїногенних амінокислот, послідовність яких кодується генетичним кодом і які постійно виявляють у білках. Амінокислоти та їх похідні входять до складу різних азотистих сполук, коферментів, антибіотиків, пептидів тощо [1].Основними джерелами надходження аміно-кислот до організму людини є продукти харчу-вання тваринного та рослинного походження.Нині відомо майже 300 рослинних амінокислот, які впливають на функціонування різноманітних систем і органів людського організму. Крім того, вони проявляють широкі фармакотерапевтичні властивості, сприяють більш швидкому засво-єнню та потенціюють дію біологічно активних речовин, які містяться в рослинах [2]. Тому ак-туальним є пошук видів рослин, що накопичують у значній кількості амінокислоти і широко вико-ристовуються в їжу. До таких рослин належить часник посівний (Allium sativum L.) родини ци-булеві (Alliaceae), який здавна застосовують для лікування різних захворювань.
