One of the areas in Gresik that has natural and environmental potential is used as a tourist spot, namely Hendrosari village. Tourist attractions in Hendrosari village called Edu Wisata Lontar Sewu provide various facilities, including restaurants and food stalls typical of Hendrosari with dishes. Palm trees are the main potential of Hendrosari village. People take advantage of the palm tree from its fruit and water. Cultivation of lontar plants as the main commodity produces siwalan (Borassus flabellifer L.). Generally, people consume siwalan fruit in fresh condition and the basic ingredients for making siwalan dawet. Fresh siwalan fruit easily rots, this causes losses for farmers and sellers of siwalan fruit. The results of previous observations obtained long shelf life of siwalan fruit products. In addition to improving the quality of siwalan fruit products, with processing efforts also increase consumer interest in buying siwalan fruit products. The variety of siwalan fruit products is also expected to increase the production value and selling value. Palm trees producing siwalan fruit in the Hendrosari village community, Menganti District are used in 2 types of products. Products sold by the public are usually in the form of fresh siwalan fruit and dawet siwalan. Community service activities through innovation in processing siwalan fruit with the aim of increasing the variety of food products and creativity of the Hendrosari village community. This activity consists of observation, licensing, training, and evaluation. The implementation of the activity was supported by the enthusiasm of the participants, the support of village officials and a group of women from Hendrosari village. The heating process aims to reduce the water content and shape the texture of food products as expected to produce snacks that are liked by everyone at various stages of age. The community needs to socialize and develop the processing of siwalan fruit into snack products from various characteristics of siwalan fruit (young, ripe, and old). Variety of snack products from siwalan fruit optimally to increase product added value, independence, community creativity and one of the choices of local tourism souvenirs.
Nutritional problems in Indonesia are still often encountered, such as poor nutrition, poor breakfast habits, and bad drinking habits that can cause anemia. This activity aims to improve and increase adolescent knowledge and maintain normal nutritional status in adolescents in Indrodelik Village, Bungah District, Gresik Regency. This activity uses a combination research method (mixed method research) with primary data obtained directly from respondents through the implementation of baselines (interviews and filling out questionnaires) in Indro Hamlet, Indrodelik Village. Sampling of activities using purposive sampling method which is carried out when taking baseline data and samples taken are included in the inclusion criteria, namely aged 13 to 19 years. The results of this activity are that there is an increase in the level of knowledge before and after counseling and an increase in adolescents' understanding regarding the intake consumed must be nutritionally balanced, although the results of the recall analysis are still not stable from day to day. Indonesia is a country with various nutritional problems and requires serious handling. This nutritional problem will certainly affect human resources (HR). Problems that are quite high in under-fives and toddlers are short (stunting) and thin (wasting) (Bappenas RI, 2013). This activity aims to improve and increase the knowledge of mothers of children aged under two and under five as well as to achieve and improve normal nutritional status in the working area of the Fisherman's Health Center, precisely in Sukodono Village, Gresik District, Gresik Regency. Data collection was carried out in Sukodono Village, Gresik District, Gresik Regency, it was found that 2 respondents were undernourished which was a recommendation from nutritionists at the Fisherman and Cadre Health Center in Sukodono Village. The result of this activity is that there is an increase in the level of knowledge before and after counseling. This is due to the provision of information and education to respondents so that their knowledge increases from those who do not understand to become more aware and from those who do not know to know. In addition, there was an increase in respondents' understanding regarding the intake consumed must be nutritionally balanced and there was a change in the respondent's intake from before counseling to after counseling. Corn flour, soybean husk flour and moringa leaves are sources of food that have high protein and fiber content. The purpose of this study was to analyze the effect of biscuits with formulations of corn flour, soybean husk flour and Moringa leaves on macronutrient levels, crude fiber and water content. The research method was an experimental design with a completely randomized design (CRD) consisting of a control formula (F0) and 3 treatment formulas (F1, F2, F3). Laboratory tests were analyzed using the ANOVA (Analysis of Variance) test and the BNT follow-up test (Least Significant Difference). The test results of chemical properties of macronutrients, fiber and water content showed significant differences in sig values. 0.00. The macronutrient levels of F0, F1, F2, and F3 are 4.275 grams of protein; 5.4 grams; 6.54 grams; 9.105 grams, carbohydrates 12,372 grams; 13,017 grams ; 14,463 grams; 16,281 grams, fat 3,399 grams; 4.146 grams; 4.983 grams, ; 7.293 grams, fiber 1.026 grams; 1,869 grams; 2,412 grams; 3.708 grams, water content 1.755 grams; 1,998 grams; 3.06 grams; 4.212 grams. The conclusion of this study is that there is an effect of the formulation of corn flour, soybean husk flour and Moringa leaves on the chemical properties (protein, fat, carbohydrates, crude fiber and water content) in biscuit products.
