ResumenEl diseño de mezclas para la elaboración de nuevos productos, es una de las áreas que ha venido ganando interés entre los productores de alimentos, dado que se pueden realizar combinaciones de productos para buscar nuevas características funcionales y optimizar el uso de materias primas. Se ilustra la herramienta para la optimización de cremogenados de mango y el desarrollo de derivados lácteos de yogurt a través de valoración sensorial y diseño experimental de mezclas. Además, se evaluaron las condiciones higiénico-sanitarias necesarias para la elaboración de cremogendos de mango y la implementación de un proceso de reducción de tamaño de partícula por tamizado de la pulpa. Se planteó un diseño de mezclas para la obtención de cremolácteos, usando yogurt como vehículo y sacarosa como edulcorante. Se evaluaron las propiedades físicoquímicas de los frutos en su estado óptimo de madurez y se formularon mezclas de base láctea y cremogenado de fruta, valorando el efecto de los componentes en las formulaciones con relación a la acidez, pH, propiedades cromáticas y atributos sensoriales. Los cremolácteos con propiedades correspondieron a formulaciones con 15 g de azúcar, 20 g de cremogenado y 65 g de base láctea. El pH óptimo es de 3,97 y la acidez de 98,8 meq kg -1, los sólidos solubles oscilan entre 17,0 y 19,6 como máximo. El aporte de la investigación, reside en la valoración de la metodología de los diseños para mezclas ternarias que puede ser a través de análisis sensorial o fisicoquímico. Palabras clave: cremogenados; mango; propiedades físicoquímicas; procesado; lácteos.The design of mixtures for the development of new products, is one of the areas that has been gaining interest among food producers, given that you can do combinations of products looking for new functional characteristics and optimize the use of raw materials. This paper illustrates the design and optimization of dairy food using mango and yogurt, through sensory evaluation and experimental design of mixtures. We evaluated the necessary Sanitary and Hygienic conditions for the elaboration of new products and the implementation of a process for reduction of fruit particle size by sieving the pulp. There was a design of mixtures using mango, sugar cane as a sweetener and yogurt as a vehicle. We evaluated the physicochemical properties of the fruit at its optimal state of maturity and formulated mixtures for yogurt, fruit, valuing the effect of the components in the final formulations respect to acidity, pH, chromatically properties and sensory attributes. Best properties observed were with 15 g of sugar, 20 g of puree and 65 g of yogurt. Optimum pH were 3,97; total acidity of 98,8 meq kg-1 and soluble solids between 17,0 and 19,6 as maximum. The contribution lies in the valuation of the methodology of the designs for ternary mixtures that can be through sensory or physicochemical analysis.
La miel es un producto natural elaborado principalmente a partir del néctar de las flores, su calidad final final esta en función de su origen botánico y geográfico y su variabilidad es amplia inclusive para mieles de la misma región. En éste trabajo se han evaluado y clasificado tipos de venezolanas de los estados Lara y Yaracuy, tomando como referencia los parámetros fisicoquímicos de color, cromaticidad del sistema CIELab, pH, acidez libre (XAL), azucares totales (XS), humedad (XH), cenizas (XC), conductividad eléctrica (CE), densidad y actividad de agua (aw). Adicionalmente se han relacionado los atributos sensoriales y propiedades intrínsecas de las mieles para el proceso de clasificación de mieles homogéneas a partir del análisis multivariado, factorial múltiple y PLS-PATH. La relación entre las respuestas y la regresión, revela tipos de mieles con 50% dominantemente ámbar (A), 40% ámbar claro (LA) y 10 % ámbar obscura (DA) de naturaleza multifloral. Las propiedades fisicoquímicas y atributos sensoriales son conducentes a la diferenciación en virtud a su origen geográfico.
Adiposidad RESUMENCon el objetivo de determinar el comportamiento de la Aptitud Cardiorrespiratoria y la adiposidad frente al nivel de actividad física de la población adulta de la ciudad de Neiva, se evaluaron 972 sujetos entre 18 a 75 años de edad. Estudio Descriptivo Correlacional. Los datos se analizaron en SPSS-23 e InfoStat/Profesional 1,2. La metodología partió de la descripción de variables, posteriormente el grado de asociación entre ellas (coeficiente de correlación de Pearson), los grupos conformados se compararon (Prueba ANOVA y comparación multiple LSD Fisher); por último, se estableció el grado de agrupamiento entre las variables (Prueba Average Linkage). Los resultados evidenciaron diferencias significativas en índice de masa corporal (IMC), Frecuencia Cardiaca Reposo (FCR) y Consumo Máximo de Oxigeno (VO 2 máx.), entre activos e inactivos; asociación del 5%, entre el IMC con FCR y VO 2 máx, índice cinturacadera (ICC) y porcentaje grasa corporal (%GC); del ICC con %GC, VO 2 máx, Tensión Arterial Sistólica (TAS) y Diastólica (TAD); del %GC con FCR, TAD y VO 2 máx; la FCR con VO 2 máx; la TAS con TAD y VO 2 máx rechazando la hipótesis de independencia. Concluyendo que los indicadores de adiposidad y aptitud cardiorrespiratoria evidencian la combinación de factores de riesgo de enfermedades de índole hipocinético en la población. KEYWORDS Physical ActivityLife style Physical fitness Adiposity ABSTRACTThe aim of this study is to determine the behaviour of cardiorespiratory aptitude and adiposity against the physical activity of the adult population in Neiva Colombia. 972 subjects between 18 to 75 years of age were evaluated. This is a descriptive correlational study. Data were analyzed in SPSS-23 and InfoStat / Professional 1,2. The methodology departed from the description of variables, then the degree of association between them (Pearson correlation coefficient), the shaped groups (ANOVA test and LSD multiple comparison Fisher) were compared; and finally, the degree of clustering among the variables (Test Average linkage) was established. The results evidenced meaningful differences in the body mass index (BMI), resting heart rate (RHR) and maximum oxygen consumption (VO 2 máx.), between active and inactive; 5 % association among the BMI with RHR and VO 2 máx. Waist Hip Ratio (WHR) and body fat percentage (BF%); of WHR with BF%, VO 2 máx, systolic blood pressure (SBP) and diastolic (DBP); of the BF% with RHR, DBP and VO 2 máx; the RHR with VO 2 máx; the SBP with DBP and VO 2 máx rejecting the independence hypothesis. As a conclusion, adiposity indicators and cardiorespiratory aptitude are a combination of disease risk factors of hypokinetic in the population.
