The article presents the results of quality control of basic food products. The growth of nutritionally dependent diseases has been demonstrated. The absence of a direct relationship between the growth of nutritionally dependent diseases and the increase in the population older than working age has been established. The emerging tendency of an increase in the mortality rate of the able-bodied population due to nutritional diseases has been identified. Economic measures to improve the quality of food products are proposed.
In modern industrial broiler poultry farming, the issue of combating the uncontrolled use of antibiotics in the process of growing poultry is being actively addressed. Currently, scientists are looking for an alternative solution to the issue of eliminating the use of antibiotics for prophylactic purposes. In this connection, researchers are intensively working on the development of innovative feed additives that can solve the problem with the immunostatus of the organism of poultry grown in conditions of great crowding. The article discloses the data of experimental experience on the use of new innovative lactulose-containing additives of domestic origin "Kumelakt-1" and "Laktuvet-1". Their positive effect on the morpho-biochemical parameters of the blood and the resistance of the poultry organism has been established. This information allows to predict in vivo the indicators of the safety of the poultry population and are indicators of the quality of the products obtained. New lactulose-containing innovative additives as a regulator of intestinal microflora improved the morpho-biochemical blood index and increased the resistance of the poultry organism. Namely: increased on average in I and II experimental groups in comparison with the control group, the hemoglobin index by 9.7%, erythrocytes by 10.8%, hematocrit by 5.6%. An increase in the level of urea in the blood serum was established by 10.4 and 9.7% (P <0.01), glucose - by 6.5 and 4.8 6.1 and 9.0% (P <0.05), phosphorus - by 8.2 and 6.6% (P <0.01), magnesium - by 9.9 and 9.1% (P <0.05), potassium - by 1.3 and 1.6% (P <0.05), iron - by 1.4 and 1.6% (P <0.05), respectively. The indicators of phagocytic activity in the experimental groups were determined, it was found that, on average, this indicator increased by 5.2% (P <0.05).
Currently, there are a number of feed components that stimulate productivity, growth of animals and poultry. One of them is preparations of antioxidant action on the animal body, which have a positive effect on strengthening the immune system and increasing productivity. In this work, data are presented on the comparative effectiveness of feed additives of various nature: bioflavonoids, polysaccharides, organic acids and protein-carbohydrate complexes in the diets of young rabbits. In the animals of the experimental groups that received bioactive substances as part of the diets, positive dynamics was observed in terms of growth as well as immune status. The greatest effect on the formation of the productive qualities of young rabbits was exerted by the using of the additives Dihydroquercetin + Glimalask, the synergistic effect of which was manifested in the activation of metabolic processes in the body of growing animals.
Today, the healthy nutrition market is one of the most promising market niches; modern consumers increasingly claim fortified products for their diets. One of the ways to increase the biological and physiological value of products is their enrichment with extracts of plant origin. The aim of the work was to study the influence of various factors on the process of hawthorn fruit extraction and determine the optimal parameters of the technological process. The study objects were hawthorn fruit extracts produced by the statistical method of maceration (with stirring). In the extracts obtained, there were determined the quantitative content of tannins and pectin substances, dietary fiber and vitamins. Currently, the global health and wellness food market is steadily growing due to changes in consumer behaviour patterns and developing of healthy self-consciousness. The studies conducted by the authors have shown that extracting of plant materials and the efficiency of biologically active substances extraction are influenced by the following factors: the extractant pH, grinding type and size of raw materials and process parameters. The optimal technological regimes have been established. They are the extraction temperature of 60 °C and extraction time of 30 minutes. The appropriate grinding size of dry hawthorn fruit has been determined to be up to 2.8 mm of a particle. In case of milk being an extractant, a high extraction dynamic of pectic substances and dietary fibers was observed. So, the hawthorn milk extract has been revealed to have higher organoleptic characteristics.
Meat productivity and quality of beef are determined by a number of factors, including pedigree traits of animals. Meat productivity is closely related to the biological patterns of their growth and development. Considering the patterns that affect meat productivity enables effective growing and fattening of livestock and obtaining commercially viable beef. To predict economically useful traits in beef cattle breeding, interior indicators can be used, as they reflect the metabolic picture of the animal’s body. The research studies in physiology and biochemistry of livestock aimed at revealing the persistent mechanisms of a growing animal organism make them relevant. The article identifies a correlation between the interior indicators and the fattening indicators of three experimental groups of steers. The main forecasting factors of meat productivity indicators have been substantiated. Regression coefficients have been found and show how much the live weight varies depending on the determining factors. Meat productivity predicting procedures have been modeled with respect to the protein content in blood serum.
