The present work is within the frame work of dairy activity production in Junin region, so it becomes necessary that the products have suitable characteristics according to the quality standards for acceptance in the national and international market. Addressing the Victoria of Huayao Agribusiness problem we raised as a general objective to evaluate the physical, chemical and microbiological pressed fresh cheese parameters elaborated by the Victoria of Huayao Agribusiness in Junin region, Peru. Therefore, random samples of cheese, milk, and cleaning water were taken, as well as utensils and equipment. Furthermore, pH test (electrometric method), acidity (volumetric titration), fat matter (Gerber-Van Gulik method), humidity (gravimetry), total coliforms (most probable number), Escherichia coli, Staphylococcus aureus coagulase positive and Salmonella spp. (plate count) were determined. Results obtained were: humidity 43,48 %, classifying the product as a semi-hard cheese, pH average values of (6,3) and acidity (19,53) indicated low acidity, and the fat content 41,07 % on the dry extract defined the product as a semi-fat cheese. The microbiological results of total coliforms, Escherichia coli, Staphylococcus aureus coagulase positive and Salmonella spp., found in the samples are within the National and International standards.
Se determinó la dinámica de la seroconversión de las diarreas viral bovina (DVB) y neosporosis en 111 animales del establo de la EEA El Mantaro-UNCP, región Junín evaluando paralelamente la presentación de animales persistentemente infectados (PI) y la implicancia de la presencia de DVB sobre la producción láctea. Se realizaron tres monitoreos en un año, mediante la prueba de ELISA. El promedio de la prevalencia de DVB fue 73.5 %, la dinámica de su seroconversión fue creciente en el tiempo, y la prevalencia de animales PI fue de 5.4 %, correspondiendo un 50% a animales menores de un año. El promedio de la prevalencia de neosporosis fue 11.8 % y la dinámica de la seroconversión fue creciente en el tiempo, con tendencia a subir sostenidamente, aunque con valores moderados. La edad y el mayor N° servicios / preñez fue significativamente mayor para DVB que para neosporosis; los casos de vacas repetidoras y abortos estuvieron más asociados con DVB que con neosporosis, existe una baja correlación entre la presentación de casos de DVB y neosporosis, las causas de saca por problemas reproductivos fueron más determinantes (61 %), que las causas por problemas productivos y de conformación, no existiendo asociación entre la producción de leche por campaña de la vacas y los casos positivos de DVB en el hato
Los objetivos del presente trabajo fueron determinar la dinámica de la seroconversión de diarrea viral bovina (DVB) y de la neosporosis, así como la presencia de animales persistentemente infectados (PI) con el virus de DVB en fundos ganaderos de dos estaciones experimentales de la Universidad Nacional del Centro del Perú: Se utilizaron 111 bovinos Brown Swiss del establo de la EEA El Mantaro y 39 bovinos Holstein de la GA de Yauris, ambos ubicados en la sierra central, Región Junín, Perú. Se realizaron tres evaluaciones (agosto de 2015 y febrero y agosto de 2017) para detectar anticuerpos séricos contra VDVB y N. caninum, así como antígenos de DVB mediante la prueba de ELISA. La prevalencia promedio de DVB en la EEA El Mantaro fue 73.5%, la dinámica de seroconversión en el hato fue creciente en el tiempo, y la prevalencia de animales PI fue de 5.4%. Para la GA Yauris, la prevalencia promedio de DVB fue 16.67%, la dinámica de seroconversión fue estable en el tiempo, y la prevalencia de animales PI fue 2.78%. La prevalencia de neosporosis en la EEA El Mantaro fue 11.8%, con una dinámica de seroconversión creciente pero moderada, en tanto que en la GA Yauris fue de 36.81% con una dinámica de seroconversión creciente en la última evaluación.
Se determinó la asociación del parasitismo gastrointestinal con el peso vivo, hematocrito y el método FAMACHA en ovinos de raza Junín (borreguillas y carnerillos) del lote Stud de la SAIS Túpac Amaru Ltda. N° 1, Región Junín, Perú. El estudio se realizó en dos periodos estacionales: mayo (sequía) y octubre (lluvias). Se muestrearon 109 carnerillos y 98 borreguillas en mayo y a 89 carnerillos y 85 borreguillas en octubre de 2018. El peso de las hembras fue 39.75 ± 0.21 y el de machos de 43.31± 0.20, con diferencia significativa en la interacción sexo y mes (p<0.05), así como el valor del hematocrito entre meses (p<0.05). Hubo correlación negativa entre el hematocrito y el valor transformado de carga parasitaria. Todos los animales estuvieron parasitados, encontrando una mayor carga parasitaria en machos en octubre y en mayo en las hembras. En mayo se presentaron más casos de animales resistentes al parasitismo que en octubre. La mayor frecuencia de parásitos gastrointestinales fue de Nematodirus (50%), seguido de Trichostrongylus (25%) y de Ostertagia (15%).
La presente investigación pretende demostrar que el lote de avestruces reproductores de la EEA El Mantaro- UNCP puede producir huevos fértiles y obtener adecuados índices de incubabilidad y eclosión bajo incubación artificial a 3 200 msnm y contribuir al conocimiento de los factores que inciden sobre la fertilidad e incubabilidad en avestruces. El proceso de incubación fue llevado a cabo en la localidad de Yanamuclo-Jauja, y los exámenes microbiológicos fueron realizados en el laboratorio de microbiología de la Facultad de Zootecnia - UNCP. El período de investigación comprendió desde abril del 2008 hasta marzo de 2009. Los resultados fueron: el número de huevos producidos para incubación fue de 64 en total para los dos meses de ciclo reproductivo; el promedio del peso de los huevos fue 1,512 Kg.; se realizaron 13 cargas de huevos a la incubadora, con un promedio de 4,92 huevos/carga, el peso promedio de los huevos/cargada fue 1,519. Las hembras Nº 1489 y 1405 fueron las mejores ponedoras con 19 y 14 huevos respectivamente y tuvieron el mejor comportamiento en lo referente a su fertilidad, pues a la primera y segunda ovoscopía presentaron el mayor número de huevos en proceso de incubación. Los mejores machos fueron los Nº 2042, 1412 y 1331. El peso promedio de los huevos a la 1ª ovoscopía fue 1,453 Kg., descartándose 32 huevos y quedando 32; y a la 2ª ovoscopía fue 1,349 Kg, descartándose 16 huevos y quedando 16. La pérdida de peso de los huevos de la 1ª a la 2ª ovoscopía en promedio fue 0,124 Kg. Hay un nivel de correlación significativo entre los valores de pérdida de peso de los huevos desde el inicio de la incubación hasta la 1ª ovoscopía, y la 1ª y 2ª ovoscopía. El % de fertilidad fue del 50% y el porcentaje de incubabilidad fue 0. Los reportes del laboratorio indican presencia de Escherichia coli y Bacillus sp, de manera individual o combinada en todas las muestras tomadas, al inicio y al final del ciclo reproductivo de las hembras.
